ROAST CHICKEN RECIPE - CHINESE STYLE



Roast Chicken Recipe - Chinese Style image

This recipe used the traditional method to prepare the traditional Chinese roast chicken.

1 chicken, , about 2 kg
20 g salt
60 g honey
30 ml light soy sauce
1.5 tsp Chinese five-spice powder
15 g salt
15 g Sichuan peppercorn, , blend and toast with salt
1 tsp Chinese five-spice powder
5 g salt
1/2 teaspoon baking powder
2 teaspoons salt
3 teaspoons Sichuan peppercorn

Steps:

  • Slaughter the chicken. Dress, eviscerate, and rinse. Pat dry and keep it vertical to drain off the water in the cavity. Let it stands for two hours.
  • Carefully separate skin from breast meat by inserting the fingers or a small knife in between the skin and the breasts.
  • Combine the salt, honey, light soy sauce and applied to the entire surface of the chicken.
  • Apply the salt and Szechuan peppercorn mixture to the cavity of the chicken.
  • Refrigerate the chicken in an upright position. Leave it uncovered for at least 12 hours or up to 24 hours until the surface is completely dry.
  • Apply additional salt plus some baking powder to the surface. Hang the chicken upright and allow the chicken to drip dry for an hour.
  • Truss the chicken.
  • Place the chicken on an oven rack. Rub some oil on the surface. Roast in the preheated oven at 220 degrees Celsius for 20 minutes.
  • Hold the chicken carefully to drain off any juice on the skin and inside the cavity.
  • Reduce the heat to 160 degrees Celsius for another one and a half hours.
  • Cut the chicken into pieces and served with Szechuan peppercorn salt 椒盐.

Asian-Style Orange Chicken Roasted Under a Brick image

This chicken is flavored by citrus, soy sauce, ponzu (a tangy Japanese sauce), garlic, and scallions -- all popular Asian ingredients. After the backbone is removed, the chicken marinates and is cooked flat under a brick to yield moist meat and crisp skin.

2 oranges
1 lime
2 scallions, crushed with the flat side of a large knife
3 garlic cloves, crushed with the flat side of a large knife
1/4 cup soy sauce
1/4 cup ponzu or rice-wine vinegar
1/4 cup mirin (Japanese sweet rice wine) or honey
1 whole chicken (3 to 4 pounds), rinsed and patted dry
Vegetable oil

Steps:

  • Place a large resealable plastic bag in a 9-by-13-inch baking dish. Using a vegetable peeler, peel strips of zest from 1 orange and the lime; transfer zest to bag.
  • Juice zested orange and lime into bag. Add scallions, garlic, soy sauce, ponzu, and mirin. Seal; shake to mix marinade.
  • Using poultry shears, cut along sides of chicken backbone; remove. Add chicken to bag; seal. Refrigerate, turning occasionally, at least 2 hours or up to 12.
  • Preheat oven to 425 degrees. Heat a 12-inch cast-iron skillet or a roasting pan 10 minutes. Remove chicken from marinade; discard marinade. Brush chicken breast with vegetable oil. Flatten chicken, and place it, breast side down, in skillet. Roast chicken about 40 minutes.
  • Remove skillet from oven. Pour a small amount of water into skillet; swirl to help loosen skin from bottom, if needed. Turn chicken over. Baste with pan juices; roast until an instant-read thermometer inserted into thickest part of thigh registers 165 degrees, juices run clear, and skin is crisp, about 5-10 minutes more.
  • Let chicken stand 10 minutes. Just before carving chicken, squeeze juice from remaining orange over it. Carve chicken into at least 6 pieces, cut breasts in half.

With one hand on each side of the chicken, open it forcefully, bending it back so the breastbone pulls away from the flesh on one side. With your hands, pull out the diamond-shaped purple bone in the center of the breast. If you don't have a pan large enough to hold the bird flat in 1 piece cut with the shears, along the center of the breast to halve the bird so to fit in 2 pans. ------

1 teaspoon kosher salt
fresh cracked pepper (20 turns of)
6 garlic cloves, minced
2 teaspoons chili powder
2 teaspoons cumin
1 teaspoon dried thyme leaves
1 teaspoon fennel seed
1 tablespoon butter or 1 tablespoon oil
1/4 cup white onion, diced
1/2 teaspoon garlic, minced
1/2 teaspoon gingerroot, minced
1/4 cup brown sugar, packed
1 cup water
1 orange, juice and zest of
2 tablespoons lemon juice, fresh
1/4 cup rice vinegar
2 1/2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon Grand Marnier or 1 tablespoon cold water

Steps:

  • Chicken:.
  • Mix salt, pepper, garlic, chili powder, thyme, fennel and cumin.
  • Rub chicken under skin and all over the chicken with all of the spice mixture; cover and marinade in refrigerator for 4-24 hours.
  • Preheat oven to 450 degrees.
  • Heat heavy large cast iron pan over medium high heat, add oil, placing chicken skin side down immediately place a very heavy pan or foil covered bricks on chicken and cook (without moving the chicken) until the skin is a golden brown (check with a tongs) till very crisp about 15 minutes.
  • Orange Sauce:.
  • Meanwhile melt butter in a medium hot pan; add and saute onions for 3 minutes add garlic, ginger, brown sugar, water, orange juice and zest, lemon juice, rice vinegar, and soy sauce; bring to a boil simmer for 5 minutes.
  • Mix together cornstarch and 2 tablespoons cold water or Grand Mariner making a slurry; add the slurry to the sauce whisking all the time to keep the sauce smooth; reduce heat to medium low; and simmer, about 5 minutes.
  • Remove the bricks and turn chicken skin side up and finish roasting for 20-25 minutes. Until a thermometer inserted in the thigh registers 160-165 degrees when juices run completely clear, and the skin should be a gorgeous golden-brown, and exceedingly crispy.
  • Remove chicken and let rest on a cutting board.
  • De fat the pan drippings.
  • Add the Orange Sauce to the pan juices. Strain the sauce.
  • Pour sauce into a gravy boat drizzle some on a platter and place the chicken on the sauce with crispy crust up.
  • Serving immediately with additional sauce and Longevity noodles or rice.

  • Clean the chicken with water and pat dry inside and out. Truss the chicken. (I did only the legs part and not whole body.)
  • Mix the Marinade ingredients well in a small bowl and rub it generously on the skin of the chicken and also the cavity. Insert the garlic and ginger inside the cavity and then transfer it into a Ziploc bag. Pour the remaining Marinade into the bag and marinate the chicken overnight. You can turn the plastic bag to make sure that the chicken is evenly marinated.
  • Take the chicken out of the plastic bag, discard the garlic and ginger in the cavity. Air dry the chicken for about 30 minutes at room temperature or until the skin surface is no longer wet. You can turn on a fan. Mix the Skin Coating ingredients well in a small bowl. Set aside.
  • Heat up the oven to 400°F (207°C). Place the chicken in a roasting pan (at the lower rack) and roast for about 45 minutes. Check the chicken at 30 minutes point and if the skin is browned too soon, cover the chicken with a sheet of aluminum foil. Remove the chicken from the oven and turn it to the underside of the chicken and roast for 15 minutes. Remove it from the oven and brush the entire chicken with the Skin Coating mixture. Continue to roast the chicken for about 5-10 minutes on each side, or until both sides of the chicken become a golden-hued brown in color. Remove from the oven, let cool, chop up and serve immediately. Save the juice from the chicken and serve with steamed rice.
