ASIAN MARINATED PORK CHOPS

This is one of my favorite marinades to use for grilled pork chops. I usually just throw ingredients as I see fit, so the measurements are estimates. The roasted red chili paste can be found in the Asian section of your grocery store.

1 cup soy sauce
½ cup brown sugar
2 cloves garlic, crushed
1 tablespoon ground ginger
1 tablespoon ground cumin
1 tablespoon roasted red chili paste
6 (1-inch thick) pork chops

Steps:

  • Place the soy sauce, brown sugar, garlic, ginger, cumin, and chili paste in a large, heavy plastic zipper bag. Smush the bag a few times with your fingers to mix all the ingredients thoroughly and dissolve the brown sugar; place the pork chops into the marinade, and seal the bag. Allow to marinate for 30 to 45 minutes.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the pork chops from the marinade, and discard the marinade. Shake off excess marinade, and grill the pork chops until browned, the meat is no longer pink inside, and the chops show good grill marks, 5 to 7 minutes per side. An instant-read meat thermometer inserted into the thickest part of a chop should read at least 145 degrees F (63 degrees C).

3 tablespoons soy sauce
3 tablespoons honey
1 tablespoon lemon juice
1 tablespoon olive oil
3 garlic cloves, minced
1/2 teaspoon ground ginger
4 boneless pork loin chops (1/2 to 3/4 inch thick)

Steps:

  • In a large resealable plastic bag or shallow glass container, combine the first six ingredients. Add pork and turn to coat. Seal or cover; refrigerate for 4-8 hours. , Drain and discard marinade. Grill, uncovered, over medium heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving.

Steps:

  • Mix the oil, soy sauce, garlic, ginger, mustard, salt and pepper, and brush on the pork chops. Refrigerate for at least 30 minutes or overnight.
  • Preheat the grill.
  • Grill the chops for 5 to 8 minutes on each side, depending on the thickness. Let the chops rest on a plate for 1 or 2 minutes before serving.

1/4 cup reduced sodium soy sauce
2 tablespoons vegetable oil
2 tablespoons brown sugar
1 garlic clove, minced
1/4 teaspoon ground ginger
1 teaspoon dark sesame oil
4 (5 ounce) boneless pork chops, about 1 inch thick

Steps:

  • In a large re-sealable plastic bag place, oils, soy sauce, brown sugar, ginger and garlic; mix well.
  • Add pork chops.
  • Marinate in refrigerator 30 minutes- 2 hours.

2 tablespoons soy sauce
1 tablespoon chili garlic sauce, such as Sriracha
1 tablespoon toasted sesame oil
1 tablespoon light brown sugar
1 tablespoon rice vinegar
1 tablespoon peeled and finely grated fresh ginger
1 clove garlic, grated
1/2 cup hoisin sauce
4 bone-in pork chops (about 3 pounds)
Kosher salt and freshly ground black pepper
1 red onion, cut into 1/2-inch-thick slices
4 to 6 baby bok choy, halved lengthwise (about 1 pound)

Steps:

  • Preheat a grill to medium-high heat. Stir together the soy sauce, chili sauce, sesame oil, brown sugar, vinegar, grated ginger and grated garlic in a small bowl. Reserve 2 tablespoons for the vegetables and then stir in the hoisin sauce. Set half aside for serving with the cooked pork chops and stir in 1 to 2 tablespoons water.
  • Sprinkle the pork chops on both sides with 1/2 teaspoon each salt and pepper for all 4 chops. Place the pork chops and onions on a lightly oiled grill. Grill until the pork chops are just slightly pink near the bone, 6 minutes on the first side and 4 to 5 minutes on the second side. Grill the onions until they are soft. Start brushing both the pork and the onions with the hoisin sauce mixture about halfway through grilling. Transfer the pork chops to a cutting board to rest for about 5 minutes and the onions to a bowl.
  • Put the bok choy in a large bowl and cover with plastic wrap. Microwave until the center core has softened and can easily be pierced with the tip of a sharp knife, 3 to 5 minutes. Season the bok choy with 1/4 teaspoon each salt and pepper and grill until charred, 2 to 3 minutes per side. Add to the bowl with the onions and gently toss with the reserved 2 tablespoons ginger sauce. Serve the pork chops with the grilled vegetables and the reserved hoisin sauce mixture on the side.

4 center-cut pork loin chops (about 1 inch thick), trimmed of excess fat
2 tablespoons vegetable oil
1 tablespoon freshly squeezed orange juice
Salt and freshly ground black pepper to taste
1 tablespoon sesame seeds
2 teaspoons ground ginger
1/2 teaspoon minced garlic
1/4 cup soy sauce
1 tablespoon dark sesame oil
1 1/2 teaspoons rice or other light vinegar
1 teaspoon honey

Steps:

  • Heat gas or charcoal grill. Rinse pork chops; pat dry. Rub with vegetable oil; drizzle with orange juice. Sprinkle with salt and pepper.
  • In small bowl, beat basting sauce ingredients with whisk until well blended.
  • Place pork on hottest side of grill; sear 1 to 2 minutes on each side, being careful not to burn pork. Move pork to cooler side of grill; cook 10 to 20 minutes, turning several times and basting both sides generously with soy sauce mixture, until pork is firm to the touch, juices run clear and center is just pink when cut with knife. (The timing will depend on the heat of the grill and the thickness of the chops. Covering the grill will speed the cooking time.) Discard any remaining basting sauce.
  • If desired, serve pork over hot cooked pasta or rice.

vegetable oil, for brushing
salt & freshly ground black pepper
1/4 cup chopped green onion, including some tender green tops
1/4 cup hoisin sauce
3 tablespoons ketchup
2 tablespoons white wine vinegar
1/4 teaspoon ground ginger
1 tablespoon soy sauce

Steps:

  • Preheat grill. Brush pork chops lightly with oil on both sides. Season generously with salt and pepper. Grill chops over medium heat, turning once, until lightly browned and slightly pink on the inside, about 6 minutes on each side. Brush tops with glaze and grill 1 minute longer. Turn chops, brush other side with glaze, and grill 1 minute longer. Transfer to a plate and sprinkle with green onions.
  • Hoisin Glaze: In a small bowl, mix together all ingredients. Makes 1/2 cup.
