BLACK PEPPER-ASIAGO POPOVERS



Black Pepper-Asiago Popovers image

2 large eggs
1 1/4 cups milk, warmed
1 tablespoon unsalted butter, melted
1 cup all-purpose flour
Kosher salt and coarsely ground black pepper
Vegetable oil, for the muffin cups
1/3 cup shredded Asiago cheese

Steps:

  • Preheat a 12-cup muffin pan in a 425 degrees F oven for 15 minutes.
  • Meanwhile, whisk together the eggs, milk and melted butter. Whisk in the flour and 1 teaspoon each salt and pepper; let rest 10 minutes.
  • Generously brush 8 of the muffin cups with the vegetable oil. Fill the 8 cups with the batter and top with the cheese. Bake 20 minutes, then reduce the oven temperature to 350 degrees F and bake until the tops are browned and puffed, 14 to 18 minutes.

1.75 cup self-rising flour (plus more for rolling)
4 ounces aged Asiago cheese (grated)
1 cup heavy cream
1-2 teaspoons coarsely ground black pepper

Steps:

  • Toss cheese with flour.
  • Add cream and black pepper and stir until well blended.
  • Roll to 3/4" thick on lightly floured surface.
  • Cut with 2" biscuit cutter (or desired size) using a straight down and up motion. Brush with milk, if desired.
  • Place on baking sheet very closely together and bake at 425 degrees for 12-15 minutes, or until lightly browned.

A couple pinches salt

A generous grating fresh nutmeg
1 egg beaten with a splash water
1 teaspoon sugar

Steps:

  • Preheat oven to 375 degrees F.
  • Combine biscuit mix, black pepper, cream, salt, cheese and nutmeg. Pile mixture into 4 large mounds or 8 small mounds onto a nonstick cookie sheet. Brush scones with egg wash, sprinkle with a little sugar and bake for 10 to 12 minutes for large scones, 7 to 8 minutes for small scones.

6 large green sweet bell peppers, cleaned and washed
1/2 cup olive oil
3 Tbsp minced fresh garlic
garlic salt
10 to 12 ounce shaved aged Asiago cheese

Steps:

  • Preheat oven to 350. Place peppers in a roaster or baking dish. Cover and bake until soft and tender, about 35 minutes. (Peppers may be prepared to this pint and refrigerated overnight) Drain the liquid and place peppers in a skillet. Season with oil, freshly chopped garlic and garlic salt to taste. Saute over medium heat until garlic is lightly browned. Top with Asiago cheese and place under broiler to melt. Transfer to a large bowl or serving platter. Serve immediately with good Italian bread.

1 cup (packed) shredded Asiago cheese or Parmesan, Romano, and Asiago cheese blend (about 4 ounces)
1/2 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper

Steps:

  • Preheat oven to 350°F. Line 2 large baking sheets with parchment paper. Mix cheese, black pepper, and cayenne in small bowl. Spoon cheese mixture by generous tablespoonfuls in 6 mounds on each prepared baking sheet, spacing 3 inches apart. Using fingers, spread each mound evenly to 2 1/2-inch round.
  • Bake frico until deep golden and crisp, about 12 minutes. Remove from oven. Slide parchment with frico onto work surface and cool 5 minutes. Slide thin metal spatula under frico to loosen. Cool frico completely on parchment.
  • Frico can be prepared 1 day ahead. Store airtight in single layer at room temperature.

3/4 cup buttermilk
cooking spray

Steps:

  • Preheat oven to 450°.
  • Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, salt, and pepper in a medium bowl; stir well with a whisk.
  • Cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Add cheese; toss well to combine. Add buttermilk; stir just until moist. (If too dry add another tablespoon buttermilk.) Drop dough into 8 equal mounds on a baking sheet coated with cooking spray.

Steps:

  • Preheat oven to 350 degrees.
