Quick and easy Asian marinated chicken thighs! Also great with chicken breast or flank steak. Marinate overnight for best flavor.

⅓ cup soy sauce
⅓ cup brown sugar
2 tablespoons lime juice
2 tablespoons orange juice
1 tablespoon Thai-style sweet chili sauce
1 teaspoon chile-garlic sauce (such as Sriracha®)
3 cloves garlic, minced
¼ teaspoon curry powder
4 skinless, boneless chicken thighs

Steps:

  • Place the soy sauce, brown sugar, lime juice, orange juice, sweet chili sauce, chili-garlic sauce, garlic, and curry powder in a large plastic zipper bag. Seal and knead the bag with your fingers to mix all the ingredients and dissolve the sugar. Place the chicken thighs into the marinade, squeeze out the air from the bag, zip the bag closed, and refrigerate for 4 hours or overnight.
  • Preheat an outdoor grill for medium-low heat; lightly oil the grate.
  • Remove the chicken from the bag, pour the excess marinade into a small saucepan, and bring to a full boil for about 1 minute to sterilize the marinade.
  • Grill the chicken thighs until they are no longer pink in the middle and show grill marks, about 25 minutes, basting them generously with the sterilized marinade as they grill.

2 yellow bell peppers
2 Chinese eggplants
6 cloves garlic
1 tablespoon whole coriander
2 teaspoons fish sauce
1/4 cup fresh lime juice
1 tablespoon olive oil

Steps:

  • Heat a grill to medium.
  • Cut the peppers and eggplant lengthwise into quarters and put into a large mixing bowl.
  • Add the garlic and coriander, to a mortar and pestle, and crush them into a chunky paste. Transfer the paste to the mixing bowl with the vegetables. Add the remaining ingredients and toss to coat well. Put on the hot grill and cook for about 5 to 7 minutes on each side.

1 onion
3 zucchini
2 tablespoons sesame oil
2 tablespoons soy sauce
1/2 teaspoon garlic powder

Steps:

  • Cut pepper into 1" cubes, Cut onion in half and then quarter and separate the layers. Slice zucchini into 1/2" thick discs. Place in a mixing bowl and ddd the rest of the ingredients - toss to coat. Allow to marinate for 30 minutes to 6 hours.
  • Preheat grill and set gas to low heat (somewhat indirect heat on charcoal)- heat grill wok and add vegetables. Toss briefly and let cook for 2 - 4 minutes before checking for browning. Continue to toss every few minutes until carmelized and fabulous.

2 lbs tofu, Extra Firm
3 garlic cloves
1 gingerroot, piece 1-2-inch
1/4 cup cilantro
2 tablespoons sesame oil
2 tablespoons soy sauce
1 teaspoon fish sauce (vegetarians omit)
1 teaspoon sriracha sauce
1/2 cup teriyaki sauce

Steps:

  • Place the Garlic Cloves and Ginger in the bowl of a small food processor or dice and place in a blender. Process until chopped fine and add the Cilantro. Process until chopped fine. Add the Sesame Oil, Soy Sauce, Fish Sauce (if desired) and the Sriracha Sauce (you can substitute another hot sauce or chopped hot peppers, red pepper flakes etc -- ).
  • Cut Tofu cubes into slices and press out the water. Place tofu in marinade for 1 - 12 hours.
  • Place tofu on a clean oiled grill over lower heat [ baste grilled surfaces with teriyaki sauce until browned. Serve with steamed rice or udon noodles and Asian Grilled Vegetables.

5 tablespoons light soy sauce
2 tablespoons olive oil
2 teaspoons sugar
1 teaspoon peeled finely grated fresh ginger
1/2 teaspoon sea salt
1 clove garlic, minced
2 cups baby Chinese tender stem broccoli or spinach leaves
6 to 8 okra
4 napa cabbage leaves
4 Fresno red chiles
4 scallions
1 Japanese eggplant, sliced lengthwise into thin strips
1 red bell pepper, seeded and quartered lengthwise
1 cup dry couscous
1 1/2 cups vegetable broth or water, boiling
3 tablespoons light soy sauce
2 tablespoons extra-virgin olive oil
1 tablespoon toasted sesame oil
Juice of 1/2 lemon
1 small bunch fresh cilantro, stems and leaves, chopped
Sea salt and freshly ground black pepper, for sprinkling

Steps:

  • For the glaze: Whisk together the mirin, light soy, olive oil, sugar, ginger, salt and garlic in a small bowl until dissolved and combined.
  • For the vegetables: Preheat a gas grill or stovetop grill pan to medium-high heat. Brush all the vegetables with the glaze and grill, turning frequently and brushing with more glaze as they cook until crisp-tender, 2 to 3 minutes. Remove the vegetables from the grill and let stand for a few minutes before chopping into bite-size pieces.
  • For the couscous: Put the couscous in a large bowl. Pour the hot broth over and stir to coat. Cover the bowl with plastic wrap and let stand until the liquid is absorbed, about 5 minutes.
  • Meanwhile whisk together the light soy, olive oil, sesame oil and lemon juice in a small bowl until combined. Uncover the couscous, pour in about 2 tablespoons of the soy mixture and fluff with a fork. Add half of the cilantro and toss gently.
  • Spoon the couscous onto a serving platter and arrange the chopped vegetables over and around it. Drizzle more of the soy mixture over the vegetables, if desired, and sprinkle with salt and black pepper. Serve immediately.

1/3 cup olive oil
¼ cup balsamic vinegar
3 tablespoons dijon mustard
3 tablespoons honey
1 ½ teaspoon dried thyme
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon ground black pepper
1 pound carrots (halved or quartered)
1 pound asparagus (trimmed)
2 zucchini (cut into sixths)
2 yellow squash (cut into sixths)
1 large red bell pepper (cut into ½ inch strips)

Steps:

  • Set out a 1-2 cup measuring pitcher. Measure all ingredients into the pitcher. Whisk until smooth. (Use immediately or cover and refrigerate for later use.)
  • Trim and slice all the vegetables into long strips. This makes them less likely to fall through the grill grates.
  • Place the vegetables on a large rimmed baking sheet. Pour the marinade over the vegetables. Then gently toss the veggies to coat in the marinade.
  • Allow the vegetables to marinate for 30+ minutes. (Or up to several hours.)
  • Meanwhile, preheat the grill to medium heat, about 350 degrees F.
  • Once the grill is hot, place the carrots on first, laying them across the grates so they don't fall through. Let the carrots grill for 3-4 minutes, then flip them over. Then lay the rest of the vegetables on the grill. Grill another 8-10 minutes, flipping once. Remove with tongs.

1/2 pound Shitake mushrooms
12 Radishes
12 stems Gai len
1/2 cup vegetable oil

Steps:

  • Mince and mash garlic to a paste with a pinch of salt. Boil soy sauce, Sherry, and brown sugar in a small saucepan over medium heat, stirring occasionally, until reduced to about 2/3 cup, 5 to 7 minutes. Stir in garlic paste, ginger, and sesame oil, then cool to room temperature. Meanwhile, halve bok choy lengthwise Thread mushrooms on skewers (through sides). Put on another tray. Cut radishes in half and tread on skewers. Brush vegetables with marinade. Make kebabs: Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas). Oil grill rack, then grill vegetables until tender 6 minutes. Turn over and baste with some of remaining marinade, then grill until tender, 6 to 8 minutes more.
