SPICY CAJUN PICKLED GREEN BEANS AND CARROTS



Spicy Cajun Pickled Green Beans and Carrots image

You'll find these pickled green beans everywhere in New Orleans, especially in bloody marys! These are super easy, they pack a punch, and are great for snacking, for sandwiches, and of course, bloody marys.

1/2 lb. fresh green beans (trimmed)
2 carrots (sliced into "green bean" size)
1 clove garlic (sliced)
1 bay leaf
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon cayenne pepper
1/4 teaspoon celery seed
1/4 teaspoon whole black peppercorns
1 cup white vinegar
1/2 cup water
1 tablespoon sugar
1 tablespoon kosher salt

Steps:

  • Fit as many green beans and carrots as you can into a jar, vertically.
  • Add the garlic and bay leaf to the jar, using a chopstick or something similar to slide them down the sides of the jar.
  • Add oregano, thyme, cayenne pepper, celery seed, and peppercorns directly to the jar.
  • Bring vinegar, water, sugar, and salt to a boil in a small saucepan to make a brine, stirring to make sure sugar and salt are dissolved.
  • Pour brine over vegetables in jar, making sure to cover all the vegetables and fill to the top.
  • Allow jar to cool, and keep in refrigerator for 6 months. These will taste best if you allow them to sit in the fridge at least overnight, and the flavor will intensify as time goes on.

1 pound carrots, cut into 3 1/2- by 1/3-inch sticks
1 1/4 cups water
1 cup cider vinegar
1/4 cup sugar
2 garlic cloves, lightly crushed
1 1/2 tablespoons dill seeds
1 1/2 tablespoons salt

Steps:

  • Blanch carrots in a 4-quart nonreactive saucepan of boiling salted water 1 minute, then drain in a colander and rinse under cold water to stop cooking. Transfer carrots to a heatproof bowl.
  • Bring remaining ingredients to a boil in saucepan, then reduce heat and simmer 2 minutes. Pour pickling liquid over carrots and cool, uncovered. Chill carrots, covered, at least 1 day for flavors to develop.

8 small carrots, scrapped & quartered lengthwise
1 cup Dill pickle juice
fresh parsley or dried dill weed, for garnish

Steps:

  • Simmer the carrots in the Dill pickle juice.
  • covered until they are just beginning to get tender (15- 20 minutes).
  • Cool in the pickle juice overnight in the fridge.
  • Drain well, dab dry.
  • sprinkle with parsley or dill weed.
  • Serve chilled.

4 garlic cloves, sliced
1 red chili, thinly sliced
1 -2 tablespoon lemongrass, slices
1 -2 tablespoon ginger, sliced thin
1 cup sugar
4 allspice
10 peppercorns
2 cups water
4 cups vinegar
1 teaspoon salt
1 teaspoon tamari soy sauce
1 small bunch cilantro, rough chopped

Steps:

  • Trim beans to fit jar and slice carrots to match the beans.
  • Cook carrots and beans in hot water for 3 minutes then drain.
  • Pack them into hot sterilized jars.
  • In a pot heat remaining ingredients and simmer 5 minutes.
  • Pour over carrots and beans being sure to distribute the goodness in the vinegar mixture among the jars equally.
  • Wipe rims adjust rings and process for 15 minute in hot water covering jars by 1-2 inches.
  • Check sealing after 12 hours. remove rings and wipe jars,Label and store a week before enjoying.

  • Fill your largest pot with water. Sterilize your jars by submerging them (while the water is still cold - or they might break) and turn the heat on high. Bring to a boil. The jars need to boil for at least ten minutes, but keep them in the water till you're ready to fill them. You want to keep them warm because you will be processing them in boiling water again, and if they have time to cool off before returned to boiling water, they may break.
