1/4 cup thinly sliced green onions
1/4 cup unsweetened pineapple juice
1/4 cup soy sauce
1/4 cup ketchup
1/4 cup plum sauce
2 tablespoons minced fresh cilantro
3 garlic cloves, minced
1 tablespoon minced fresh gingerroot
1 beef flank steak (1-1/4 pounds)

Steps:

  • In a small bowl, combine the first 8 ingredients. Pour 3/4 cup marinade into a shallow dish; add the steak and turn to coat. Cover; refrigerate for 4 hours or overnight. Cover and refrigerate remaining marinade. , Drain and discard marinade. Grill steak, covered, over medium heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting occasionally with reserved marinade. To serve, thinly slice across the grain.

Grilled flank steak marinated in a bold Asian-inspired mixture of soy sauce, ginger, garlic, sriracha, and fish sauce to add a tasty boost of flavor.

1/2 cup soy sauce
1/3 cup vegetable oil
¼ cup minced red onion
¼ cup maple syrup
1 tablespoon minced garlic
1 tablespoon minced ginger
1 tablespoon chopped cilantro
1 teaspoon kosher salt
1 teaspoon fish sauce
1 teaspoon sriracha
¼ teaspoon black pepper
2 pounds flank steak
1 tablespoon lime juice
1 lime (cut into 8 wedges)

Steps:

  • In a medium-sized bowl whisk together soy sauce, vegetable, red onion, maple syrup, garlic, ginger, cilantro, salt, fish sauce, sriracha, and black pepper.
  • In a small bowl add ¼ cup of the marinade mixture and lime juice, set aside.
  • Add flank steak to a baking dish or large resealable plastic bag.
  • Pour the marinade over the steak, cover and refrigerate for 30 minutes.
  • Flip steak over, cover, and marinate 30 minutes in the refrigerator.
  • Remove the flank steak from the marinade and pat dry with paper towels to remove excess moisture from the surface.
  • Preheat grill over high heat.
  • The chamber temperature should be between 400 to 450ºF.
  • Add a small amount of oil on a folded piece of paper towel, and then carefully grease the cooking grid with the oil.
  • Once the grill reaches the recommended temperature, place the steak on the grill and close the lid.
  • Cook the steak until charred marks appear, 4 minutes.
  • Flip over and cook covered until desired doneness is reached, about 2 to 4 minutes. For medium rare (120 to 125ºF) or 130 to medium 135ºF (50 to 57ºC) internal temperature.
  • Transfer steak to a cutting board and tent with foil for 10 minutes before slicing.
  • Slice the grilled flank steak against the grain.
  • Pour reserved marinade over the steak or serve on the side with lime wedges.

My Asian Style Grilled and Marinated Flank Steak is full of flavor, texture and that mmmmmm savory umami balance on your palate that makes you beg for more and more.

3 pounds flank steak
1/4 cup vegetable oil or peanut oil
1/2 cup LOW sodium soy sauce (I always use Kikkoman)
1/2 cup balsamic vinegar
1/4 cup teriyaki sauce
1/4 cup honey
juice of 1 lime
a few squirts of siracha (depending on how spicy you like it)
Thumb sized piece of ginger (minced on a microplaner)
5 garlic cloves minced on a micro planer.
4 scallions sliced thinly

Steps:

  • Combine soy sauce, balsamic vinegar (this is what gives that tangy, savory flavor) honey, teriyaki sauce, ginger, lime, garlic, a few squirts of siracha, vegetable oil and scallions into a bowl and mix to combine all the flavors.
  • Then throw all the ingredients in a zip lock bag along with the steak. Shake, shake, shake. Make sure it's all covered.
  • Place in the fridge for at least an hour and up to 24 hours.
  • If you live in the not so warm parts...like me... you can cheat a bit. Take a large oven proof frying pan and place it into a 500-degree oven for about 10 minutes. Or you can place it in there as the oven preheats.
  • Remove your steak out of the bag and place it on a paper towel, dabbing the moisture off of the steak.
  • Once the pan is heated, place the steak directly onto the pan. You will see it shrink up immediately from the high heat. Close the oven and allow to cook for 5 minutes then flip it and cook it for 2 minutes.
  • For me, this is the ultimate way to sear a steak nicely without clouding my house up with smoke.
  • Place the steak on a sheet pan and cover with foil. Let the meat rest for 10 minutes.
  • Slice into it on a bias, against the grain, as we previously discussed.
  • Sprinkle with scallions and grab some chop sticks! Dinner is served.

