LIGHTENED-UP ASIAN TURKEY SLIDERS



Lightened-Up Asian Turkey Sliders image

Loaded with protein and veggies, these Southeast Asian-inspired sliders are perfect for a hungry crowd. Be sure to buy regular ground turkey, not lean: The mix of dark and white meat has more flavor. You can prepare the meat mixture on the cookie sheet a few hours ahead, refrigerate and cook just before serving. Let your guests choose their toppings (but suggest a squeeze of lime juice - our tasters loved it!).

1 tablespoon peanut or vegetable oil
2 pounds ground turkey (not lean)
1 large egg
1/3 cup plain breadcrumbs
3 scallions, thinly sliced
1 tablespoon Asian fish sauce
Large pinch crushed red pepper flakes
Kosher salt and freshly ground black pepper
1/4 cup hoisin sauce
24 thin slices of cucumber (from 1 small cucumber)
1 cup loosely packed cilantro leaves and tender stems
For serving:
24 large Bibb lettuce leaves
1 medium carrot, shredded
1/2 small red onion, thinly sliced
Lime wedges
1/4 cup unsalted dry-roasted peanuts, coarsely chopped
Sriracha sauce, optional

Steps:

  • Special equipment: a 10-by-15-inch broiler-safe rimmed baking sheet
  • Position an oven rack 4 to 5 inches from the heating element, and preheat the broiler. Brush a 10-by-15-inch broiler-safe rimmed baking sheet with the oil.
  • Put the turkey, egg, breadcrumbs, scallions, fish sauce, red pepper flakes, 1/2 teaspoon salt and a few grinds of black pepper in a large bowl, and mix gently, just enough to incorporate evenly. Drop mounds of the mixture all around the prepared baking sheet, and press them into an even layer. Score the meat into 24 even squares, cutting down almost all the way. Brush the top with the hoisin sauce. Broil until the meat is browned and glazed and registers 165 degrees F on an instant-read thermometer, 8 to 9 minutes.
  • Carefully pour off any excess liquid from the cookie sheet. Rescore the meat into 24 sliders, then follow the score lines with a spatula to divide. Top each slider with a cucumber slice and a cilantro leaf.
  • While the sliders are cooking, arrange the lettuce, remaining cilantro, carrots, onions and lime wedges on a serving platter. Put the peanuts and Sriracha if using in small serving bowls. Slide a spatula in the pan and let guests build their sliders with their desired toppings.

1 large egg, lightly beaten
1/3 cup panko bread crumbs
1/4 cup teriyaki sauce
2 garlic cloves, minced
2 teaspoons minced fresh gingerroot
1 teaspoon sesame oil
1/2 teaspoon onion powder
1/8 teaspoon white pepper
1 pound lean ground turkey
8 Hawaiian sweet rolls, split and warmed
Optional toppings: Sliced cucumber, shredded carrot and fresh cilantro leaves

Steps:

  • Combine first 8 ingredients. Add turkey; mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., Place sliders on an oiled grill rack over medium heat; grill, covered, until a thermometer reads 165°, 3-4 minutes per side. Serve in rolls with toppings as desired. Freeze option: Cover and freeze patties on a waxed paper-lined baking sheet until firm. Transfer to a large freezer container; return to freezer. To use, grill frozen patties as directed, increasing time as necessary for a thermometer to read 165°.

Asian Sliders with Gochujang Mayo and Quick Pickles image

These mini burgers are seasoned with a sweet glaze reminiscent of Asian barbecues. It's topped with crunchy quick pickles and spicy gochujang mayo and served on mini brioche buns. It's the perfect game day snack!

