PEAR-APPLE CHUTNEY



Pear-Apple Chutney image

This chutney made using pears and apples is a tasty condiment to be served with dinner.

2 lb Bartlett pears, peeled, chopped (5 cups)
2 lb Gala apples, peeled, chopped (7 cups)
1 cup chopped sweet onion (1/2 medium)
3/4 cup golden raisins
1 cup cider vinegar
3 cups sugar
4 1/2 teaspoons grated gingerroot
3 tablespoons fresh lemon juice
1/2 teaspoon salt
1 1/2 teaspoons apple pie spice

Steps:

  • In 6-quart Dutch oven, mix all ingredients. Heat to boiling over high heat. Reduce heat to medium-low; simmer 1 hour, stirring occasionally, until thickened.
  • Pour chutney into containers with tightfitting lids. Store in refrigerator.

When I first saw this chutney's interesting combination of pearl onions and dried cherries, I knew I had to give the recipe a try. It tastes even better than I imagined!

Yield 6 cups.

Number Of Ingredients 9

1 pound pearl onions
2-1/2 cups dried cherries
2 cups water
1 cup sugar
1 cup red wine vinegar
1 teaspoon salt
1/4 teaspoon ground cloves
4 medium pears, peeled and chopped
1/4 cup lemon juice

Steps:

  • In a Dutch oven, bring 6 cups water to a boil. Add pearl onions; boil for 3 minutes. Drain and rinse in cold water; peel, cut in half and place in a large saucepan. Stir in the cherries, water, sugar, vinegar, salt and cloves., Toss pears with lemon juice; stir 2 cups into saucepan. Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour or until desired consistency is achieved. Stir in remaining pears; heat through.

Make this fruity pear chutney early and it will be ready just in time for Christmas.

Number Of Ingredients 10

1 1/2 kg pears, peeled, cored, and chopped
2 Garlic cloves, crushed
2 tsp. Salt
225 g dried figs, chopped
250 ml White wine vinegar
250 ml Water
2 tsp. Ground coriander
1 Large onion
100 g Soft light brown sugar
100 g Molasses sugar

Steps:

  • Put all of the ingredients into a stainless-steel preserving pan, except for the sugars. Bring to the boil, then simmer for 15 minutes, to soften the pears.
  • Add the sugar and heat gently until dissolved. Bring to the boil, then simmer for 1-11/2 hours until thick. Draw a wooden spoon across the base - it should leave a clear trail for a few seconds.
  • While the pear chutney is still hot, pot in sterilised jars and store in a cool, dark place for at least a month before eating.

4 cups coarsely chopped Asian or Bosc pears
1-1/2 cups packed brown sugar
1 cup dried cherries
1 cup cider vinegar
2 tablespoons minced fresh gingerroot
4 garlic cloves, minced
1 teaspoon curry powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 to 1/2 teaspoon cayenne pepper
1/8 teaspoon ground cloves

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, 35-40 minutes or until slightly thickened and pears are tender, stirring occasionally. Serve at room temperature or chilled.

Number Of Ingredients 8

4 Bartlett pears, peeled, cored, and cut into 1/4-inch dice
Juice of 2 lemons
2 1/2 cups dried cherries
1 pound red pearl onions, roots trimmed, peeled, and cut in half lengthwise
1 1/2 cups red-wine vinegar
1 cup sugar
1 teaspoon coarse salt
1/4 teaspoon ground cloves

Steps:

  • In a large bowl, toss pears with lemon juice.
  • Place cherries, pearl onions, half of the pears, the vinegar, sugar, salt, cloves, and 2 cups water in a low-sided, 6-quart saucepan. Set the saucepan over high heat, and bring liquid to a boil.
  • Reduce heat to medium low, and simmer until fruit is tender, about 45 minutes.
  • Increase heat to high; cook until liquid has been absorbed, about 10 minutes. Stir in remaining pears, and reduce heat to low; cook just until pears are heated through, about 5 minutes. Remove pan from heat.
  • Transfer to a large bowl set over an ice bath to chill; store in airtight container, refrigerated, for up to 4 weeks.

2 pounds firm pears, peeled, cored and diced 1 1/2 pound brown onions, peeled and diced 2 fat cloves garlic, peeled and minced 150g dried cranberries (1 cup) 400g soft light brown sugar (2 cups, packed) 1 tsp ground cumin 1 tsp ground coriander 1/2 tsp cayenne pepper 1/2 tsp cinnamon 1 1/2 tsp salt 710ml cider vinegar (3 cups) 160g tomato puree/paste (5 1/2 ounces)

Steps:

  • Prepare the pears and onions. Place them into a large deep saucepan. Cook over medium heat, stirring occasionally. Add the remaining ingredients. Bring to the boil, then reduce to a low simmer. Cook for 1 to 1 1/2 hours until it is the consistency you want, stirring it often. Ladle into hot sterilised pint jars, wipe jar rims, and seal.

2 ripe Bosc pears, peeled and cut in half
2 tablespoons freshly squeezed lemon juice
1/4 cup plus 1 tablespoon sugar
3/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
2 tablespoons vegetable oil
1/4 cup pure maple syrup
1 small red onion, cut into 1/2-inch slices
1 garlic clove, chopped
1 teaspoon grated fresh ginger
3 tablespoons currants
3 tablespoons golden raisins
1/2 cup white wine vinegar
1 teaspoon hot red pepper flakes
1 teaspoon chopped fresh thyme
1 cup diced mango (optional)

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Toss the pears with the lemon juice, 1 tablespoon of the sugar, the cinnamon, and cloves. Coat a sheet pan with half the vegetable oil. Set the pears cut side down on the pan. Brush the pears with the remaining oil. Roast until caramelized and tender, 40 to 50 minutes, depending on the degree of ripeness. Remove from the oven and allow to cool.
  • 3. While the pears are roasting, bring the remaining ingredients to a boil in a nonreactive saucepan. Reduce the heat and simmer for 5 minutes. Remove from the heat and allow to cool.
  • 4. Using a small spoon or a melon baller, scoop out the cores of the cooked pears. Cut the pears into 1/2-inch slices.
  • 5. Combine the pears and the onion mixture. Cover and refrigerate for at least 1 day before serving.
