These quick and easy authentic Asian Chicken Lettuce Wraps are so delicious, made with sautéed ground chicken thighs, shiitake mushrooms and water chestnuts seasoned with Asian spices served in a crispy cold lettuce leaf with a spicy hoisin dipping sauce.

8 oz skinless (boneless chicken thighs, ground)
1/4 cup water chestnuts (chopped fine)
1/4 cup dried shiitake mushrooms
1 tbsp reduced sodium soy sauce
1/4 tsp dark soy sauce
1/2 tsp oyster sauce
1 1/2 tsp sesame oil
1 tbsp rice wine or dry sherry
1/2 tsp sugar
freshly ground white pepper (to taste)
2 cloves garlic (finely chopped)
6 iceberg lettuce leaves (rinsed (careful not to break))
2 tbsp diced scallions
4 tbsp hoisin sauce
1/2 tsp chili sauce (I used Sriracha)
1 tbsp warm water

Steps:

  • Place mushrooms in hot water to soften a few minutes. Remove stems and chop fine.
  • Combine soy sauces, oyster sauce, 1/2 tsp sesame oil, rice wine, sugar, and pepper in a bowl.
  • Combine ground chicken (I put the chicken in the food processor), softened mushrooms and water chestnuts into a bowl. Pour over chicken; toss. Let marinate for 15 minutes.
  • Mix Spicy Hoisin Dipping Sauce ingredients in another bowl. Set aside.
  • Heat remaining sesame oil in a wok or skillet over high heat. Add garlic; cook until golden, about 10 seconds. Add chicken mixture; stir fry until browned, breaking the chicken up as it cooks, about 4-5 minutes.
  • To serve, spoon 1/4 cup of the chicken into each lettuce leaf. Garnish with scallions and a spoon a little Spicy Hoisin Dipping Sauce onto each one.

1 (8 ounce) can water chestnuts, drained and diced
¼ cup hoisin sauce

1 tablespoon olive oil
1 cup diced yellow onion
1 pound ground chicken

Steps:

  • Set 2 to 3 tablespoons green onions aside for garnish. Combine remaining green onions, water chestnuts, hoisin sauce, soy sauce, Sriracha, rice vinegar, ginger, and red pepper flakes in a bowl.
  • Heat oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add ground chicken, garlic, and sesame oil. Cook and stir until chicken is crumbly and no longer pink, 5 to 10 minutes.
  • Add hoisin mixture to the skillet and cook until heated through, about 5 minutes. Season with salt and pepper.
  • Fill lettuce leaves with chicken mixture and top with reserved green onions.

1/3 cup low-sodium soy sauce
1/4 cup hoisin sauce
1/3 cup rice wine vinegar
1/3 cup brown sugar
1 teaspoon crushed red chili flakes (optional)
2 Tablespoons olive oil
2 Tablespoons minced garlic
2 Tablespoons minced ginger
1/4 cup minced shallots
1 pound ground chicken or turkey
1 (8-oz.) can water chestnuts, drained and chopped
1/2 cup loosely packed cilantro leaves
1/2 cup thinly sliced scallions
1/3 cup toasted peanuts or cashews, chopped
Lettuce leaves and chopped veggies, for serving

Steps:

  • In a small bowl, whisk together the soy sauce, hoisin sauce, rice wine vinegar, brown sugar and crushed red chili flakes (optional). Set the sauce aside.
  • In a large sauté pan set over medium-high heat, add the oil. Once the oil is hot, add the garlic and ginger and cook, stirring constantly, until golden and fragrant, about 2 minutes.
  • Add the shallots and cook, stirring constantly, for 3 minutes.
  • Add the ground chicken and using a spatula, break it apart into pieces. Continue cooking until it is cooked through and no longer pink, 5 to 7 minutes.
  • Stir in the water chestnuts then stir in the sauce and cook, stirring occasionally, for 3 minutes.
  • Remove the mixture from the heat then stir in the cilantro and scallions and taste and season it with salt and pepper.
  • Divide the chicken mixture among the lettuce cups then garnish with chopped nuts and serve.

