Wrap the lettuce around the meat like a burrito and enjoy!

16 Boston Bibb or butter lettuce leaves
1 pound lean ground beef
1 tablespoon cooking oil
1 large onion, chopped
¼ cup hoisin sauce
2 cloves fresh garlic, minced
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
2 teaspoons minced pickled ginger
1 dash Asian chile pepper sauce, or to taste
1 (8 ounce) can water chestnuts, drained and finely chopped
1 bunch green onions, chopped
2 teaspoons Asian (dark) sesame oil

Steps:

  • Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  • Heat a large skillet over medium-high heat. Cook and stir beef and cooking oil in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease; transfer beef to a bowl. Cook and stir onion in the same skillet used for beef until slightly tender, 5 to 10 minutes. Stir hoisin sauce, garlic, soy sauce, vinegar, ginger, and chile pepper sauce into onions. Add water chestnuts, green onions, sesame oil, and cooked beef; cook and stir until the onions just begin to wilt, about 2 minutes.
  • Arrange lettuce leaves around the outer edge of a large serving platter and pile meat mixture in the center.

2 teaspoons vegetable oil
8 ounces white mushrooms, chopped
3 scallions, chopped
2 cloves garlic, minced
One 6-ounce can water chestnuts, chopped
1/4 cup soy sauce
1 tablespoon brown sugar
1 tablespoon rice wine vinegar
3 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 tablespoon honey
1 tablespoon Dijon mustard or spicy mustard
1 tablespoon Sriracha sauce
1/2 teaspoon sesame oil
8 to 12 large iceberg lettuce leaves, cleaned and dry
Shredded carrots, for serving
Bean sprouts, for serving
Chopped fresh cilantro, for serving

Steps:

  • For the filling: Brown the turkey in the oil in a large saute pan over medium-high heat until no longer pink. Add the mushrooms, scallions, garlic and water chestnuts, and cook until the mushrooms soften. In a small bowl, mix the soy sauce, brown sugar and vinegar, pour over the turkey mixture and cook 1 minute. Remove from the heat.
  • For the drizzling sauce: In a small bowl, whisk together the soy sauce, vinegar, honey, mustard, Sriracha, sesame oil and 1/4 cup water.
  • Serve the turkey mixture with the lettuce leaves, drizzling sauce and vegetables for lettuce wrap assembly.

1¼ lb. fat-free lean ground turkey
1 Tbsp olive oil
1 clove garlic, minced
1/8 tsp. ground ginger
4 green onions, thinly sliced
1 (8 oz) can sliced water chestnuts, drained and coarsely chopped
3 Tbsp hoisin sauce
2 Tbsp lower-sodium soy sauce (green top)
1 Tbsp rice vinegar
2 tsp. roasted red chili paste
Pinch of salt
12 Boston lettuce leaves

Steps:

  • Heat 1 tablespoon of oil in a large nonstick skillet over medium-high heat. Add turkey, garlic and ginger to the pan and cook for about 6 minutes or until turkey is browned. Stir to crumble.
  • Combine turkey mixture, onions and chopped water chestnuts in a large bowl, stirring well, and set aside.
  • Meanwhile in a small bowl, whisk together hoisin, soy sauce, rice vinegar and roasted red chili paste and drizzle over the turkey mixture. Toss to coat completely.
  • Add about ¼ cup turkey mixture to each lettuce leaf, serve and enjoy!

2 tablespoons packed brown sugar
1 teaspoon cornstarch
¼ teaspoon ground ginger

1 lb uncooked 99% lean ground turkey breast (or ground chicken breast)
1 small onion (chopped)
3 garlic cloves (minced)
2 teaspoons sesame seeds

Steps:

  • Combine the soy sauce, brown sugar, cornstarch, ground ginger, red pepper flakes, and black pepper in a bowl and stir to mix. Set aside.
  • Add the sesame oil to a large saute pan or skillet and bring over medium heat. Once the oil is hot, add the ground turkey and stir to break them up and coat them in the oil. Cook the ground turkey for about 2 minutes, breaking up with a spoon, until it starts to break into chunks and "brown." Add the chopped onion and stir together. Continue to cook, stirring occasionally, for another 4 minutes or so until the turkey is cooked through and broken into small chunks and the onions are softened. Add the garlic and stir together. Cook for another 30-60 seconds.
  • Stir the sauce from step one and add it to the pan. Stir to coat the meat and reduce the heat to med-low. Cook for another 4-5 minutes, stirring occasionally. Remove from heat and top with sesame seeds and sliced scallions before serving.

2 Tablespoons olive oil (divided)
1 large onion (chopped)
4 cloves garlic (minced)

2 teaspoons fresh ginger (minced)
1 Tablespoon rice wine vinegar

Steps:
