2 tablespoons brown sugar
1 tablespoon cornstarch
2 cans (8 ounces each) crushed pineapple, undrained
1/4 cup soy sauce
1/4 teaspoon garlic salt
1/4 teaspoon ground ginger
6 boneless skinless chicken breast halves (4 ounces each)
Minced chives, optional

Steps:

  • In a large saucepan, combine brown sugar and cornstarch. Stir in the pineapple, soy sauce, garlic salt and ginger. Cook and stir over low heat until thickened. , Place chicken in a greased 9-in. square baking dish. Pour half of the sauce over chicken. Bake, uncovered, at 350° for 15 minutes. Bake 10 minutes longer or until a thermometer reads 170°, basting several times with the remaining sauce. Sprinkle with chives if desired.

2 cups peeled and chopped fresh pineapple
1 teaspoon chopped garlic
1/2 cup pineapple juice (fresh or canned)
1/4 cup rice vinegar
1/4 cup lemon juice
1 teaspoon lemon zest
1 cup brown sugar
2 teaspoon red chili flakes
1 teaspoon salt
3 tablespoon cornflour
1/4 cup water

Steps:

  • Peel the pineapple using a sharp knife and chop the flesh into small cubes. To save time, you can buy already peeled and chopped pineapple. Add 2 cups of cubed pineapple and 1 tsp chopped garlic in the medium jar of a blender and blend to make a coarse mixture.
  • Do not blend the pineapple too much. We are looking for a coarse texture here.
  • Add the pineapple mixture in a heavy bottom pan along with ½ cup pineapple juice, ¼ cup vinegar, ¼ cup lemon juice, 1 tsp lemon zest, 1 cup brown sugar, 2 tsp red chili flakes, and 1 tsp salt. Bring the mixture to a boil and cook for 5-6 minutes on medium heat. Cover the pan with a lid of the mixture is spluttering too much. Keep stirring frequently.
  • Mix 3 tbsp cornflour in ¼ cup water in a small bowl to make a thin slurry and add it to the pan.
  • Cook on medium heat until the sauce thickens. Remove the pan from heat and let the sauce cool down. Store in a glass jar in the refrigerator and use as desired.

28 ounces crushed pineapple + juice
½ cup chicken stock
2 tbsp apple cider vinegar
3 tbsp soy sauce
4 tbsp brown sugar (packed)
½ tsp ginger
2 tbsp minced garlic
½ tsp red chili flakes (opt)
3 tbsp cornstarch
2 tbsp water
2 lbs boneless skinless chicken breasts ( cut into small chunks)
1 tsp peanut oil
½ tsp sea salt
¼ tsp pepper
1 cup cornstarch for coating
1½ cups peanut oil for frying

Steps:

  • Combine crushed pineapple + juice, chicken stock, apple cider vinegar, soy sauce, brown sugar, ginger, minced garlic, red chili flakes, cornstarch & water in a medium bowl, whisk - set aside.
  • Toss chicken chunks with oil in a large bowl.
  • Sprinkle with salt & pepper, and stir to combine. Set aside.
  • Place cornstarch for the chicken in a zip-top bag, add the chicken to the bag & close. Shake to coat & then set aside.
  • Heat oil to 350 degrees in a wok or large skillet.
  • Carefully drop several pieces of chicken into the hot oil, working in batches to not overcrowd the chicken.
  • Fry until golden. Scoop out the chicken & drain on a paper towel-lined baking sheet.
  • Continue frying & draining the remaining chicken.
  • Carefully transfer the hot oil into a Pyrex measuring cup so it can cool.
  • Add the garlic & pineapple sauce to a medium saucepan & bring to a simmer.
  • Cook mixture, stirring constantly until it starts to thicken.
  • Add the chicken, toss to combine.
  • Serve with fried or steamed rice.

1/2 cup ketchup
1/2 cup rice vinegar
1/2 cup rock sugar ​(or granulated sugar)
1/2 tablespoon potato starch (mixed with 1 tablespoon water)

For the Pork Marinade
1 pound pork tenderloin (cut into 1-inch cubes)
1 tablespoon light soy sauce
1 teaspoon dark soy sauce
1 tablespoon rice wine
1/2 teaspoon five-spice powder
1/4 teaspoon ground white pepper
2 cloves garlic (minced)
1 egg (lightly beaten)
3 tablespoons corn flour (or cornstarch)
1 tablespoon all-purpose flour
For the Stir-Fry
3 cups neutral cooking oil (for deep-frying the pork)
1 clove garlic (sliced)
1/2 white onion (diced small)
1/2 yellow bell pepper (cut into 1-inch diamond shape)
1/2 green bell pepper (cut into 1-inch diamond shape)
3 1/2 ounces fresh pineapple (or canned pineapple, cut it into 1-inch chunks)
1/2 tablespoon white sesame seeds, for garnish

Steps:

