Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Line a non insulated cookie sheet with parchment paper.
- With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt.
- Bake until the edges brown but are not burnt, 10 to 15 minutes.

- Preheat oven to 350F.
- Pull kale away from stem, wash and pat dry with a clean towel.
- In a large mixing bowl using your hands, mix the kale, lemon juice, olive oil and sea salt together.
- Lay kale out in a single layer on a parchment-lined cookie sheet and bake for 15 minutes. Check to see how they're doing. If they're still soft, continue baking, checking every 5 minutes until crispy.
- Allow to cool and then watch out! You've never eaten a head of kale so fast in all your life.

- Heat oven to 350°F. Spray 1 or 2 cookie sheets with cooking spray. Wash and thoroughly dry kale. In large bowl, toss kale, oil, gingerroot and salt to thoroughly coat kale.
- Place in single layer on cookie sheet(s). Bake 1 cookie sheet at a time 12 to 15 minutes or until crisp. Sprinkle with sesame seed. Cool and serve.

Steps:
- Set a lidded 6 - 8 quart saucepan of water, salted with 2 T salt, on stove to boil.
- Wash the kale thoroughly to remove all grit. Discard the tough ribs, and coarsely chop the kale leaves.
- Plunge the kale into boiling water and cook for 3 to 4 minutes & then drain.
- In a large skillet or heavy wok, heat the sesame oil over medium heat. Add the shallot, garlic, scallions and ginger root and cook for about 1 minute to release the aromas.
- Add the kale a bunch at a time and cook 3 to 4 minutes, or until the leaves have softened a bit but the kale retains its shape. Remove from heat and add the soy sauce. Divide among individual plates, sprinkle with toasted sesame seeds, if using, and serve hot.

Steps:
- Gather all the ingredients.
- Preheat oven to 325F.
- Wash, dry, remove ribs (stem) and cut kale into bite size pieces (about 1/2 inch slices). Place into a mixing bowl.
- Add olive oil into mixing bowl and coat well.
- In a small bowl, combine salt, garlic powder, and onion powder.
- Line an oven tray with aluminum foil, transfer kale. Make sure there is no overlap (depending on the size of your tray, you may need to use 2 trays). Sprinkle seasoning mix over kale and place into center of the oven. Bake for 10-12 minutes or until crispy.
- Remove tray from oven and allow to cool down. Once cool, transfer to serving plate.

- Tear the kale into bite-size pieces and discard the stems (they just turn rubbery in the dehydrator).
- Wash the kale well and dry. If you have a Salad Spinner, that would work great. I don’t have one so I put the kale in a large colander, held a clean tea towel over the top and shook it really hard over the sink. That worked pretty well. I’ve also heard of putting wet greens in a clean pillowcase and swinging it around but that seems kind of gross to me.
- Combine all the other ingredients in a blender until smooth. Give it a taste and adjust the salty/sour balance to your taste.
- Put the kale in a large bowl, pour the sauce over, and use your hands to coat every leaf well. I like to massage it a bit to get the sauce in all the little crevices. Taste a leaf now and sprinkle a little more salt or red pepper over them if you think it needs it. I think some sesame seeds would be a nice touch, too.
