JAMAICAN BROWN STEW CHICKEN
I've been wanting to make this for a while since I love any kind of braised or stewed chicken recipes, especially ones that have similar ingredients as jerk chicken. While I might make a few adjustments next time, this really did come out amazingly well. Serve over steamed rice with green peas and garnish with fresh thyme.

Steps:
- Place habanero, thyme, garlic, ginger, light parts of green onions, brown sugar, black pepper, kosher salt, smoked paprika, allspice, and vinegar for marinade into a large mixing bowl and whisk to combine.
- Make 2 slices into the skin side of each thigh, perpendicular to the bone, about 1 inch apart, cutting all the way down to the bone. Add chicken thighs to the marinade and toss thoroughly until evenly coated. Place a piece of plastic wrap over the chicken and transfer to the refrigerator, 12 hours or overnight. If possible, toss several times during the marinating time.
- Remove the chicken from the marinade. Scrape off any chunks of marinade from chicken into the bowl and reserve for later.
- Heat 2 tablespoons oil in a large, deep, heavy-bottomed skillet or Dutch oven over medium-high heat until almost smoking hot. Add chicken and brown well on both sides, about 5 minutes, working in batches if necessary. Once all the chicken is browned, remove to the marinade bowl and reserve.
- Heat the same pan over medium-high heat. Add onion and a pinch of salt; saute in the fat until golden brown, 3 to 5 minutes. Add 1 tablespoon brown sugar and cook until everything caramelizes and turns a dark brown, 3 to 5 minutes more.
- Carefully add chicken broth, ketchup, and bay leaves to the pan; bring to a boil. Add carrots, bell peppers, browned chicken thighs, and reserved marinade.
- Reduce the heat to medium-low and simmer, stirring occasionally, until the chicken is tender and no longer pink in the centers, and the sauce has reduced and thickened, 1 to 1 1/2 hours, skimming the excess fat that comes to the top and basting the chicken with the sauce occasionally. Taste and adjust seasoning. Toss in reserved sliced green onions. Serve immediately.

Steps:
- Bring the rice to a boil, using water and chicken broth, turn down heat and simmer for 15-20 minutes, until done and liquid absorbed.
- Put the chicken leg in a saucepan, cover with water, and bring to boil with salt and pepper for 15 minutes.
- Once chicken and rice are ready, shred the chicken from the bone.
- Fry the onion, green pepper, celery and tomato in the olive oil until it's golden brown, about 10 minutes.
- Add the shredded chicken and the cooked rice to the vegetables and mix thoroughly. Serve and enjoy!

- Stobas (stews) A popular hot comfort food in Aruba is stew (stoba), enjoyed by Arubans despite the tropical climate. It’s typically made with beef or goat as its base, but calco stoba (conch stew) is also popular.
- Pastechi. Pastechis are deep-fried pastry pockets stuffed with myriad types of goodies. Typically you’ll find cheese, ham, beef, chicken or tuna inside a pastechi but you can sometimes find chop suey filling, thanks to the Asian influence on the island.
- Keshi Yena. Often called Aruba’s national dish, this comfort food casserole was borne of necessity since it was created entirely of leftovers baked into a hollow rind of Edam Cheese!
- Sopis (soups) A top food in Aruba to try is soup. Arubans are big on hearty soups, especially fish soup (sopi di pisca) which will depend on the catch-of-the day for its base.
- Pisca Hasa and Other Fresh Fish in Aruba. Of course, being an island, Aruba is blessed with a bounty of goodies from the sea, and scads of seafood and fish restaurants preparing it a myriad of ways.
- Keri Keri. Though originally made with shark, any firm whitefish will do to make this dish. It’s made by mixing flaked stewed or leftover fish with sautéed annatto powder (achiote), fresh basil, onion, celery, tomato and green pepper.
- Lobster, Shrimp and Prawns. As for seafood, Caribbean (rock) lobster and jumbo shrimp/prawn dishes are also treated without much fuss. Try the jumbo fresh local steamed shrimps at legendary Charlie’s Bar in San Nicolas, open for lunch only.
- Pan Bati. Pan bati is the proverbial Aruban side, meaning “smashed bread.” It’s a thin corn flour pancake that’s ideal to soak up sauces or dip in soups.
- Funchi and other Typical Sides. Other typical Aruban side staples include bananas hasa (fried plantains), arroz moro (beans and rice) and a cornmeal polenta called funchi.
- Ayacas. Up until recently, it was very tough to find ayacas in restaurants on Aruba unless you were on island at Christmas time as they are typically made in the home during the holidays and each family has their own secret recipe.
CAJUN RED BEANS & RICE CHICKEN SKILLET: A ONE-POT MEAL

- Season chicken breasts on both sides with approximately 2 tsp. Cajun seasoning. - Caribbean Pepperpot Stew. This Caribbean dish comes from Guyana, where it’s still a popular Christmas dish. In Antigua and Barbuda Fungi and Pepperpot (pepperpot stew with cornmeal dumplings) is considered their national dish.
- Johnny Cake. If you’re from the US you might know Johnny cakes as you can nowadays find them in the cuisine of New England. - Trinidadian Doubles. This is some of my favorite street food anywhere in the world! Doubles is a common street food from Trinidad and Tobago, which you can nowadays find on several Caribbean islands.
- Trinidad Corn Soup. Trinidad corn soup is another popular street food in Trinidad and Tobago. This vegan soup is full of flavors and textures. It’s so delicious that it might just become your favorite soup once you’ve tried it.
