Water - 10 cups
Lemon Grass - 3 stalks (outer husk removed, cleaned and chopped coarse)
Kafir Lime Leaves - 15 (washed. You may use the zest of 1 large Lime in case kafir leaves are not available.)
Galangal - 1 large piece (chopped coarse. You may use ginger to substitute galangal)
Garlic - 2 pods large (chopped coarse)
Shitake mushrooms (dry - 5 large. You 8-10 fresh shitake or any variety, in case dry is not handy.)
Soy Sauce - 1 tsp
Red Chillies (dry - 2 chopped coarse)
Star Anise - 2
Brown Sugar - 2 tbsp or less (to taste)
Salt to taste

Steps:

  • Take a large stock pot.
  • Add water and all the other ingredients to it.
  • Bring it to a boil and then reduce the flame to medium.
  • Simmer it for 20-25 minutes till the broth is reduced to half or 5 cups. Switch off the flame and Asian Broth is ready.

one whole chicken ( ,around 2000g)
1 small chunk of ginger
4 scallions
2.5 L to 3L water

Steps:

  • Regular pot method: Add half of the scallion and ginger inside the chicken. Place all in ingredients in a large stockpot. Add the remaining scallion and ginger. Bring it to a boil over high heat and then slow down the fire to medium low fire. Cover the lid and simmer for 2 hours. strain the broth into individual containers and store them in the freezer for future use
  • High-pressure method: Add half of the scallion and ginger inside the chicken. Place all in ingredients in a large stockpot. Add the remaining scallion and ginger. Choose chicken stock or stock procedure. When well cooked, transfer the chicken out. Now, you can directly. Or re-heat the chicken stock to remove the extra water off and you will have more concentrated stock.
  • When cooled, there will be a layer of fat floating on the surface. If you are on a diet, you can remove it but it is better to keep it for a better flavor.

The importance of using good broth for Chinese cooking (and really, any cooking) cannot be overstated. This simple broth-flavored with ginger, garlic, scallions, and cilantro-makes a fantastic base for many recipes, including soups, sauces, and marinades, and is also perfect for blanching and poaching.

Yield Yields about 3 quarts

Number Of Ingredients 9

1 4-lb. whole chicken, trimmed of excess fat and quartered, giblets reserved (except liver)
1 lb. chicken wings
2 medium yellow onions, quartered
1 cup coarsely chopped fresh cilantro
1 4-inch piece fresh ginger, peeled, cut into thirds, and smashed
4 medium scallions, cut crosswise into thirds
3 medium cloves garlic, peeled
1/2 tsp. white peppercorns
Kosher salt

Steps:

  • In a 10-quart stockpot, bring 2 quarts of water to a boil. Add the quartered chicken, giblets, and chicken wings; return to a boil. Boil for 2 minutes to bring any impurities to the surface. Pour off the water and run cold water into the pot to rinse the chicken; pour off the water again.
  • Add 4 quarts of fresh cold water along with the onions, cilantro, ginger, scallions, garlic, and peppercorns. Cover and bring to a boil. Turn the heat down, partially cover, and simmer for 3 hours, skimming off foam as necessary.
  • Strain over a large bowl or pot, discarding the solids. Season to taste with salt. Let cool before using or storing.

1 can (48 oz) nonfat chicken broth
1/4 cup soy sauce
1 tbsp brown sugar
1/4 tsp Asian chili sauce (or 1/4 tsp red pepper flakes)
2 tbsp fresh lime juice
1-inch piece fresh ginger, peeled and cut in 8 slices
3/4 lb boneless chicken breasts, cut in thin 3-inch-long strips
3 tbsp cornstarch
1 cup sliced shiitake mushrooms (or white button mushrooms)
1 cup snap peas (or snow peas)
1 red bell pepper, cored, seeded and julienned
1 tsp lime zest
2 tbsp chopped fresh cilantro

Steps:

  • Combine broth, soy sauce, sugar, chili sauce, lime juice, and ginger and boil 5 minutes. Meanwhile, toss chicken with cornstarch until completely coated. Add chicken and shiitakes to broth and simmer 15 minutes. Remove the pan from the heat and stir in snap peas, red pepper, zest, and cilantro. Let soup stand 2 to 3 minutes before serving.

