1 teaspoon sugar
2 1/2 tablespoons chopped cilantro

1 cup chopped garlic
2 Thai bird chiles, minced
1 teaspoon cumin powder
Salt
Pepper
2 bunches scallions, cut into 3-inch long pieces
8 shiitake mushroom caps
1/4 cup teriyaki sauce
4 sesame hamburger buns

Steps:

  • Place the beef in a bowl, add with curry powder, sugar, cilantro, scallions, garlic, chiles, cumin, salt, and pepper, and mix well. Form into 4 (8-ounce) patties. Place patties on grill and grill to desired doneness. Place scallion pieces and shiitake caps on the grill and brush with the teriyaki sauce and grill until well charred.
  • Serve burgers on sesame buns topped with grilled scallion and shiitakes and more teriyaki sauce, if desired.

4 cloves garlic

1/4 teaspoon red pepper
1/4 cup frozen orange juice concentrate
2 tablespoons soy sauce
1 tablespoon honey
1 tablespoon tomato paste
1/4 teaspoon pepper
1/4 cup chicken broth
1 teaspoon cornstarch

Steps:

  • Combine beef with 1/2 of the garlic, 1/2 of the scallions, the chestnuts, and the zest.
  • Form into 4 patties and grill or broil.
  • Saute remaining garlic and scallions with concentrate, soy sauce, honey, tomato paste, and pepper.
  • Combine the broth with the cornstarch.
  • Bring the concentrate mixture to a boil, add the broth, and stir until sauce thickens.
  • Serve the sauce over the hamburgers.

1 large orange-freshly squeezed to make 1/2 Cup of juice
1/2 inch piece of ginger-minced
1 large or several small cloves of garlic-minced
1 Tablespoon tamari (or soy) sauce
2 Tablespoons honey
2 Tablespoons rice vinegar
1/2 tsp. sesame oil
2 tsp. cornstarch
1/2 Cup water

Steps:

  • Put all ingredients into a non stick frying pan and boil for a few minutes.
  • Whisk until the sauce reduces enough to begin thickening.
  • Mix the cornstarch and water together and pour half of it into the boiling sauce, whisking until the sauce thickens to your desired consistency.(a syrup consistency works well).
  • Use the remaining cornstarch as necessary.
  • Remove from heat and cool to desired temperature.
  • Store in the fridge covered for up to a week. If it gets too thick warm it a bit and whisk in a little water.

1 lb ground beef
1/2 medium onion, finely chopped
1/4 cup water chestnut, chopped
2 green onions, chopped

1 1/2 cups soy sauce
1/4 cup thinly sliced green onions

2 tablespoons canola oil, plus more for brushing
Kosher salt and freshly ground black pepper
4 brioche buns, split
Fresh cilantro leaves, for serving
1/2 head red cabbage, thinly sliced
1/2 head Napa cabbage, thinly sliced
1/2 large carrot, finely grated
1/2 cup thinly sliced green onions

Cook the burgers, basting with the marinade and flipping once, until golden brown on both sides and cooked to medium doneness, about 8 minutes total.
  • Place the buns cut-side up on a baking sheet, brush the cut sides with some canola oil and toast in the oven until golden brown, 4 to 5 minutes.
  • Meanwhile, make the gochujang "ketchup": Whisk together the gochujang, orange juice and honey in a small bowl and set aside.

  • Heat the oil in a wok or large frying. Pat the beef dry with some kitchen roll, then mix the cornflour with the salt and pepper and toss the beef in the cornflour until completely coated.   • Whilst the beef is cooking, mix the orange juice, zest, sugar, soy sauce, garlic, ginger and rice vinegar and put to one side.
  • After the beef has been removed from the pan there should still be a little oil left. Turn the heat down a little and add the sliced red pepper and onion. Fry for a minute or two (so they're hot but still crunchy), then pour over the orange sauce. Turn up the heat and bring to the boil, then add the beef back in. Give it a stir and heat through for 1 minute. If your sauce is looking too thin, you can stir in a little bit of cornflour mixed with cold water to thicken.
