This salmon is marinated in a simple but super tasty Asian marinade and then broiled/grilled to produce a gorgeous caramelisation. Fast enough for midweek, fancy enough for company!

2 salmon fillets (, skinless (approximately 0.8 - 1lb / 400 - 500g))
1 tsp fresh ginger (, finely grated)
1 garlic clove (, crushed)
1 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp sweet chili sauce ((Note 1))
Sesame seeds
Scallions/shallots (, finely sliced)
Steamed Asian Greens
Rice

Steps:

  • Combine the Marinade ingredients in a shallow bowl. Add salmon and turn to coat. Cover and marinate for 30 minutes or up to overnight.
  • Heat grill/broiler on high. Place the rack 25 cm / 10" from the heat source.
  • Place salmon on baking tray (no oil required). Scrape all the excess glaze from the bowl onto the salmon.
  • Grill/broil for 7 to 10 minutes, until the top of the salmon is beautifully caramelised. Be careful not to overcook the salmon!
  • Serve salmon sprinkled with sesame seeds, scallions/shallots with rice and steamed Asian greens on the side.

Steps:

  • In a large resealable plastic bag, combine the first 12 ingredients. Add the salmon; seal bag and turn to coat. Refrigerate for 30 minutes, turning occasionally., Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Place salmon skin side down on grill rack. 1/4 cup low sodium soy sauce
3 tablespoons rice wine vinegar
2 garlic cloves, (minced)

3 ounces shiitake mushrooms, (whole)
2 5 ounce salmon fillets
thinly sliced scallions, (to garnish)

Steps:

  • In a shallow bowl, combine orange juice & zest, soy sauce, rice wine vinegar, garlic, ginger, olive oil, honey, and red pepper flakes. Pour half the mixture into a medium sized mixing bowl.
  • Place the salmon, skin side up, in the shallow bowl and place the mushrooms in the medium sized mixing bowl. Spoon the marinade over the mushrooms to cover them and marinate both the salmon and the mushrooms for 30 minutes.
  • Preheat the air fryer to 400° F. Place the salmon in the air fryer basket skin side down and arrange the mushrooms around the salmon. Cook 8-10 minutes. To serve, drizzle some of the remaining marinade from the mushroom bowl and garnish with scallions and sesame seeds.

1 green onions/scallions
1 clove garlic
1/2 tbsp gingerroot
1 1/2 tbsp soy sauce
1 tbsp Hoisin sauce
1 tbsp olive oil
1/2 tbsp lemon
ground pepper to taste
300 g salmon fillet

Steps:

  • Marinate Finely chop the scallion, mince the garlic, then put them in a shallow dish.
  • Add the grated ginger, soy sauce, Hoisin sauce, oil, lemon juice, and pepper.
  • Whisk using a fork to combine the ingredients.
  • It is not necessary to add any salt since the soy and Hoisin sauces are already rather salty.
  • Put the salmon in the dish and turn it to coat with the marinade.
  • Cover and let stand either 30 min at room temperature or overnight in the refrigerator.
  • Bake Preheat the oven to 190ºC/375ºF.
  • Remove the salmon from the marinade, letting the excess marinade drip off, then transfer it to a baking sheet, skin side down.
  • Bake in the middle of the oven about 20 min.
  • Alternatively, the salmon may be cooked on an outdoor grill.
  • Check with a fork to see if the fish is cooked through.
  • Separate and lift the salmon from the skin with a metal spatula and serve (discard skin).

2 tablespoons olive oil
2 tablespoons rice vinegar

2 cups long-grain white rice
1 teaspoon dried dill weed

Steps:

  • Make several shallow slashes in the skinless side of the salmon fillets. Place fillets skin-side down in a glass baking dish. In a medium bowl, whisk together the olive oil, rice vinegar, soy sauce, brown sugar, garlic, pepper, onion and sesame oil. Pour the liquid over the salmon, cover, and refrigerate for 1 to 2 hours.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium saucepan, combine the rice, water, and dill weed. Cover pan, bring to a boil, then reduce heat to low and cook 20 minutes, until rice is tender and water has been absorbed. Allow to stand for 5 minutes before removing lid and fluffing rice with a fork.
  • Remove cover from salmon, and bake the fish and the marinade for about 30 minutes, or until fish can be flaked with a fork. Serve salmon over the rice, and pour sauce over.