4 boneless skinless chicken breasts
60ml sake (if you don't have sake, use vodka)
thumb-sized piece ginger , peeled and sliced into matchsticks
3 spring onions , finely sliced on the diagonal, and white and green parts separated
150ml soy sauce
4 tsp sesame oil
2 garlic cloves , grated
600g thick white noodles (such as udon)
2 large long red Serrano chillies , seeds left in and sliced on the diagonal
1 large egg , beaten
small pack coriander
2 tbsp toasted sesame seeds
seaweed flakes, to serve (optional)

Steps:

  • Slice the chicken breasts into strips about 1cm wide and the full length of the breast. Briefly marinate the chicken in the sake and leave to one side for a few mins.
  • Mix the ginger with the whites of the spring onions, soy sauce, sesame oil and garlic.
  • Put 2 litres of water in a saucepan and bring to the boil. Pour in the ginger soy mixture, reduce the heat and cook just below a simmer for 5 mins.
  • Add the chicken and sake mix, noodles and chillies to the stock and turn the heat up. As soon as the broth comes to the boil, turn off the heat. Slowly pour the egg into the broth, stirring all the time. Add the green parts of the spring onions and stir through. Leave to sit for 2 mins.
  • Ladle the soup evenly into six bowls. Sprinkle with the toasted sesame seeds and coriander, with a few seaweed flakes, if you like.

1 to mato (cut into wedges)
1 long green onion (cut the white part into small sections)
1 small bunch of bean sprouts
2 celery sections (cut into 1 inch sections)
half of a corn (cut into 2-3 cm thick pieces)
3 shiitake mushrooms (remove the ends)
3 L light stock
2 tsp. salt
3 tbsp. beef tallow
2-3 slices of ginger
4 long green onion sections
5-8 garlic cloves
3 L light stock
3 tbsp. Doubanjiang
3 tbsp. chopped chili pepper (糍粑辣椒)
1 tsp. Sichuan peppercorn
1 star anise
12 to 25 dried chili peppers (depending on how hot you want the soup base to be.)
1 tbsp. light soy sauce

Steps:

  • In a large pot with water, add chicken, pig bones, white peppercorn, long green onion and ginger. Bring to a boiling and skim any floats on the surface. Slow down the fire and continue simmer for 1 hour.
  • In your serving pot, add tomatoes, 2-3 shiitake mushrooms, red dates, scallion sections, celery and 3 sections of corns. Season with 2 teaspoons of salt and load with 3 L light stock.
  • Soak 50g dried chili pepper in hot boiling water for 30 minutes, covered please. Then transfer out and finely mashed.
  • Melt a beef tallow in a pot, fry ginger, scallion and cloves until aromatic.
  • Place in all the seasonings including doubanjiang, chopped red peppers and other seasonings (or a store bough package). Fry over slowest fire for 1-2 minutes until the oil turn red. Pour in light stock prepared previously and light soy sauce. Simmer for 15 minutes over slowest fire.

1 small fresh whole chicken, about 3 pounds
1 large yellow onion, quartered
1 large carrot, peeled, in 1-inch chunks
2 large celery ribs, in 1-inch chunks
2 sprigs Italian parsley
1 tablespoon plus 1 teaspoon sea salt

Steps:

  • Put the chicken in a heavy pot large enough to hold it. Add the onion, carrot, celery, and parsley. Add just enough cold water to cover the chicken, about 3 1/2 quarts. Don't use too much water or your broth will be weak. Place the pot over medium-high heat and bring to a boil, skimming any foam that rises to the surface. Boil for 1 minute. Stir in the salt, cover, and remove from the heat. Let stand until the broth is cool, about 3 hours. Remove the chicken from the broth, then strain the broth. Refrigerate the broth immediately or freeze for longer keeping. You can carve the chicken into serving pieces, or skin and bone it and use the meat for soup and sandwiches.
