- Cut off the top inch of leaves from the artichokes. Remove the outer layer of small, tough leaves from the stem end. Snip all remaining spiky tips from the outer leaves. Cut off and discard the stems.
- Bring 2 inches of water to a boil in a large pot fitted with a steamer basket. Add the artichokes. Cover and steam until tender, adding more hot water as necessary, 30 to 35 minutes.
- Whisk mayonnaise, herbs, lemon juice, mustard, garlic, salt and pepper in a small bowl. Serve with the artichokes.

A boyfriend's mother taught me this great dipping sauce for artichokes and asparagus. It's somewhat like aioli. Replace dried basil for fresh, and garlic salt for the garlic. If you do use dried basil, cut the original amount in half. Use low-fat mayonnaise if you like.

Unlike some vegetables, you can't just go tossing artichokes straight on the grill. They require a few simple prep steps before ever hitting the grates to ensure a tender smoky bite from start to finish.

- Prep the artichokes by cutting off the tips of the leaves and any little thorns with kitchen scissors. Slice about 3/4 inch to an inch off the tip of the artichoke with a serrated bread knife. Pull off any smaller leaves towards the base and on the stem. Cut off the excess stem, leaving about a 1-inch stem on the artichokes. Rinse the artichokes in running cold water gently working your fingers into the petals of the artichoke to loosen and open them up a bit.
- Place a small amount of water in a large pot for steaming. Add a cut-up lemon and 3 whole garlic cloves that have been crushed into the water. Bring to a boil.
- Place a steamer basket in the pot and add the artichokes top down. So that the trimmed pieces are facing downward and the stem is facing up. Steam for 25-35 minutes or longer, until the outer leaves can easily be pulled off.
- Remove the cooked artichokes and cut them in half. Scoop out the rough fibers from the center of each half.
- Preheat the grill to medium-high.Brush each steamed artichoke half with a bit of olive oil and place face down on a hot grill for about 5 minutes
- Combine mayo and sour cream. Add the zest and juice of one lemon and 3 minced garlic cloves. Season with salt and pepper.
ARTICHOKES WITH ROASTED GARLIC AIOLI

- To make the aioli: Beat the yolk with the vinegar and mustard in a bowl. Whisk in the oil, drop by drop, to make a thick mayonnaise. Squeeze the garlic out of the roasted cloves into the mayonnaise and whisk smooth. Season the aioli with salt, pepper, and lemon juice, to taste.
- To prepare the artichokes: Trim the artichokes, rubbing with lemon as you go, until you are down to the core with a bit of stem attached. Halve. While you're trimming, bring a pot of water to the boil. Squeeze the juice of a lemon into it and salt it. Drop in the artichokes and cook until tender, about 10 minutes, depending on the size. GRILLED ARTICHOKES WITH LEMON AIOLI DIPPING SAUCE

- In a small bowl whisk all of the aioli ingredients except herbs. Store in the fridge, covered for up to 24 hours. Sprinkle freshly-cut herbs on top right before serving.
- Fill a large (8-quarts or more) pot with water, 2/3 of the way up, and bring to a boil.
- Trim one artichoke at a time, making sure to rub all of the freshly cut parts with a halved lemon as you go, to prevent discoloration. First cut off the very tip of the stem. Next, carefully slice off or shave (with a vegetable peeler) the tough outer skin of the stem. Using your scissors and starting at the bottom of the artichoke, snip off the thorny tip of each leaf (about 1/2 inch) until you get to the top of the artichoke, where the leaves are too crowded to separate.
- Lay the artichoke on its side and slice it in half, starting from the stem. Don't forget to keep wiping the cut parts with lemon. Lay each half cut-side down and slice off 3/4 of an inch from the top, to remove the last bunch of thorny tips. Lemon, lemon.
- Carefully drop the artichoke halves into the boiling water. When it returns to a boil, cover the pot and cook the artichokes for 20 minutes. Don't worry if they aren't all completely submerged. Those parts will cook in the steam. Using tongs, gently transfer the artichoke halves, cut side down, to a bowl (letting the water drip off of them) and let them cool for 15-20 minutes. When they're cool enough to handle, use a teaspoon to carefully scoop out the chokes (the hairy part near the heart). They artichokes are now ready for grilling or you can refrigerate them, covered with plastic wrap, for up to 48 hours before grilling them.
- Heat the grill to medium-high. (If you chill the artichokes overnight, allow them to sit at room temperature for 1/2 hour before proceeding.) Brush artichokes generously on both sides with olive oil and season with salt and pepper, to taste. Grill artichokes for about 5 minutes per side, outside first, until the cut side has grill marks and is nicely browned in spots.
- Serve the artichokes warm or at room temperature. I like to set the artichoke halves out on a big platter and let everyone help themselves. Make sure each person has a small plate, a fork and knife to eat the heart, and a small bowl of aioli for dipping. I usually put out one or two large communal bowls for the discarded leaves.