1/2 tablespoon fresh orange juice or 1/2 tablespoon prepared orange juice
1/2 tablespoon fresh lime juice

1 tablespoon sesame oil

Steps:

  • With a spoon mix together soy sauce, juices, mustard and spice powder in a shallow dish or pan.
  • Add salmon and turn to coat all sides; cover and refrigerate for 1 hour.
  • Bring salmon back to room temperature and preheat broiler.
  • Remove salmon from the marinade and pat dry with paper towels.
  • Brush sides and tops of fillets with sesame oil and place on broiler pan; broiler 4 inches from heat until fish is cooked through, about 5 minutes (you might want to spray your broiler pan w/cooking spray).

2 tablespoons balsamic vinegar
6 tablespoons lemon juice (or juice from 2 whole lemons)
2 tablespoons minced garlic
1 1/2 tablespoons brown sugar

2 tablespoons grated fresh ginger (in the recipe but I leave out) (optional)

Steps:

Easy baked salmon, with an Asian-inspired orange-soy sauce. Ready in just 15 minutes!

2 salmon or trout fillets (long, thin skin-on fillets or *See Notes)
1 Tbsp olive oil (plus more for greasing the pan)
Salt and freshly ground pepper
1 medium orange (sliced, for topping)
4 Tbsp orange juice (freshly squeezed recommended)
3 Tbsp brown sugar
2 Tbsp soy sauce
1 tsp sesame oil
Splash of Sriracha (optional, if you'd like a touch of heat)

Steps:

  • Preheat oven to 400F., with the oven rack in the centre of the oven.
  • Add a little olive or cooking oil onto a baking sheet and use a brush to evenly coat the bottom of the baking sheet. Set aside.
  • Pat the salmon or trout fillets dry with paper towel. Brush the top of the salmon lightly with olive oil, then season with salt and freshly ground pepper. Lay the fillets onto the prepared baking sheet, skin side down.
  • Make the sauce by stirring together all the sauce ingredients. Set aside until needed.
  • *Note: Baking time will vary depending on the size/thickness of your fish. Your first baking period should produce a fish that is cooked/lighter coloured on the outside, but still not quite cooked through the thickest part. Extend your baking time if needed.When oven is preheated, place the salmon into the oven and roast for 10 minutes. (Fish should be cooked-looking on the outside edges with the thicker middle still a little pink at this point). Remove from oven and baste the fish generously with some of the sauce and place a few orange slices on top, if desired. Return to the oven for an additional 5 minutes. (Fish should be evenly coloured at this point.
  • Remove fish from oven and again baste generously. Switch the oven from the Bake setting to the Broil setting (use the "Hi" setting if your oven has both Hi and Lo). Return the fish to the oven to the same middle oven rack and broil for 1 minute. Baste again and broil for another 1-2 minutes. Watch closely so the sauce doesn't begin to scorch, as that will introduce a bitter taste to the sauce.
  • Remove from oven and spoon any sauce that may be in the pan over-top of the salmon. Serve immediately.

  • Salmon:
  • Heat a grill to medium-high heat.
  • Brush both sides of the fillets with olive oil just before grilling, then season with salt and pepper, to taste.   • Mix all ingredients except the salmon and coconut oil in a dish that will easily fit all of the salmon, such as a 9×9 baking dish. Or in a ziplock bag. Add the salmon to the marinade, cover and refrigerate. Allow it to marinate for at least 30 minutes, or up to 4 hours.
  • In a medium-sized jar or other heat-proof container with a lid, add the hot water, distilled vinegar, agave nectar, and salt. Close the lid and shake to combine well. Add the onion slices and submerge them in the liquid. Place in the fridge for at least 15 minutes. 30 minutes is best.
  • While the salmon and pickled onions are resting make the dressing. To a small bowl whisk together all of the ingredients. If the tahini paste is too cold and is not mixing together well add a splash or two of hot water. Taste and adjust any flavors as needed. If the dressing is too thin add a tablespoon or two of tahini paste until you reach the right consistency. It should be thick but pour able. Set aside until the salad is ready.
  • Get the veggies ready. Add the leafy greens to a serving bowl or to each individual bowl. Note: I used the slicing blade on my food processor to shred my cabbage and I used the shredding blade on my food processor to shred my carrots. You could also use a knife to thinly slice the cabbage and the large holes on a box grater to grate the carrots. Or you can buy them both pre-shredded at the grocery store.