Steps:

  • Whisk together sauce ingredients until well combined. If you use a firmer peanut butter you may need to microwave the mixture for 30-60 seconds in order to melt it and ensure everything is well-mixed.
  • Heat 2 TBS peanut oil in a frying pan. Once hot, add ground chicken.
  • Cook until some pieces are starting to brown. Add onion and cook for 5 minutes or until the onion is becoming translucent.
  • Add the peppers and water chestnuts and cook about 5 minutes or until peppers are becoming soft.
  • Add sauce and simmer on low heat until the chicken and veggies are evenly coated and everything is heated through.

1 pound lean ground beef
1 tablespoon cooking oil
1 large onion, chopped

Stir fry sauce:
4 boneless skinless chicken thighs, or 2 large breasts, grilled and diced
2 tablespoons vegetable or peanut oil
1 cup water chestnuts, diced
1 cup mushrooms, diced
1/2 red onion, diced
1 tablespoon garlic, minced
1 jalapeno pepper, seeded and diced
2 tablespoons cilantro, rough chopped
2 tablespoons fresh mint, rough chopped
2 tablespoons basil, rough chopped
6 - 8 leaves iceberg lettuce
2 tablespoons soy sauce
1 tablespoon brown sugar
1/2 teaspoon rice wine vinegar
1/2 teaspoon fish sauce
Asian barbecue sauce:
1/4 cup sugar
1/2 cup water
2 tablespoons soy sauce
2 tablespoon rice wine vinegar
2 tablespoon ketchup
1 tablespoon lemon juice
1/4 teaspoon sesame oil

  • Grill chicken until just done, do not over cook. Allow to cool and then dice. (If you are not going to grill the chicken. Dice the meat into small pieces. Heat the oil in wok or skillet, add chicken and stir fry until done. Remove chicken from the pan and set aside. Add an additional tablespoon of oil to the pan and continue with instructions below). In a small bowl or ramekin, mix together the stir fry sauce and set aside. Prepare all ingredient by chopping and dicing to pea size pieces. Reduce heat to a low simmer and cook until sauce has reduced by about half and has thickened to a syrup. Chill before serving.

  • Make the sauce: Combine all the ingredients in a bowl and set aside. Stir again just before using.

Steps:

  • Heat the sesame oil in a large skillet over MED heat and add the onion. Cook until the onion becomes translucent, about 4-5 minutes.
  • Add the chicken breast pieces and cook for about 5 minutes.
  • Mix the garlic and ginger paste, brown sugar, soy sauce, tomato paste, rice vinegar, sriracha, hoisin sauce and chili paste together in a small mixing bowl.
  • In another small bowl, whisk together the chicken broth and cornstarch until smooth.
  • Once the chicken has cooked, pour the sauce over the chicken and stir. Let it cook for about 2 minutes, then add the chicken broth/cornstarch mixture and stir.
  • Reduce the heat to MED LOW and let the sauce simmer for 5-8 minutes, or until thickened to your liking.
  • Stir in the peanuts, then remove the skillet from the heat and let it cool for 5-10 minutes. Keep in mind the sauce will continue to thicken as it cools.

1 1/2 lbs chicken breasts, cut into small pieces

1 orange, zest of
1/2 red bell pepper, diced small
1 (6 -8 ounce) sliced water chestnuts, drained and chopped

1/2 large head iceberg lettuce, core removed, head quartered

Steps:

  • Preheat a large skillet or wok to high.
  • Add oil to hot pan. Add chicken to the pan and sear meat by stir frying a minute or 2.
  • Add mushrooms and cook another minute or two.
  • Add salt and pepper to season, then garlic and ginger. Cook a minute more.
  • Grate zest into pan, add bell pepper bits, chopped water chestnuts and scallions. Cook another minute, continuing to stir fry mixture.
  • Add hoisin Chinese barbecue sauce and toss to coat the mixture evenly.
  • Transfer the hot chopped barbecued chicken to serving platter and pile the quartered wedges of crisp iceberg lettuce along side.
  • Add wedged oranges to platter to garnish.
  • To eat, pile spoonfuls into lettuce.
