ASIAN ROASTED ASPARAGUS

I adapted this from another recipe for grilled asparagus. The grill was out of gas, so I decided to try using the oven. I modified the seasonings to reflect my desire to cut the fat content. My company, family and I all loved the results. Enjoy!

2 lbs asparagus, tough ends removed
1/2 teaspoon sesame oil
1 teaspoon olive oil
2 tablespoons soy sauce
2 garlic cloves, minced (I used the jarred kind)
1/4 teaspoon ginger, ground
1/2 teaspoon garlic salt, to taste
1/2 teaspoon black pepper, coarse ground, to taste

Steps:

  • Pre heat oven to 425 degrees F.
  • Lay trimmed asparagus in a rimmed baking sheet. Spread out.
  • Drizzle other ingredients evenly over asparagus,.
  • Roast in oven for approximately 20 minutes until asparagus are hot, slightly browned, but still somewhat crisp. Check periodically.

1 pound fresh asparagus, trimmed
½ cup hoisin sauce
sesame seeds

Steps:

  • Place asparagus and hoisin sauce into a resealable plastic bag and shake several times to coat asparagus with sauce. Allow to stand at least 30 minutes. For best flavor, refrigerate and marinate overnight.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove asparagus from bag and shake off excess hoisin sauce; lay asparagus spears onto the grill and cook, turning every 1 to 2 minutes, until all sides of the spears show grill marks and hoisin sauce has caramelized onto the asparagus, 4 to 6 minutes.
  • Transfer asparagus to a serving platter and sprinkle with sesame seeds to serve.

1 1/2 lbs fresh asparagus, washed,hard stems snapped off,if necessary peel the bottom part of the stem
2 teaspoons vegetable oil
1/4 cup water
1 pinch sugar
2 cloves garlic, minced
1 teaspoon sesame seed oil
1 tablespoon reduced sodium soy sauce
1 tablespoon oyster sauce
1 tablespoon dry sherry
2 teaspoons rice wine vinegar
1/4 teaspoon crushed red pepper flakes

Steps:

  • Cut asparagus into 2" pieces.
  • Heat oil in wok or large skillet (high heat).
  • Add asparagus, stir fry for 1 minute.
  • Add water& sugar to the asparagus, cover and steam for 2 minutes, shake the pan a few times Combine the remaining ingredients.
  • Uncover wok and add remaining ingredients and cook for 1 minute, stirring to coat the asparagus with the spice mixture.
  • Serve immediately.

Skip the Chinese takeout! This Asparagus and Beef Stir Fry is a healthy and easy dinner recipe that's ready in about 20 minutes!

½ cup less sodium soy sauce
½ cup cold water (plus additional as needed)
3 tablespoons cornstarch
½ teaspoon minced fresh ginger ((or about ¼ teaspoon dried ginger))
1 tablespoon minced garlic ((or about ½ teaspoon garlic powder))
¼ cup brown sugar
1 lb. asparagus, trimmed and cut into 1-inch pieces
1 small red bell pepper, cut into thin strips
1 small onion, diced
1 lb. beef top round steak or flank steak, trimmed and sliced thin against the grain
For serving: rice (or cauliflower rice); noodles; sliced green onions

Steps:

  • Prepare the Sauce: In a bowl whisk together soy sauce, cold water, cornstarch, ginger, garlic, and brown sugar until completely combined. Set aside.
  • Heat 2 tablespoons of canola oil in a large skillet over high heat. Add the asparagus and stir-fry for about 2 minutes (or until crisp-tender). Add the red bell pepper and onion. Stir-fry for about 2 more minutes, or until crisp-tender. Remove to a plate and set aside.
  • Add meat to the skillet in a single layer (still over high heat) and cook for about 1 minute - do not stir or move the meat while it is browning. Flip the meat, cook on the other side for about 30 more seconds, and then remove to the plate with the vegetables. Drain the fat from the skillet.
  • Pour the sauce into the skillet and bring to a boil; reduce heat to low and simmer while whisking until the sauce thickens (about 1-2 minutes). If the sauce gets too thick, just add additional water until it reaches desired consistency. Return beef and vegetables to the skillet and stir to coat with the sauce. Serve with rice and garnish with sliced green onions, if desired.

Steps:

  • Place a large skillet over medium high heat. Add olive oil and heat for 1 minute.
