How to Make Beef Satay image

With grilling season still in full swing, you can never have enough new and exciting ways to enjoy beef. This is the main course-size version of a fabulous Thai appetizer, strips of beef marinated in Asian spices, skewered, and grilled for a truly amazing combination of flavors. I think you should try this very soon.

1 tablespoon grated fresh ginger root
4 cloves garlic, crushed
2 tablespoons minced onion
¼ cup packed brown sugar
¼ cup fish sauce
2 tablespoons vegetable oil
2 tablespoons soy sauce
2 tablespoons ground coriander
1 tablespoon ground cumin
½ teaspoon ground turmeric
⅛ teaspoon cayenne pepper
1 2-inch piece of fresh lemon grass (white part only)
2 pounds beef top sirloin, trimmed
4 12-inch long metal skewers

Steps:

  • Place ginger, garlic, onion, brown sugar, fish sauce, vegetable oil, soy sauce, coriander, cumin, turmeric, and cayenne pepper into a mixing bowl; whisk into a smooth marinade.
  • Bruise lemon grass by hitting it lightly several times with the back of a large chef's knife; mince the lemon grass and add to the marinade.
  • Cut beef sirloin into strips about 2 1/2 inches long and 1/8 inch thick. Thoroughly mix the beef into marinade until all beef strips are completely coated, about 1 minute. Cover bowl with plastic wrap and marinate in refrigerator for 2 to 4 hours.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Remove beef from marinade and shake off excess marinade. Thread 1/4 the meat onto each metal skewer.
  • Arrange skewers on the preheated grill and cook until the meat stops sticking to the grill, about 1 to 2 minutes. Flip skewers over onto other side and cook until meat is well browned and shows grill marks, 2 to 2 1/2 minutes. Turn onto first side again and cook until meat is still slightly pink, 2 more minutes. Transfer to a platter and let skewers rest about 2 more minutes before serving.

This is from the Weight Watchers New Complete cookbook. Another one of my favorites. These are just like the teriyaki beef strips you get in Chinese restaurants. Oh so yummy and good for you too! Great with rice.

3 scallions, sliced
2 tablespoons reduced sodium soy sauce
1 tablespoon fresh gingerroot, grated peeled
1 tablespoon rice wine vinegar
2 teaspoons dark sesame oil
1 teaspoon balsamic vinegar
1/2 teaspoon fresh ground pepper
1 garlic clove, minced
3/4 lb beef tenderloin, cut into 16 strips

Steps:

  • Preheat a grill. If you are using wooden skewers, soak in water 30 minutes.
  • In a gallon size sealable plastic bag, combine all of the ingredients, including the beef. Seal the bag, squeezing out the air. Marinate 15 minutes.
  • With tongs, remove the beef from the marinade; discard the remaining marinade. On each of 16, six-inch, metal or wooden skewers, thread one beef strip, piercing the beef in several places.
  • Grill until cooked through, about 5 minutes on each side.
  • Serve with either chinese mustard, duck sauce and/ or soy sauce to dip the skewers inches.

3 tablespoons hoisin sauce
3 tablespoons sherry
¼ cup soy sauce
1 teaspoon barbeque sauce
2 green onions, chopped
2 cloves garlic, minced
1 tablespoon minced fresh ginger root
1 ½ pounds flank steak
skewers

Steps:

  • In a small bowl, mix together hoisin sauce, sherry, soy sauce, barbeque sauce, green onions, garlic, and ginger.
  • Cut flank steak across grain on a diagonal into 1/4 inch slices. Place slices in a 1 gallon resealable plastic bag. Pour hoisin sauce mixture over slices, and mix well. Refrigerate 2 hours, or overnight.
  • Preheat an outdoor grill for high heat. Discard marinade, and thread steak on skewers.
  • Oil the grill grate. Grill skewers 3 minutes per side, or to desired doneness.

1/2 pound beef top sirloin steak, cut into 1/4-inch strips
2 green onions, thinly sliced
1/4 cup reduced-sodium soy sauce
3 tablespoons sugar
2 tablespoons white wine or unsweetened apple juice
4 garlic cloves, minced
1 tablespoon sesame seeds
1 teaspoon sesame oil
1/4 teaspoon pepper
Hot cooked rice, optional

Steps:

  • Flatten each strip of steak to 1/8-in. thickness. In a large resealable plastic bag, combine the onions, soy sauce, sugar, wine, garlic, sesame seeds, oil and pepper; add the beef. Seal bag and turn to coat; refrigerate for at least 1 hour. Drain and discard marinade., Place beef on a small broiler pan. Broil 3-4 in. from the heat for 2-3 minutes on each side or until meat reaches desired doneness. Serve with rice if desired.

1 1/2 lbs boneless beef top sirloin steaks
1/3 cup soy sauce
1 green onion, thinly sliced
2 garlic cloves, finely minced (for beef)
2 tablespoons brown sugar, firmly packed
1 tablespoon sesame seeds, toasted
1 tablespoon dark sesame oil
1 teaspoon finely minced gingerroot
wooden skewer, soaked in water for 30 minutes
1/2 cup cider vinegar or 1/2 cup distilled white vinegar
1/2 cup granulated sugar
4 large garlic cloves, mashed to paste with pinch of salt (for sauce)
1/4 teaspoon salt
1 1/2 teaspoons hot red pepper flakes

Steps:

  • Trim excess fat from steak; slice steak diagonally across grain into 1/4-inch-thick strips.
  • Combine soy sauce and remaining ingredients in a glass dish; add steak strips, and toss to coat. Cover and marinate in refrigerator 1 1/2 to 2 hours.
  • Remove steak strips from marinade, reserving marinade.Thread steak strips onto prepared skewers.
  • Grill, uncovered over medium-hot coals (350°F to 400°F / 175°C to 205°C) 8 to 9 minutes or until desired doneness, turning and basting frequently with reserved marinade. Discard any remaining marinade.
  • for sauce In a small saucepan bring vinegar to a boil. Stir in sugar and simmer 5 minutes.
  • Remove from heat and stir garlic paste and red pepper flakes into vinegar. Cool.
  • Serve sauce at room temperature.
