3/4 lb extra lean ground beef
1 cup oats
1/4 cup hoisin sauce
3 tablespoons water
2 tablespoons soy sauce
1/8 teaspoon cayenne pepper (to taste)
6 whole wheat tortillas
2 cups shredded cabbage
1 medium carrot, shredded
plum sauce (optional)
1 large tomatoes, seeded and finely chopped (1 cup)
1 tablespoon chopped fresh cilantro
1 teaspoon finely chopped fresh gingerroot

Steps:

  • In a bowl, mix together the salsa ingredients; set aside.
  • In a skillet, cook the ground beef until browned; drain and blot up any remaining grease with paper towels.
  • To the cooked beef, stir in oats until well incorporated; add in hoisin sauce, water, soy sauce, and cayenne pepper; let simmer a few minutes until well blended and heated through; taste and adjust seasonings.
  • Warm tortillas; fill each tortilla with beef mixture; top with cabbage, carrot and ginger salsa (or can serve the salsa on the side); wrap up burrito-style; serve with plum sauce.

These are reminiscent of mu-shu, but much simpler. Use the shredded cole slaw mix from the produce dept or shred a small head of cabbage. Quick and easy to make, dinner will be on the table in less than 30 minutes.

1 tablespoon oil
1 lb ground beef
1 garlic clove, minced
8 ounces fresh mushrooms, chopped
1 lb coleslaw mix
1/2 cup carrot, shredded
1/2 cup hoisin sauce
2 teaspoons toasted sesame oil
1/4 cup water
12 fajita sized flour tortillas
12 tablespoons hoisin sauce

Steps:

  • Heat oil in saucepan on medium heat. Add beef and garlic and cook until browned, about 10 minutes, drain.
  • Add mushrooms and cook for 5 minutes. Add carrots, cabbage and cook another 5 minutes.
  • Mix together hoisin sauce, sesame oil, and water. Pour over beef and vegetable mixture. Stir to combine.
  • Cover and let mixture steam for 5 minutes.
  • Spread 1 T hoisin sauce onto each tortilla. Top with 1/2 cup of beef/vegetable mixture. Roll up and serve.

1 lb ground beef
1 packet fajita seasoning
1/2 red onion
1/4 yellow onion
1/4 yellow bell pepper
1/4 red bell pepper
1 Tbsp grated fresh ginger
3 Tbsp soy sauce
1/4 c water
1/4 c milk
4 oz pepperjack cheese
4 oz colby jack cheese
chopped lettuce and tomato for topping
4 flour tortillas
1 can(s) black beans
bw3 asian zing sauce (optional - in lieu of this, you can use a mix of 1/4 cup teriyaki sauce, 2 tbs honey and 1/2 teaspoon red pepper flakes)

Steps:

  • 1. Spice ground beef with salt and pepper to taste, and half of the fajita seasoning packet. Brown ground beef and drain off almost all the grease; save about 1/4 of it in the pan.
  • 2. While beef is browning, finely dice up 1/4 of the red onion, and thinly slice all of the yellow onion and bell peppers into fine strips. Add to beef.
  • 3. Reduce heat, cover and let simmer.
  • 4. Grate the fresh ginger. Add to beef along with water and the soy sauce. Cover and let simmer for 10-15 minutes, stirring every so often.
  • 5. Prepare your toppings: grate the cheeses, finely chop the lettuce, tomato and the other 1/4 of the red onion.
  • 6. Add milk and rest of fajita seasonings to beef. Cover and let simmer for 10 more minutes, stirring every so often.
  • 7. Pour beans into microwave-safe container. Cover the top with your tortillas and microwave for 1-2 minutes.
  • 8. At this point, you can mix your honey, teriyaki and red pepper flakes (if you don't have access to the Asian Zing sauce).
  • 9. Assemble burrito with beans, beef, cheese, onion, lettuce, tomato and top with Asian sauce, or leave that sauce to the side.
