2 pounds salmon
1/4 cup honey
3 cloves garlic, minced
2 Tablespoons reduced sodium soy sauce
1 Tablespoon seasoned rice vinegar
1 Tablespoon sesame oil
1 teaspoon freshly grated ginger
1 1/2 teaspoons Sriracha, or to taste, optional
2 green onions, thinly sliced
1/2 teaspoon sesame seeds

Steps:

  • Preheat oven to 375 degrees F. Line a large baking sheet with aluminum foil.
  • In a small bowl, whisk honey, garlic, soy sauce, rice vinegar, sesame oil, ginger and Sriracha.
  • Place salmon onto prepared baking sheet and fold foil edges inward slightly. Pour honey mixture over the salmon. Fold foil over salmon, covering completely and sealing completely closed.
  • Bake until cooked through, 15-20 minutes.* Open packet and broil for 4-5 minutes, or until salmon is caramelized and slightly charred.
  • Garnish with green onions and sesame seeds.

2 sheets nonstick aluminum foil
1 small sweet potato, peeled and sliced into 1/4-inch slices
1 small zucchini, cut into 1/4-inch rounds
1 small yellow squash, cut into 1/4-inch rounds
1 ½ teaspoons smoky mesquite seasoning (such as Weber®)
1 (5 ounce) salmon fillet
1 lemon, cut into wedges

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Set out 2 large squares of foil, nonstick side up, one on top of the other. Layer sweet potato, zucchini, and squash in the middle of the top sheet, seasoning each layer with mesquite seasoning. Place salmon filet on top. Fold over the foil to seal the packet tightly.
  • Bake in preheated oven until vegetables are tender and fish flakes easily with a fork, 20 to 25 minutes. Serve with lemon wedges.

Steps:

  • Preheat oven to 375 degrees F. Line a baking sheet with foil. In a small bowl, whisk together honey, garlic, soy sauce, rice vinegar, sesame oil, ginger, Sriracha and pepper, to taste. Place salmon onto the prepared baking sheet and fold up all 4 sides of the foil. Spoon the honey mixture over the salmon. Fold the sides of the foil over the salmon, covering completely and sealing the packet closed. Place into oven and bake until cooked through, about 15-20 minutes.* Open the packet and broil for 2-3 minutes, or until caramelized and slightly charred. 3 tablespoons chili sauce

heavy duty foil (plus parchment paper if preferred)
4 6 oz salmon fillets
1 Tablespoon avocado oil (OR olive oil )
salt and pepper (to taste)
1 cup broccoli florets
1/2 red bell pepper (chopped)
1 medium zucchini (chopped)
1/4 cup pineapple chunks (optional (leave out for keto))
1 cup edamame beans (, defrosted (optional) (leave out for Whole30 / keto / paleo))
3/4 - 1 cup teriyaki sauce (homemade recipe below or your favorite compliant brand such as Primal Kitchen)
1/4 cups coconut aminos (OR low sodium soy sauce if not Whole30 / paleo)
3 drops liquid monk fruit sweetener
3 Tablespoons apple cider vinegar (OR rice wine vinegar if not Whole30)
1 teaspoons toasted sesame oil (, plus more for drizzling on vegetables)
3 garlic cloves (, minced)
¾ teaspoon grated or ground ginger
1 teaspoon xanthan gum (OR 1 tablespoon arrowroot / cornstarch if not Whole30 / keto)
3 Tablespoons water
salt and black pepper (, to taste)

Steps:

  • Preheat grill to medium-high heat or the oven to 425 degrees F.
  • If making the Homemade Teriyaki Sauce:
  • In a saucepan over medium heat, whisk together soy sauce, sweetener, vinegar, sesame oil, garlic, ginger, thickener (xanthum gum / starch) and water until combined. Bring to a simmer, stirring frequently, until sauce thickens and bubbles. Remove from heat and set aside.
  • Cut four 18 x 12-inch squares of foil* and layout on a flat surface.
  • Place one salmon in the middle of each piece of foil and divide the vegetables evenly into each packet, arranging them around the salmon.
  • Drizzle the salmon and vegetables with olive oil and season with salt and pepper to taste.
  • Brush teriyaki sauce on both sides of the salmon and drizzle over vegetables - reserving at least 2 tablespoons for later.
  • Fold the foil over the salmon and seal to close off the packets.
  • If cooking on the grill
  • Place foil packets onto grill and grill for 6 minutes, then flip over and grill for an additional 3-6 minutes (depending on the thickness of the salmon) or until salmon is flaky.
  • Remove from the grill and carefully open the foil packets.
  • If cooking in the oven Place foil packets on a baking sheet and cook for 12-18 minutes (rotating tray once). Time varies depending on the thickness of the salmon. Remove baking sheet from oven.
  • Brush salmon with reserved sauce and top with sesame seeds and green onions (if desired) and serve immediately with quinoa, rice or your favorite side.

  • In a small bowl whisk together the soy sauce, maple syrup, sweet chili sauce, lime juice, fresh ginger, garlic, salt and pepper. The salt can probably be omitted since the soy sauce should have plenty of sodium.
  • Place the salmon fillet over the foil then pour about half the marinade over and brush if necessary to cover the entire surface of the fish. Turn the fish over and pour the rest of the marinade. Also brush the marinade making sure that the entire fish is brushed with marinade.
  • Fold the edges of the aluminum foil over the salmon so that it is fully wrapped. Bake for about 20 to 25 minutes, depending on the size of your salmon. My salmon was quite a big piece, so I baked it for 25 minutes. You may also turn the broiler on and broil for about 2 to 3 minutes at the end if preferred.