- To steam the artichokes, start a large pot, filled about 2 inches full of salted water, to boil. Heat BBQ to medium heat
- Trim artichokes by cutting off the sharp tips off of the leaves, and trim the stem. Cut the artichokes in half stem to tip, and clean out the fuzzy artichoke center.
- Steam, covered, in lightly salted water for about 30 minutes, cut side down, in a steamer basket.
- Remove the fuzzy choke center with a spoon
- Mix olive oil, garlic, and pepper together in a small bowl. Remove artichokes from the pot and drain. Coat all over with olive oil mixture. Grill for about cut side down about 4 to 5 minutes or until lightly browned. Turn and cook an additional 3 to 5 minutes. Do not over cook. If the artichokes are done you will be able to easily pierce the stem.
- Combine mayonnaise, lemon juice, and dill in a small serving bowl and mix well. Add more to taste, if desired. Set aside until ready to serve.Can be made up to 3 days in advance and refrigerated.
- Remove artichokes from the grill and place on a plate or shallow serving dish, together with the lemon dill aioli and serve. Can be served hot or at room temperature. Cut in quarters for appetizers.

- In a large kettle, combine 3 cups water with olive oil, lemon slices, bay leaves, garlic, salt and pepper and bring to a boil Meanwhile, trim stalks from bases of artichokes, cut a 1" slice from tops.
- Remove descolored leaves, snip off the spiky ends.
- Wash the artichokes in cold water and drain.
- Place artichokes in bottom of kettle, standing on base.
- Bring back to boiling, reduce heat and simmer, covered 40-50 minutes, or until artichoke bases feel soft.
- While the artichokes are cooking, Soak bread in milk for 10 minutes; squeeze hard to remove all milk.
- Place bread and garlic in food processor; blend 10 seconds or until mixture forms a paste Add egg yolks, blend until egg mixture is thick, about 10 seconds.
- Add olive oil, 1` Tbs at a time, blending constantly after each addition until thick.
- Continue until all oil has been used.
- Mixture should be thick.
- Add lemon juice, salt and pepper; blend a few seconds more to mix well.
- Refrigerate, tightly covered.
- Drain artichokes well.
- Let cool slightly.
- Using finger, pull out leaves at center.
- With teaspoon, remove hair choke from cavity.
- Serve artichokes, warm or cold with Aioli Sauce in cavity in center.

FIRE ROASTED ARTICHOKES WITH HERB AIOLI

- Mix the garlic, shallot, olive oil, balsamic vinegar, basil or cilantro, salt, and pepper together in a large bowl. Place the steamed artichokes in the mixture and marinate for 15 to 20 minutes.
- To make the aioli: combine bread crumbs, white wine vinegar, garlic, salt, and egg yolks in a food processor. With the motor running, slowly drizzle in olive oil to make an emulsion. Add white pepper and hot sauce, to taste. Add fresh basil or cilantro and pulse to combine.
- Preheat a grill.

ADDICTIVE ARTICHOKE AIOLI

- Drain artichokes and pat dry with paper towel. Place artichokes, egg yolks, mustard, vinegar, parmesan, garlic, oil and a pinch of salt in a tall jug (see note below for why). Pour in oil.
- With your stick blender head on the bottom of the jug, blitz on high speed. As you start to see the emulsion forming, slowly raise the stick blender so the upper layers of oil get emulsified too.
- Taste and season with extra salt if needed (this can help tone down any bitterness from the oil ) or a little extra vinegar if the flavour is too flat.
- If the mayo is too runny, carefully add extra oil in a thin stream while mixing with the stick blender. This requires some dexterity. If too thick, stir in a little water using a spoon, one tablespoon at a time.
STEAMED ARTICHOKES WITH LEMON GARLIC AIOLI
Steps:
- In a small mixing bowl, make the lemon garlic aioli by combining all ingredients and stirring to combine. Will keep in an airtight container in the refrigerator for 1 week.
- Prep the artichokes by cutting off the top 1" of the artichoke, bottom 1/4" of the stem, then snipping off the pointy part of each leaf to get rid of the thorns.
- In your dutch oven (or any large pot with a lid), heat up all ingredients of the poaching liquid over medium high heat. Add in the artichokes, stem side down so the top of the artichokes face up. Cover with a lid, and simmer the artichokes over medium heat for 45-50 minutes. After the artichokes are fully steamed, remove them with tongs, turn them cut side down on a dish towel or paper towels to drain off excess liquid. Allow to cool for 3-5 minutes.
- In your Instant Pot, heat up all ingredients with the poaching liquid on the saute function. Add in the artichokes, stem side down so the top of the artichokes faces up. Turn off saute mode. Cover with the Instant Pot lid, and cook on high pressure for 10 minutes for a small artichoke, 15 minutes for medium artichokes, and 25 minutes for large artichokes. After the artichokes are fully cooked, release the pressure manually until all the steam is released. Remove the artichokes from the Instant Pot with tongs and turn them cut side down on a dishtowel or paper towels to drain off excess liquid. Allow cooling for 3-5 minutes.
- Serve immediately while warm or later while cooled with the lemon garlic aioli.
