This is one of my favorite ways to prepare cucumbers. Very different from the traditional way.

Ingredients

3 large cucumbers - sliced lengthwise, seeds scooped out, and cut into 1/2-inch thick half rounds
2 teaspoons salt
1 tablespoon soy sauce
1 tablespoon white sugar
3 cloves garlic, thinly sliced
2 teaspoons rice vinegar
1 ½ teaspoons toasted sesame oil
1 teaspoon hot chili oil
½ teaspoon red pepper flakes

Steps:

Place cucumbers into a colander, sprinkle with salt, and let drain at least 30 minutes. Shake off excess liquid but don't rinse the cucumbers.
Whisk soy sauce, sugar, garlic, rice vinegar, sesame oil, hot chili oil, and red pepper flakes in a salad bowl. Stir in cucumbers to coat with dressing. Chill 2 to 3 hours before serving.

1/2 cup lowfat vanilla frozen yogurt
1/4 cup chilled triple-strength green tea
1 tablespoon honey, plus more for garnish
1 cup ice
Dash ground nutmeg
Dash ground cinnamon

Steps:

Place all ingredients in a blender and puree until smooth. Pour into individual glasses and drizzle honey on top of each milkshake to finish.

4 Thai basil leaves, plus 1 for garnish
1 sugar cube
3/4 cup iced green tea
1/2 lime, juiced
1-ounce white rum
1/2 tablespoon honey
Ice cubes, as needed
1 lime wedge, for garnish

Steps:

In a cocktail shaker, add the basil and the sugar cube. Muddle them together in the bottom of the shaker until the basil is fragrant. Pour in the green tea, lime juice, rum and honey. Stir until well mixed. Carefully pour the mixture into a highball glass filled with ice. Garnish the cocktail with the lime wedge and a basil leaf.
