ASIAN MEATBALL SUBS WITH HOISIN MAYONNAISE



Asian Meatball Subs With Hoisin Mayonnaise image

1 slice white sandwich bread
1 1/2 tablespoons milk
1 teaspoon soy sauce
5 scallions, white and green parts separated
1 1/4 pounds ground pork
3 large cloves garlic, finely grated
1 tablespoon finely grated peeled ginger (about a 2-inch piece)
1/3 cup water chestnuts, drained, rinsed and chopped
1 large egg, lightly beaten
1/3 cup chopped fresh cilantro
1 1/2 teaspoons toasted sesame oil
Kosher salt and freshly ground pepper
1/2 cup hoisin sauce
1/4 cup mayonnaise
2 1/2 tablespoons fresh lime juice
3 to 4 teaspoons Asian chili-garlic sauce
Peanut or vegetable oil, for frying
1 cup bean sprouts
4 7-inch-long pieces baguette, split open

Steps:

  • Tear the sandwich bread into small pieces, then toss with the milk and soy sauce in a large bowl. Let stand 10 minutes.
  • Meanwhile, mince the scallion whites. Cut the scallion greens into thin 2-inch-long strands. Put the strands in a bowl of ice water and refrigerate while you make the meatballs.
  • Add the scallion whites, pork, garlic, ginger, water chestnuts, egg, cilantro, 1 teaspoon sesame oil, 1 1/4 teaspoons salt and 1/2 teaspoon pepper to the bowl with the bread; mix until combined. Gently form into 16 golf ball-size meatballs. Put the meatballs on a baking sheet, cover with plastic wrap and refrigerate 1 to 4 hours.
  • Stir the hoisin sauce, mayonnaise, 11/2 tablespoons lime juice, the chili-garlic sauce and the remaining 1/2 teaspoon sesame oil in a medium bowl. Cover and refrigerate until ready to serve.
  • Heat about 1 1/2 inches peanut oil in a large, wide saucepan over medium heat until a deep-fry thermometer registers 350 degrees F. Add the meatballs in batches and cook, turning occasionally, until browned and cooked through, 8 to 10 minutes. Transfer to a paper towel-lined plate to drain.
  • Drain the scallion greens and toss with the bean sprouts, the remaining 1 tablespoon lime juice and a pinch of salt in a bowl. Spread the hoisin mayonnaise on the inside of the baguette pieces, then fill with the meatballs and top with the scallion-sprout mixture.

3 egg yolks
1 tablespoon lemon juice
1/2 teaspoon Dijon mustard
1 teaspoon coarse salt
1/2 cup canola oil
1 1/4 cups canola oil
1/4 cup extra virgin olive oil
2 tablespoons hot water
2 teaspoons lemon juice
1 teaspoon salt
1 pinch cayenne pepper

Steps:

  • Beat egg yolks on medium speed until slightly thickened.
  • Add lemon juice, mustard, salt; beat one minute.
  • Increase speed to medium-high, add 1/2 cup oil ONE TEASPOON AT A TIME (this is very important--or the mayonnaise will "break" ie., separate).
  • SLOWLY pour in remaining oils in a steady stream, beating until incorporated (about 10 minutes).
  • Fold in water, lemon juice, salt & cayenne.
  • Serve at room temp; refrigerate leftovers for up to a week.
  • REPAIR TRICK: If the mayo does "break" salvage the mixture by whisking a single (not married!) egg yolk in another bowl, then beat mayo into it a little at a time.

1 egg yolk (*1)
1 tbsp Rice Vinegar ((15g) *2 )
1 tsp lemon juice ((5g))
1/2 tbsp dijon mustard ((7.5g))
1 tsp sugar ((5g))
1/4 tsp salt ((1g))
1/2 cup vegetable oil ((100g/4oz)*3)

Steps:

  • Crack the egg into a container and leave it in 140°-160°F ( 60-70°C) hot water bath for 5 minutes.
  • Separate the egg to egg yolk and white. *4
  • Combine all ingredients except oil in a small mixing bowl. *5
  • Transfer the egg yolk and other ingredients mixture into a electric blender.
  • Add a small amount of oil at a time and blitz or pulse the blender.
  • Repeat this step until all the oil is added and egg mixture and oil has emulsified creamy.
  • Transfer the Japanese mayo into a sterilized container. *6

2 inches piece peeled fresh ginger, thinly sliced
3 lemons, halved and juiced, shells reserved
1/2 cup low sodium soy sauce
3/4 cup sugar
4 bay leaves
2 tablespoons chopped green onions (green and white parts)
2 teaspoons chopped garlic
1 tablespoon salt (optional)
1 teaspoon fresh ground black pepper
2 teaspoons crushed red pepper flakes (more if needed)
2 lbs large shrimp or 2 lbs jumbo shrimp, peeled and deveined
2 teaspoons essence seasoning (use Emeril Lagasse's Essence or Creole Essence / Bayou Blast)
1 large egg yolk
2 teaspoons fresh lemon juice (please not the bottled stuff, please)
1 teaspoon minced fresh ginger
1/2 teaspoon minced green onion (both the white & green parts)
1 cup vegetable oil
1 tablespoon soy sauce (low sodium)
1 tablespoon chopped fresh cilantro leaves
1/2 teaspoon fresh ground white pepper
1/2 teaspoon sesame oil
1/4 teaspoon salt (taste to see if needed) (optional)

Steps:

  • SHRIMP:.
  • Combine 6 cups water with the ginger, lemon shells, lemon juice, soy sauce, sugar, bay leaves, green onions, garlic, salt, black pepper, and crushed red pepper in a large heavy saucepan and bring to a boil over high heat.
  • Season the shrimp with the Essence and add to the boiling mixture.
  • Cook for 2 minutes, remove from the heat, and steep for 2 minutes.
  • Remove the shrimp with tongs or a slotted spoon and transfer to a large platter to cool.
  • When cool enough to handle, serve, either warm, at room temperature, or chilled, with the Asian Mayonnaise.
  • ASIAN MAYONNAISE: (Make ahead).
  • Combine the egg yolk, lemon juice, ginger, garlic and green onions in a food processor and process 15 seconds.
  • With the motor running, slowly add the vegetable oil through the feed tube.
  • The mixture will thicken.
  • Add the soy sauce, cilantro, pepper, sesame oil and salt.
  • Pulse once or twice to blend.
  • Serve immediately or store in an airtight container for no more than 24 hours before using.
