There is nothing crazy wonderful about this, it's just a good, hearty chicken and vegetable soup. I have been trying to eat more "low-carb" so this recipe isn't super creamy. You can add 1 cup of chopped potatoes and 1/2 cup cream if you don't care about carbs and I'm sure it would be even better. I just love to eat this soup and I hope you will too. It's very simple to make and just plain old good!

2 tablespoons butter
3/4 cup chopped onion
1 cup chopped celery

For the chicken stock:
carcass of 1 rotisserie chicken
2 cloves garlic, peeled and crushed
1 large carrot, cut into chunks
2 ribs celery, cut into chunks
1/2 onion, cut into chunks
1 stalk lemongrass, crushed
2 tbsp low sodium soy sauce
1 inch piece of ginger, peeled
1/2 tsp pepper
12 cups water
For soup:
1 tbsp vegetable oil
1 tsp sesame oil
6 oz shiitake mushrooms, sliced
4 green onions, sliced (white and green parts)
1 orange or red bell pepper, thinly sliced
3 cloves garlic, minced
2 baby bok choy, sliced crosswise, including the leafy greens
1 cup pea pods, cut in half
1/2 cup shredded carrots
1/2 cup bean sprouts
2 cups shredded rotisserie chicken
8 cups chicken stock
3 tsp ginger paste
3 tbsp reduced sodium soy sauce
1/2 tsp salt
1/2 tsp pepper
2 tsp sriracha

Steps:

  • Combine all stock ingredients in a large soup pot.
  • Bring to a boil, then reduce heat to simmer.
  • Partially cover the pot and simmer for about 2 hours.
  • Remove bones and vegetables from the stock.
  • Using a mess strainer, strain stock into a large bowl.
  • Rinse the same pot and dry.
  • Heat oils over medium high heat.
  • Add mushrooms and saute until browned.
  • Add green onions and saute for 30 seconds.
  • Add bell pepper and saute for 1 minute.
  • Add garlic and saute for 30 seconds.
  • Add bok choy and saute for 1 minute.
  • Add pea pods and carrots and stir fry 30 seconds.
  • Stir in bean sprouts, chicken and stock.
  • Stir in ginger paste, soy sauce, salt, pepper and sriracha.
  • Bring soup to a boil, reduce heat and simmer, covered, for 15 minutes.
  • Serve with additional soy sauce and sriracha

We had a Chinese restaurant that made two soups that I loved how they tasted. When they went out of business, we looked for someone else that made these two soups, without much luck. Knowing all the ingredients that were there, I went to work to make my own recipe for this very tasty soup. Plus I'm a big fan of 'make it tasty, fast and easy' which this is, when I run the veggies through my food processor. Also when I not feel well, this is one soup that has all what help me feel better. I also serve this with steamed rice as a side dish for those who want it as well.

1 pound boneless chicken thighs - cut into bite-size pieces

Steps:

  • Heat the vegetable oil in a large Dutch oven or soup pot over medium-high heat, and cook and stir the chicken thigh and breast meat until the chicken is no longer pink inside, about 3 minutes. When the chicken is cooked, stir in the water, chicken bouillon cube, garlic, ginger, soy sauce, and sesame oil. Bring the soup to a boil, and reduce heat to a simmer.
  • Stir in the baby corn, water chestnuts, carrots, broccoli florets, napa cabbage, red bell pepper, green onions, celery, zucchini, and snow peas, and simmer until the carrots start to softened, and the broccoli and snow peas turn bright green, 1 to 2 minutes. 1 clove garlic

1/2 dried chili peppers
2 cups chicken broth

160 g chicken for Chinese fondue
80 g rice sticks (noodles)
1 carrots
1 green onions/scallions
4 button (white) mushrooms

Steps:

  • Heat the oil in a saucepan over medium-low heat.
  • Add the shallot, then sauté 2-3 min.
  • Add the garlic, ginger and chili pepper.
  • Sauté 3 min with stirring.
  • Pour in the broth and water, then add the fish sauce and a little salt and pepper.
  • Bring to a boil, then lower the heat and simmer a few minutes.
  • Adjust the seasoning.
  • Add the chicken slices, warm up the broth 1 min, then take the saucepan off the heat.

2 tablespoons whole coriander seeds
1 tablespoons whole cumin seeds
2 teaspoons whole fennel seeds
2 whole star anise
Seeds from 4 green cardamom pods
1/2 cinnamon stick (broken into pieces)

For the Spice Paste:
1 small yellow onion
4 cloves garlic
1 inch piece ginger
2 stalks lemongrass (tender midsection only, roughly chopped)
For the Soup:
6 cups quality chicken broth
2 pounds bone-in chicken pieces
2 medium potatoes
2 medium carrots (cut into bite-sized pieces)
1 teaspoon salt
Juice of 1 lime
For serving:
Bean sprouts (chopped cilantro, sliced red chili peppers)

Steps:

  • Heat a small skillet and toast the whole spices until fragrant. Let cool and then grind them in a spice/coffee grinder.
  • Add the ground spices to a food processor along with the ingredients for the Spice Paste. Pulse until ground to a coarse mixture.
  • In a stock pot, heat about 2 tablespoons of oil in a small skillet and fry the spice paste for 2-3 minutes. Add the chicken broth and chicken pieces, bring to a boil, reduce the heat, cover and simmer for one hour.
  • Remove the chicken pieces. Remove the chicken from the bones and shred the chicken. Set aside. Pour the broth through a sieve to remove the spice paste pulp and return the broth to the pot. Steps:

  • Place mushrooms in a heatproof measuring cup and cover with boiling water. Soak for at least 30 minutes or up to several hours. Remove the mushrooms from the water, remove and discard stems (if any) and cut into 1/8-inch slices; set aside. Strain the soaking liquid and reserve.
  • Heat oil in a large soup pot or Dutch oven over medium heat. Add onion, garlic and ginger and cook, stirring, for 5 minutes. Pour in the reserved mushroom liquid, broth, soy sauce, cinnamon stick, star anise and pepper. Bring to a boil. Reduce to a simmer and stir in chicken. Simmer for 20 minutes.

  • Place chicken and all stock ingredients in a medium to large pot and bring to a boil. Lower to a fast simmer and simmer for two hours uncovered.
  • Remove chicken and wings and discard remaining solids. There should be four quarts (one gallon) of stock left. If more, cook down to four quarts. If less, add a little water to equal four quarts.
  • Separate skin and bones from meat and shred meat with two forks. Set aside and discard skin and bones.
  • Note: Clean baby Bok choy of any sand and separate the whites from the tops. Chop the tops and set aside. Remove core from bottoms and discard. Cut the bunch in half the long way then each half in half and slice into pieces. Set aside.
