- In a large skillet, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. Drain and pat dry., Flatten chicken to 1/4-in. thickness. Spread mustard over one side of each chicken breast. Down the center of each, place two sage leaves, a cheese slice, ham slice and four asparagus spears. Fold chicken over asparagus; secure with toothpicks., Place flour and egg in separate shallow bowls. In another shallow bowl, combine bread crumbs and Parmesan cheese. Dip chicken in the flour, egg, then bread crumb mixture., In a large skillet, brown chicken on all sides in butter and oil. Transfer to an 8-in. square baking dish coated with cooking spray. Add wine to skillet, stirring to loosen browned bits from pan. Pour over chicken. , Bake at 350° for 20-25 minutes or until chicken is no longer pink. Discard toothpicks.

This was a veggie delight I came up with on spur of the moment and I'm so glad I was inspired. It is so easy, the flavors are all natural and come together to make a nice rich flavorsome juice which is why no extra spices are needed. I hope you like it.

- Cut off stalk ends of asparagus and throw away. Cut off tips and reserve in bowl. Cut the remaining stalk in halves or thirds (your discretion).
- Slice the zucchini in half and then slice up in bite-size chunks.
- Melt the butter in a frying pan.
- Add finely chopped garlic, slice leeks and sauté until browned.
- Add mushrooms to the fry pan and sauté for 3-5 minutes.
- Add asparagus (except for tips) and zucchini to the fry pan.
- Add salt and fresh ground black pepper.
- Cover and simmer until tender; about 10 minutes.
- Add tomatoes and asparagus tips and cook for a further 5 minutes until the tomatoes are cooked but not mushy.
- Garnish with grated fresh parmesan cheese.

- Preheat oven to 400 degrees F. Trim the bottoms of the asparagus and steam the spears for 4 minutes. Shock in cold water and drain.
- Season the inside of each chicken breast with salt and pepper, basil and oregano. Sprinkle 1/4 cup of the cheese evenly inside each breast. Top each with 4 asparagus spears and fold the chicken back together.
- Spray a baking sheet with the cooking spray. Place the chicken on the sheet and top with Parmesan cheese. Spray lightly with cooking spray. Bake for 12 minutes.

ASPARAGUS-STUFFED CHICKEN CORDON BLEU WITH A CREAMY WINE SAUCE
One taste and you won't be able to resist saying: "C'est magnifique!" Chicken breasts are stuffed with fresh asparagus, wrapped in ham and swiss cheese, and topped off with bread stuffing and a creamy-wine sauce. While it may taste like you cooked it all day, this delicious chicken with its' "french flair" takes only about 1 hour to prepare.

- Preheat oven to 350 degrees F.
- Wash the chicken and pat dry with paper towels. Place between 2 pieces of waxed paper; pound with the flat side of a wooden mallet to about 1/4-inch thickness. (Cook's Tip: Meat should be thin, but be careful not to tear.).
- Snap off tough bottoms of asparagus. Place in boiling water and cover for 1 minute. Shock in cold water, drain and pat dry. Set aside.
- Prepare stuffing mix as directed on package; set aside.
- In a small mixing bowl, combine the salt, pepper, butter, mustard, garlic and wine. Lay out the chicken breasts, brush the inside of each chicken breast with the melted butter mixture.
- Place 3 asparagus spears on the buttered side of the chicken breast (arrange so that the asparagus tips peek out when the chicken breast is rolled up), and 1 slice each of ham and swiss cheese. Starting from the narrow end, roll each chicken breast up tightly to enclose the filling. (If necessary, secure with toothpicks.)
- Brush outside of each chicken breast with the remaining butter mixture and then roll in bread crumbs. Place the rolls in a 13x9-inch greased baking dish, seam side down, and top with the prepared stuffing.
- Bake for 40 minutes, or until the chicken is browned and juices run clear.
- Meanwhile, prepare the sauce that will accompany this delicious dish.
- White Wine Sauce:.
- Over low heat, melt the butter in a medium-size saucepan, add the shallots; cook 7 to 8 minutes, stirring occasionally.
- Add the cream, wine, flour, salt, pepper, onion powder, and parsley. Stir all together bring to a boil. Reduce heat to low and simmer until the sauce is thickened. (Makes about 1 1/2 cups).

- Rinse the fresh aspargus and cut the thick bottoms off the end. You want them to be a little shorter than the chicken breast.
- Then place them in a bowl and drizzle Extra virgin olice oil over the asparagus.
- Lightly salt and pepper the asparagus.
- Find a knife in your drawer that is roughly the width of your pointer and middle finger together.
- Take a chicken breast and slowly insert the knife horizontally in the thicker side of the breast. You want it to come out in the middle close to the end of the other side of the breasts. So go slow and be careful.
- Take four peices of asparagus and put them side by side in the whole you made in the breast. Repeat process for the other breast.
- In a pan drizzle extra virgin olive oil and heat to medium.
- Add garlic to the pan.
- When the garlic starts to pop add the chicken breasts in to the pan rough side down and cover.
- Wait 2 minutes and then season with your favorite chicken seasoning.
- Cook uncovered for 3-4 more minutes and then turn it over. You don't want to turn it over until the bottoms of the chickens have turned white and the breasts feel rigid enough to turn without spilling the asparagus.
- Season back side of breasts and cook for an additional 4-5 minutes.
- Serve.

ROASTED RED PEPPER / ASPARAGUS STUFFED CHICKEN BREASTS

- Preheat oven to 350°F degrees.
- Rinse chicken breasts and dry with paper towel.
- Meanwhile, steam asparagus to tender crisp, about 3 minutes; set aside.
- One at a time place chicken breast halves between pieces of plastic wrap, inside up.
- Pound carefully with a meat mallet to about 1/4 inch thickness.
- Remove top pieces of plastic wrap.
- Sprinkle salt and pepper over chicken to taste.
- Place 2 prosciutto salami slices, overlapping if necessary to completely cover chicken.
- Place Swiss cheese slices over prosciutto.
- Pat red pepper dry with paper towel and place half a roasted red pepper over cheese.
- Place one asparagus spear near one edge of pepper, roll chicken with layers around the asparagus, using the bottom piece of plastic wrap to help roll it.
- Roll as tightly as possible, use toothpicks to close if necessary.
- Repeat for all 4 breasts.
- Heat 1 tablespoon butter with 1 tablespoon olive oil in large non stick frypan.
- Place chicken roll ups, seam side down in hot frypan, reduce heat and brown on all sides, until golden brown, about 10 to 15 minutes.
- Remove chicken roll ups and place in 9x13-inch oven proof dish, seam side down; set aside.
- Add wine to hot frypan, deglaze pan, add remaining olive oil and butter to frypan, add basil leaves and salt and pepper to taste to frypan.
- On medium heat, simmer until reduced by half, about 10 minutes.
- Spoon/pour wine/basil reduction onto chicken, be sure to get some basil leaves on each piece.
- Place dish with chicken on middle rack of 350°F degree oven, roast for 25 to 30 minutes until roll ups are heated through and chicken is no longer pink.
- Remove roll ups to platter, let rest for 10 minutes.
- With a sharp knife cut each one into 4 pieces. (Cut thinner slices to use for appetizer.)
- Arrange on platter cut side up, overlapping in 4 rows.
- Spoon/pour juice from oven dish over; garnish with extra asparagus spears and strips of roasted red pepper.
- Serve warm or cold.
