A friend had suggested ages ago, after marinading and immediately before grilling or cooking, to place 1 small spring of rosemary on top each piece of meat. The Asian-rosemary infused flavor is delicious.

1/4 cup soy sauce or 1/4 cup tamari
2 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoon garlic, minced
1 tablespoon ginger, minced
2 tablespoons green onions, sliced thin
ground black pepper

Steps:

  • Whisk ingredients together in a small bowl. Place meat, poultry, fish, or vegetables in zipper lock bag or in shallow, nonreactive pan. Pour marinade over contents and seal or cover. Turn zipper lock bag or stir contents of pan occasionally to evenly distribute marinade.
  • Prepare 1/2 cup marinade per pound of meat. See description for suggested use of rosemary.

¼ cup soy sauce
4 teaspoons sesame oil
2 tablespoons honey
3 slices fresh ginger root
2 cloves garlic, crushed
4 skinless, boneless chicken breast halves

Steps:

  • In a small microwave-safe bowl, combine the soy sauce, oil, honey, ginger root, and garlic. Heat in microwave on medium for 1 minute, then stir. Heat again for 30 seconds, watching closely to prevent boiling.
  • Place chicken breasts in a shallow dish. Pour soy sauce mixture over, and set aside to marinate for 15 minutes.
  • Preheat a grill for medium-high heat. Drain marinade from chicken into a small saucepan. Bring to a boil, and simmer over medium heat for 5 minutes. Set aside for basting.
  • Lightly oil the grill grate. Cook chicken on the prepared grill 6 to 8 minutes per side, or until juices run clear. Baste frequently with remaining marinade. Chicken will turn a beautiful golden brown.

¼ cup plus 2 tablespoons dark brown sugar, packed
¼ cup plus 2 tablespoons soy sauce
3 tablespoons fresh lime juice, from 2-3 limes
1½ tablespoons vegetable oil
½ teaspoon Asian sesame oil
¾ teaspoon Garam Masala (substitute curry powder if you can't find it)
3 cloves garlic, minced
1½ teaspoons fresh grated ginger
½ teaspoon cayenne pepper (use less if you don't like heat)
8 skinless, boneless chicken thighs
2 scallions light and dark green parts only, thinly sliced

Steps:

  • In a medium bowl, mix together all of the ingredients except for the chicken and scallions. Set ¼ cup of the marinade aside and cover (you'll use this later for the sauce), then place the rest in a zip-lock freezer bag with the chicken thighs. Be sure the chicken is evenly coated with the marinade, then place the bag in the refrigerator (in a bowl in case of leakage); let marinate for 3-4 hours.
  • Preheat grill to high heat.
  • Grease the grill. (Lightly dip a wad of paper towels in vegetable oil; then, using tongs, carefully rub the towels over the grates several times until glossy and coated.) Place the chicken on the grill; cover and cook 3-5 minutes on each side, or until nicely browned and done. Transfer the chicken to a serving platter, then top with the reserved marinade and sliced scallions.

My boyfriend came up with an extremely quick and easy marinade to put on chicken fillets to BBQ one day with what we had left in the kitchen. Almost all my friends have asked for the recipe. It is foolproof. You can add anything else you may wish, such as chopped red chillies for colour or sesame seeds.

4 chicken breast fillets (skin optional)
1 cup soy sauce
1/2 cup fresh lemon juice
2 tablespoons grated fresh ginger
1/2 cup chopped fresh coriander
1 large scallions or 1 large green onion, sliced diagonally

  • Put all ingredients together with chicken breasts and marinade for at least one hour. When cooked, throw over sliced green onions for decoration.

3 tbsp soy sauce
1 tbsp honey

1/2 tsp red pepper flakes
1/4 cup neutral oil
1 tbsp sesame oil

Steps:

  • Combine all ingredients in a small mixing bowl. Whisk well to combine.
  • Transfer the marinade to a ziptop freezer bag. Add the chicken pieces and store in the refrigerator on a tray to catch the drips.
  • Allow the chicken to marinate for 2 to 24 hours.
  • When ready to serve, remove the chicken from the marinade and cook on a hot grill.
  • Discard the marinade or boil it in a saucepan to use as a sauce. (See post note.)

1 teaspoon freshly ground black pepper
3 pounds bone-in, skin-on chicken thighs, drumsticks, or breasts, or a combination of all three

Steps:

  • 1. Place everything except the chicken in a 13-by-9-inch broiler-proof baking dish and whisk to combine. 2. Lay the chicken in a single layer in the marinade and turn to coat. Cover, refrigerate, and marinate at least 12 hours and up to 24 hours, turning the chicken at least once during the marinating time. 3. Remove the chicken from the refrigerator and let it sit at room temperature for about 30 minutes. Meanwhile, heat the oven to 475°F and arrange a rack in the middle. 4. Turn all the chicken pieces skin-side up in the dish (if you're using drumsticks, just turn to recoat them in the marinade). Bake until the chicken is starting to turn a dark brown color, about 40 minutes. 5. Set the oven to broil and broil until the chicken skin is crisped, about 3 to 5 minutes more. Serve with the sauce on the side.
