ROASTED DELICATA SQUASH, POMEGRANATE AND ARUGULA SALAD

Roasted Delicata Squash, Pomegranate and Arugula Salad image

This vibrant salad features delicata squash, pomegranate, arugula, pepitas and feta tossed in a maple balsamic vinaigrette. If you are preparing this salad in advance, reserve the dressing on the side until you are ready to serve. Recipe yields 6 substantial side salads or up to 10 small salads; cut the recipe in half if desired.

Categories     Salad

Time 45m

Number Of Ingredients 13

2 medium delicata squash (about 2 pounds total)
1 tablespoon extra virgin olive oil
Pinch of fine salt
5 ounces (about 5 heaping cups) arugula or mixed baby greens
Arils from 1 pomegranate (about 1 cup) or a generous handful of dried cherries or cranberries
1/3 cup raw pepitas (green pumpkin seeds) or chopped pecans
3 to 4 ounces (about 3/4 cup) crumbled feta cheese or goat cheese
3 tablespoons extra virgin olive oil
1 1/2 tablespoons balsamic vinegar
2 teaspoons maple syrup
1 teaspoon Dijon mustard
1/4 teaspoon fine salt
Freshly ground black pepper, to taste

Steps:

  • Preheat the oven to 425 degrees Fahrenheit. Wash the squash and scrape off any tough bits of skin with a knife. Slice the squash into 1/2-inch wide rounds. Use a spoon to scoop out the seeds from each round. Drizzle the squash with a generous tablespoon of olive oil and a sprinkle of salt. Use your fingers to lightly coat all surfaces of the squash with olive oil. Bake for about 30 to 35 minutes or until the squash is tender and golden, flipping halfway.
  • In a medium skillet over medium-low heat, toast the pepitas or pecans, stirring frequently, until they are fragrant and lightly golden on the edges, about 3 to 5 minutes. Remove from heat.
  • To prepare the dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, maple syrup, Dijon mustard and salt. Season generously with black pepper, to taste.
  • Once the squash has cooled for a few minutes, combine the arugula, pomegranate, pepitas, crumbled feta and squash in a large serving bowl. When you're ready to serve, drizzle in the dressing and gently toss to combine. Serve promptly.

POMEGRANATE & PEAR GREEN SALAD WITH GINGER DRESSING

Pomegranate & Pear Green Salad with Ginger Dressing image

This gorgeous green salad recipe is bursting with fresh pomegranate, Bartlett pear and Honeycrisp apple! This salad will brighten up your holiday table, and liven up a regular weeknight dinner. Recipe yields 4 to 6 side salads.

Provided by Cookie and Kate

Categories     Salad

Time 30m

Number Of Ingredients 13

1/2 cup raw pecans (halves or pieces)
5 ounces baby arugula
2 ounces (about 1/2 cup) goat cheese or feta, crumbled
1 large ripe Bartlett pear, thinly sliced
1 Honeycrisp or Gala apple, thinly sliced
Arils from 1 pomegranate
1/4 cup extra-virgin olive oil
1 tablespoon apple cider vinegar, to taste
1 tablespoon Dijon mustard
1 tablespoon maple syrup or honey
1 teaspoon finely grated fresh ginger
1/4 teaspoon fine sea salt
About 10 twists of freshly ground black pepper

Steps:

  • To toast the pecans, place them in a skillet over medium heat. Toast, stirring often, until they're fragrant and starting to turn golden on the edges, about 4 to 5 minutes. Remove the pecans from the heat and roughly chop them (no need to chop if you started with pecan pieces). Set aside.
  • Arrange the arugula across a large serving platter (or bowl, but the salad looks prettiest on a platter). Sprinkle the chopped pecans and crumbled goat cheese over the arugula. Fan out your slices of pear and apple and arrange them across the salad in sections (see photos). Sprinkle all over with fresh pomegranate arils.
  • To prepare the dressing, combine all of the ingredients and whisk until blended. Taste, and if it isn't quite zippy enough, add another teaspoon of vinegar.
  • Wait to dress the salad until you're ready to serve (the dressing will wilt the greens over time). When you're ready, drizzle the ginger dressing lightly all over the salad (you might not need all of it). Serve promptly.

If desired, you can add the brown sugar to help the squash caramelize. Heat a small saucepan over low heat and add the pecans. Toast until they are slightly golden and fragrant, stirring and shaking the pan as they toast, for about 5 minutes. Toss them with the pumpkin pie spice.
  • Add the arugula to a large bowl with a pinch of salt and pepper. Add in the avocado, pomegranate arils, cucumber, pecans and squash pieces. Cover in the pomegranate dressing.

  • First, cook the wild rice. Fill a large pot with water and bring it to a rolling boil. Salt the water and add the wild rice. Reduce the heat to a low simmer (medium-high), and let the rice cook for 40-45 minutes. Most of the grains will pop open and taste chewy and tender. Drain any excess water and let it cool for 20-30 minutes.
  • While the rice is cooling, prep all the salad ingredients. Roughly chop the arugula and pecans, slice the green onions, and remove the arils from the pomegranate.
  • In a small bowl, whisk together the dijon mustard, white wine vinegar, maple syrup, fresh lemon juice, minced garlic, salt, and pepper.
  • Combine the cooled wild rice, arugula, pomegranate arils, green onions, pecans, and dried cherries in a large mixing bowl. Drizzle the dressing over the salad and mix it well to combine all of the ingredients. You can eat it immediately or put it in the fridge to chill for 30 minutes before serving.
