ASIAN SESAME DRESSING
A fantastic standby dressing to have on hand because it keeps for 3 weeks! Use this Asian dressing for leafy green salads, Asian slaws, noodle salads and chopped salads. It's also a terrific dressing to make steamed vegetables so much tastier. Finish with a sprinkle of fresh sesame seeds and sliced greens onions!

Steps:
- Place ingredients in a jar and shake well until sugar is dissolved. Adjust saltiness with salt and sweetness with sugar to taste.
- Keep for up to 3 weeks, in the fridge (to be safe). Bring to room temp and shake well before use.
- Single serving batch is enough for 3 - 4 cups of shredded cabbage / leafy greens i.e. a side salad for 4 people.
- Big batch - my rule of thumb for how much dressing to use is generally 1 tbsp of dressing per 1 packed cup of shredded vegetables and 2 tsp per handful of leafy greens.

- For the salad, combine shredded cabbage, carrots, snap peas, cilantro and mint in a large bowl and toss with the extra ginger sesame dressing. Top with cooked shrimp and enjoy!
- If making this salad for lunches, store the dressing in a sealed jar and drizzle over salad just before eating so salad stays fresh.

- Add the Asian Salad Mix to a large bowl. If your bag included a dressing or toppings discard or save for another time.
- In a pint-sized jar add all the ingredients and place the lid on tightly. Shake well for a few minutes until fulling combined. I suggest tasting the dressing at this point and adjusting it to your liking. If you like it more on the tangy sie start with just 2 tsp of sweetener then taste and add more if needed.
- Toss the cooked shrimp with a couple of tablespoon of the dressing and let them sit in the fridge while the dressing chills. Chill the dressing for 20-30 minutes for the best results. Note: if you would like your shrimp to be warm you can saute them a bit in the dressing then add them to the salad'
- After chilling the dressing add the shrimp to the Asian Salad Mix and toss with the dressing. You can use as much or as little of the prepared dressing as you like. The dressing will keep in the fridge for up to a week if any is left over. This dressing is also tasty on baked salmon.

- Heat a large non-stick pan to medium-high heat for 2 minutes. Once the pan is hot, coat the pan with half cup of butter and cook the shrimp for 2-3 minutes per side until opaque or charred. Remove from pan & set aside. Do not over-crowd the pan.
- Toss all of your salad ingredients together. (You can add any vegetables you please however I personally like to keep it simple because of the intense flavors from the blackened shrimp & Ginger dressing) drizzle ginger dressing evenly then toss until combined. Top with shrimp, avocado & wonton strips.