1 medium orange, cut into quarters
1 lemon, juiced and zested
1 cup orange juice
¼ cup rice vinegar
¼ cup soy sauce
¼ cup maple syrup
¼ cup honey
4 cloves garlic

1 tablespoon ground black pepper
1 teaspoon cayenne pepper
4 green onions, cut into 1/4-inch pieces
2 pounds flank steak

Steps:

  • Combine orange pieces, lemon juice, lemon zest, orange juice, rice vinegar, soy sauce, maple syrup, honey, garlic cloves, ginger, pepper, and cayenne pepper in a blender; blend until marinade is smooth. Mix in green onions.
  • Place flank steak into a shallow baking dish and pour marinade over meat, making sure marinade gets underneath the meat as well. Cover the dish, refrigerate, and marinate for at least 2 hours, or overnight.
  • Remove steak from the refrigerator and allow to come to room temperature for at least 30 minutes before grilling. Lift up steak from the dish to let juices run off; reserve marinade.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Cook flank steak on the preheated grill until it begins to firm and is reddish-pink and juicy in the center, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).
  • Cover steak and set aside to rest for 10 minutes before slicing thinly against the grain.
  • While steak is resting, pour remaining marinade in a saucepan over medium-high heat and bring to a boil. Cook until sauce is reduced, about 5 minutes. Serve with the flank steak.

3 tablespoons mirin
6 tablespoons water
2 teaspoons sesame oil
1 teaspoon dried chili peppers
2 tablespoons chopped fresh lemongrass
1 tablespoon grated fresh ginger
2 cloves garlic, smashed
2 tablespoons chopped green onion
1 teaspoon sesame seeds
1/2 pound flank steak, cut into 1/2-inch thick slices against the grain
3 tablespoons olive oil, plus 3 tablespoons
2 tablespoons Chinese black bean sauce
1 green pepper, stemmed, cored, and julienned
1 yellow pepper, stemmed, cored, and julienned
1 red pepper, stemmed, cored, and julienned
Crushed garlic, in the skin
I pack dry Chinese curly egg noodles, boiled according to the package directions
1 small bok choy cut into 1/2-inch slices

Steps:

  • Combine the marinade ingredients in a medium sized bowl, and soak the flank steak in the marinade for 1 hour.
  • In a hot wok over the highest heat, add 3 tablespoons of the oil and black bean sauce. Using the Chinese ladle, spread the bean sauce in the wok until nice roasted smell comes out. Add the beef and stir-fry for 2 minutes. Do not over cook! Remove the beef and set aside.
  • To the wok, add the remaining 3 tablespoons oil, the peppers, and the crushed garlic. Add the boiled noodles and the marinade for the beef and cook for 2 minutes. Add the bok choy and cook until wilted. Add the reserved beef and toss until heated through. Serve.

This flank steak comes out so delicious! It is so easy to make and you can put the marinade together, toss in the flank steak and toss in the freezer for an OAMC treat. The recipe comes from the Super Suppers cookbook.

2 lbs beef flank steak
1/2 cup soy sauce
1/4 cup fresh lemon juice
1/4 cup minced onion
1/4 cup packed brown sugar
2 tablespoons toasted sesame oil
1 tablespoon freshly grated gingerroot
1 tablespoon minced garlic
1 teaspoon red pepper flakes (optional)

Steps:

  • Combine all ingredients except steak in a large ziploc bag, close, and squish together to combine the the ingredients.
  • Add the steak to the bag and marinate in the refrigerator for 1 to 24 hours.
  • Preheat grill to medium-high.
  • Place steak on grill and throw away extra marinade.
  • Grill until you reach your favorite level of doneness.
  • Let steak stand 10 to 15 minutes so that juices will redistribute.
  • Slice meat across the grain into very thin slices.

Steps:

ASIAN MARINATED FLANK STEAK

I originally got the idea for this out of Sunset Magazine, and have tweaked it to suit my family and friends. It makes a great OAMC entree for the grill, or to take camping. I've used this on chicken and salmon as well as beef, just reducing the marinating time appropriately. Don't use ground (dry) ginger in this- the flavor is not the same.

1/4 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons gingerroot, grated

  • Place all ingredients except for steak in a gallon size zip top bag, and mix well to combine.
  • Add steak to bag, remove all of the air, and seal.
  • Marinate for up to 24 hours, turning bag occasionally.
  • Remove meat from marinade, and grill or broil to desired degree of doneness.
  • Thinly slice steak against the grain and serve.
  • To OAMC, freeze bag for up to 6 months, and pull from freezer at least 24 hours before using.

Cut crosswise into thin slices and serve, passing cooked marinade as sauce.

  • Whisk together ingredients for marinade, pour over steak in a shallow dish or zip top bag. Allow to marinate for several hours or overnight (the longer, the better).
