A friend had suggested ages ago, after marinading and immediately before grilling or cooking, to place 1 small spring of rosemary on top each piece of meat. The Asian-rosemary infused flavor is delicious.

1/4 cup soy sauce or 1/4 cup tamari
2 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoon garlic, minced
1 tablespoon ginger, minced
2 tablespoons green onions, sliced thin
ground black pepper

Steps:

  • Whisk ingredients together in a small bowl. Place meat, poultry, fish, or vegetables in zipper lock bag or in shallow, nonreactive pan. Pour marinade over contents and seal or cover. Turn zipper lock bag or stir contents of pan occasionally to evenly distribute marinade.
  • Prepare 1/2 cup marinade per pound of meat. See description for suggested use of rosemary.

This all-purpose marinade can be used for chicken or turkey breast, pork cutlets, firm-pressed tofu, and seafood. If you prefer to omit the chile flakes or paste, use 5 or 6 slices of smashed fresh ginger instead.

1/2 cup soy sauce (if possible find a "sweet soy sauce called ketjap, it's in the dutch section of the grocery stores)
1 cup water
1/2 cup pineapple juice (or I've purchase the pineapple or orange canned juice)
1 -2 tablespoon sugar
1/2 teaspoon ginger
1/4 teaspoon garlic (or use 2 cloves fresh)

Steps:

  • Mix all ingredients in marinade dish.
  • Marinade overnight (up to 48 hrs.).
  • Great for Steaks, Pork or Chicken.
  • I REFUSE to eat pork, however, when marinated in this, it was AWESOME!

ASIAN MARINATED GRILLED PORK TENDERLOIN

3/4 cup soy sauce
1/2 cup rice wine vinegar
1 tablespoon hot chili sauce (recommended: sambal oelek)
1 (1-inch) piece ginger, finely chopped
3 garlic cloves, smashed and finely chopped
1 scallion, both green and white parts, thinly sliced
1 orange, zested
4 pork tenderloins
2 tablespoons coriander seeds, toasted and ground

Steps:

  • In a medium bowl, combine the soy, rice wine vinegar, chili sauce, ginger, garlic, scallions and orange zest. Place the pork in a large container or bowl and pour the marinade over the pork. Cover with plastic wrap, and let sit for 2 hours at room temperature, or overnight in the refrigerator.
  • Remove the pork from the container, put the marinade in a small saucepan and bring it to a boil over medium heat. Remove from the heat and reserve it for drizzling over the pork when serving. *WARNING: This liquid MUST be brought to a boil to kill any bacteria from raw meat juices.
  • Preheat the grill to medium-high heat.
  • Dust the pork liberally with the ground coriander seed and place on the preheated grill. Brown it on all sides then move it to a cooler part of the grill to cook it to desired doneness, about 10 to 12 minutes.
  • Remove the pork from the grill to a cutting board and let rest for 10 minutes before slicing. Slice the pork on the bias and place on a serving platter. Serve drizzled with the reserved boiled soy marinade.
  • Pork- the other white meat!

These steak bites are full of Asian-inspired flavors and are fabulous when paired with coconut jasmine rice or will elevate any stir-fried vegetable dish!

1 pound beef rib-eye steaks
¼ cup oyster sauce
2 tablespoons reduced-sodium soy sauce
2 tablespoons sweet soy sauce
1 tablespoon sesame oil
1 tablespoon brown sugar
½ teaspoon toasted sesame seeds

Steps:

  • Cut steak into bite-size pieces. Place steak bites into a resealable plastic bag.
  • Mix together oyster sauce, soy sauce, sweet soy sauce, sesame oil, and brown sugar in a bowl. Pour mixture over the steak pieces and mix to coat with marinade. Marinate for 30 minutes.
  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Line the air fryer basket with a perforated parchment round. Drain marinade from steak and set steak pieces onto the parchment.
  • Air-fry until steak bites are cooked to your desired doneness, about 6 minutes, shaking the basket at the 3-minute mark.
  • Remove steak bites from the air fryer and sprinkle with toasted sesame seeds before serving.
