PARMESAN ARTICHOKE CASSEROLE
This is a great casserole that is quick and cheesy! You can add other veggies for a summery twist - sliced zucchini or chopped spinach work great!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place artichoke hearts in a glass mixing bowl. Mix in cheese, garlic powder, mayonnaise and parsley until well coated. Spread mixture in 9x13 inch glass baking dish and sprinkle with paprika.
- Bake in preheated 350 degrees F (175 degrees C) oven until bubbly, about 25 to 35 minutes. Serve hot.

STUFFED ARTICHOKE CASSEROLE
Love stuffed artichokes but too busy? Make this easy casserole instead--it has all the same flavors and can be done in half the time.

- Preheat the oven to 400 degrees F.
- Pulse together the cream cheese, lemon zest, garlic, 1/3 cup Parmesan, 1 teaspoon salt and a few grinds of black pepper in a food processor until smooth. Add the heavy cream and pulse until combined.
- Arrange 1 box of artichokes around the perimeter of a 4-quart oval casserole dish with the stems pointing inward. Arrange any remaining artichokes in the box in the center of the dish. Spoon half of the cream cheese mixture over the artichokes making sure that the edges of the artichokes around the border are not covered. Repeat with the remaining box of artichokes and cream cheese mixture.
- Mix together the panko, butter and remaining 1 tablespoon Parmesan in a small bowl. Sprinkle the breadcrumb mixture over the casserole making sure not to fully cover the exposed artichoke tips. Bake until the breadcrumbs are golden brown and the cheese sauce is bubbling around the edges, 25 to 30 minutes. Let sit for 10 minutes, then sprinkle with parsley and serve with lemon wedges on the side.
ARTICHOKE CASSEROLE
It doesn't get much easier than this. Chopped artichoke hearts mixed with breadcrumbs and parmesan and baked until nice and crispy. Awesome for changing up your normal side dish rotation.

- Preheat oven to 350 degrees F. Drain the artichokes and reserve the liquid. Cut the artichoke hearts into quarters and add to a large bowl. Stir in the bread crumbs, olive oil, reserved liquid from the artichokes, and Parmesan cheese. Add salt and cayenne pepper as desired. Pour the artichoke mixture into an ungreased 8x8 baking dish. Bake at 350 degrees F for 45 minutes or until bubbly and heated through. Serve hot.

We have this recipe with our Thanksgiving dinner annually. I was looking for a similar recipe online and couldn't find one, so I asked my mother to send it to me.

- Preheat oven to 400 degrees F (200 degrees C).
- Put spinach into a microwave-safe bowl. Pour water over the spinach. Cover bowl tightly with plastic wrap.
- Cook in microwave oven on High, stirring occasionally, until the spinach is heated through, 9 to 11 minutes; transfer to a colander to drain, pressing to remove as much moisture from the spinach as possible.
- Melt 1/2 cup butter in a saucepan over medium heat; add spinach, cream cheese, water chestnuts, and garlic powder. Cook and stir until the cheese melts, 5 to 7 minutes.
- Spread artichoke hearts into the bottom of a baking dish. Spread spinach mixture over the artichoke hearts. Sprinkle bread crumbs over the spinach mixture. Dot top of casserole with butter pieces.
- Bake in preheated oven until heated through, 20 to 25 minutes.

- Mix Parmesan cheese, mayonnaise, and garlic powder together in a bowl.

This is a nice and different side dish. Great for holiday dinners. It uses the canned water-packed artichoke hearts, NOT the marinated ones.

- Preheat oven to 350. Lightly grease a 9" casserole dish; set aside.
- Drain the artichoke hearts and coarsely chop; set them aside.
- In a skillet, melt the 3 tbsp butter and sautee the onion and garlic until the onion is translucent.
- Add the artichoke hearts/ lemon juice and the pepper. stir to mix well. Pour into the prepared casserole dish.
- Evenly sprinkle with both cheese.
- In a small bowl, mix together the cracker crumbs and the 3 tbsp melted butter; toss well.
- Sprinkle the buttered cracker crumbs over the casserole.
- Bake at 350 for about 30-35 minutes.

ARTICHOKE CASSEROLE
Steps:
- Heat oven to 350F. Add the melted butter, lemon juice, and olive oil to a casserole dish (I use a 12x12 Corning ware). Stir in the garlic and artichoke hearts, then add the Italian seasoning, salt, and pepper (or creole seasoning) and mix well. Gently stir in the Italian cheese and bread crumbs, try to even out the moisture during this process or the dish will cook unevenly. Even out the casserole and drizzle or spray olive oil to coat the top and sprinkle with Italian cheese and bread crumbs to top it off. NOTE: if you want to do something with the other half of that lemon, you can slice it into wheels to cover the top of the casserole and help retain moisture with added flavor.