1 pound ground beef
¾ teaspoon kosher salt
½ teaspoon ground black pepper
2 Tablespoon hoisin sauce
2 Tablespoon reduced sodium soy sauce
2 Tablespoon granulated sugar
½ Tablespoon rice vinegar
1 garlic clove, (minced)
½ teaspoon minced ginger
8 mini brioche buns
baby kale or desired greens, (as needed)
rice bran oil or vegetable oil, (as needed)
⅓ cup mayonnaise
1 Tabelspoon gochujang paste
1 cup sliced Persian cucumbers, (about 1/4-inch thick)
½ Tablespoon granulated sugar
½ teaspoon kosher salt

Steps:

  • Mix together ground beef, salt and pepper. Set aside.
  • To make burger glaze: combine hoisin sauce, soy sauce, sugar, rice vinegar, garlic and ginger. Stir together and let sit for 10-15 minutes.
  • Meanwhile, divide seasoned ground beef into 8 equal patties. Heat up a heavy cast iron skillet over medium high heat. Brush with oil. (I prefer to use rice brain oil because it has a high smoke temperature.)
  • Add patties to hot pan and press down with a flat spatula. Let cook for about 1 minute until crust has formed. Brush top with glaze. Flip patty and brush other side with glaze. Cook for another minute, flip, and brush again. Do not overcrowd the burgers. Work in batches, if necessary.
  • Once burger is cooked, remove from skillet and transfer to plate and allow to cool slightly. Heat a clean skillet over medium heat. Brush buns with oil. Lightly toast buns on hot pan.
  • Spread gochujang mayo on buns, top with burger patty, quick pickles and greens of choice. Serve and enjoy immediately.

2 teaspoons Sriracha chili sauce
1-1/2 pounds ground turkey

2 teaspoons minced fresh gingerroot
2 tablespoons rice vinegar
2 teaspoons sugar
2 teaspoons sesame oil
6 small carrots, grated (about 1-1/2 cups)

3 tablespoons chopped fresh cilantro
1 teaspoon sesame seeds, toasted
12 slider buns or dinner rolls, split and toasted

Steps:

  • In a small bowl, mix mayonnaise, hoisin sauce and chili sauce. Refrigerate until serving., In a large bowl, combine turkey, bread crumbs, green onions, 1 tablespoon soy sauce and ginger, mixing lightly but thoroughly. Shape mixture into twelve 1/2-in.-thick patties., In a small bowl, whisk vinegar, sugar, oil and remaining soy sauce. Add carrots, onion, cilantro and sesame seeds; toss to combine., Grill sliders, covered, on a greased rack over medium heat or broil 4 in. from heat until a thermometer reads 165°, about 3 minutes on each side. Spread cut sides of buns with mayonnaise mixture. Layer each bottom with a burger and 2 tablespoons slaw. Replace tops.

1/3 cup Mayonnaise
6 slices Swiss cheese
9 oz deli sliced turkey
3 tablespoons butter (melted)

Steps:

  • Preheat the oven to 350°F.
  • Cut the rolls lengthwise so you have two big pieces.
  • Spread 1/4 cup mustard and mayonnaise on each side of the rolls. Place the bottom roll in a pan, top with half of the turkey, Swiss cheese and the rest of the turkey. Place the other half of the rolls on top.
  • Mix butter and 1/4 cup remaining mustard. Brush it on the rolls.
  • Bake in the oven for 15 minutes until the cheese is melted.

1 ½ cups panko bread crumbs, divided
½ cup thinly sliced green onions
1 egg, slightly beaten
3 tablespoons soy sauce
1 tablespoon brown sugar
2 ½ teaspoons minced fresh ginger root
1 ½ teaspoons minced garlic
¼ cup mayonnaise
1 teaspoon teriyaki sauce
¼ teaspoon white sugar
4 (4 roll) packages Hawaiian bread rolls (such as King's®)

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Cover a baking sheet with aluminum foil and grease with cooking spray.
  • Combine turkey, 3/4 cup bread crumbs, green onions, egg, soy sauce, brown sugar, ginger, and garlic in a bowl; mix well.
  • Pour remaining bread crumbs into a shallow bowl. Roll turkey mixture into sixteen 1 1/2-inch balls with wet hands and coat in bread crumbs. Flatten gently between your palms to create a patty and place on the baking sheet.