  • Gather the ingredients.
  • Put all of the ingredients in a saucepan and stir to mix evenly. Place over medium-high heat.
  • Stirring constantly, bring the sauce to a boil and then reduce the heat to a simmer. Cook the sauce, continuing to stir, until the texture has turned thick and sticky, about 25 minutes.
  • Gather the ingredients.
  • Place the pork in a bowl and add both kinds of soy sauce, rice wine, five-spice powder, ground white pepper, and minced garlic; marinate for 10 minutes.
  • Add the egg, corn flour, and all-purpose flour into the pork marinade and mix evenly. Place in the refrigerator for 30 minutes.
  • Gather the ingredients.
  • Heat the oil to 325 F/170 C in a wok or deep saucepan.
  • Gently slide in some of the pork tenderloin cubes, without overcrowding, and deep-fry, in batches if necessary, until golden brown in color, stirring occasionally. Make sure the oil comes back up to temperature before each batch.
  • Place the cooked pork on a plate lined with a couple of sheets of paper towel.
  • Remove all but 1 tablespoon of oil from the wok and stir-fry the garlic and onion over medium-high heat until fragrant.
  • Add the bell peppers and pineapple to the wok and stir-fry for a minute or two.
  • Return the pork to the wok, along with the sweet and sour sauce, and mix evenly. You can add as much sweet and sour sauce as you prefer.
  • Garnish with the sesame seeds . Serve with cooked white rice , if desired.

Asian Pineapple-ginger BBQ Sauce and Ribs image

2 tablespoons canola oil
4 cloves Garlic
3 Fresh ginger - 3 inches
1 Spanish onion - 1 large
3 cups fresh ripe pineapple chunks
1 habanero
1 cup Pineapple juice
2 cups Hoisin Sauce
1/4 cup Ketchup
1/4 to 1/2 cup Brown sugar
3 tablespoon ancho chile powder
2 tablespoon Dijon mustard
2 tablespoon honey
2 teaspoon soy sauce
1 teaspoon ground cinnamon
1/4 cup Spanish paprika
1 1/2 tablespoon dry mustard
1 tablespoon ground ginger
1 tablespoon ground star anise
1 1/2 teaspoon ground allspice
1 1/2 teaspoon kosher salt
1 1/2 teaspoon ground black pepper
1 teaspoon Thai chile flakes
2 recipe Pork ribs - 2 racks
2 cups soy sauce
1/2 cup coarsely chopped ginger
6 clove garlic
1 tablespoon black sesame seeds
1 tablespoon white sesame seeds
1 bunch scallions - chopped

Steps:

  • Heat oil over med-high heat in a heavy bottomed saucepan, add the garlic, ginger and onions and cook until soft, about 5 mins
  • Add the pineapple chunks and habanero and cook for 1 min.
  • add the pineapple juice and cook until it caramelizes slightly, about 3 mins.
  • add the hoisin, ketchup, brown sugar, ancho power, mustard, honey, soy sauce star anise and cinnamon and cook until thickened, about 30 mins.
  • Transfer the mixture to a blender and blend until smooth, season with salt and pepper, allow to cool to room temperature
  • For the ribs: stir together the paprika, dry mustard, ground ginger, star anise, allspice, salt, pepper and Thai chile flakes in a bowl.
  • Rub the ribs on the top side, wrap in plastic wrap and refrigerate for at least 4 hours and up to 24 hours
  • Preheat charcoal grill with about 80 briquettes off to 1 side
  • remove the ribs 1 hour before grilling
  • Combine 4 cups of water the soy sauce, ginger and garlic and divide between two heavy disposable pans
  • If using a charcoal grill, put one disposable pan of steaming liquid on the bottom grate of the grill on the opposite side of the coals
  • Put the top grate on and heat well, put the ribs on the grill top-side down directly over the hot coals and cook until golden brown and a crust has formed, about 10 minutes
  • Move the ribs to the other side of the grill over the liquid and place the other disposable pan with steam liquid next to them over the coalsPut lid of the grill on and open the vents on top halfway
  • Cook until the ribs are tender and juicy, about 2 hours. Add water as necessary to prevent scorching and coals to keep the internal temperature between 225 and 250 degrees
  • If using charcoal finish the ribs my moving them back over the hot coals and turning and basting with the sauce for 15-20 minutes
  • Combine the sesame seeds and sprinkle the tops of the ribs, Cut the ribs apart and put on a platter and scatter the green onions over the top

  • Add the sauce ingredients to a small bowl. If you don't have quite enough pineapple juice to make 3/4 cup, just top the rest up with water. Whisk until smooth.
  • Cut the chicken into 1" pieces and add them to a bowl. Toss them with the garlic powder and some pepper. Add the cornstarch and toss until coated.
  • Add 2 tablespoons of olive oil to a deep skillet over medium-high heat. Let the pan heat up for a few minutes. Cook the chicken in two batches (don't crowd the pan). Cook the chicken for 4 minutes and then flip (I use tongs to do this quickly) and cook for another 3-4 minutes or so. Chicken should be browned and cooked through (165F). For the second batch, I add another tablespoon of olive oil to the pan. Transfer each batch of the chicken to a plate when it's done.
