This is from a free brochure I picked up recently in the supermarket and is delicious-I did not have parmesan on hand so used WW grated cheddar and it was still fantastic.

2 (340 g) cans artichokes, drained
1/2 cup basil leaves, add more if you love basil
1/2 cup sour cream, can be lite
3/4 cup grated parmesan cheese or 3/4 cup other cheese
salt and pepper

Steps:

  • Process everything till smooth - you can leave it a bit chunky if you prefer.
  • Serve with pita bread.

Try this spread on our Artichoke and Salami Sandwiches, or as a dip for crudite and pita chips.

Number Of Ingredients 6

1 can (14 ounces) artichoke hearts in water, drained and quartered, or 1 package (10 ounces) frozen artichoke hearts, thawed and quartered
1/4 cup fresh basil, chopped
2 tablespoons light mayonnaise
1 tablespoon fresh lemon juice
1/4 teaspoon red-pepper flakes
Coarse salt and ground pepper

Steps:

  • In a food processor, combine artichokes, basil, mayonnaise, lemon juice, and red-pepper flakes; pulse until smooth. Season with salt and pepper; pulse briefly to combine. Serve on a sandwich or with crackers or crudites. Store in the refrigerator for up to 3 days.

This addictive dip is from the July '09 Cooking Light issue. I served this for dipping with pita chips and also with bread cubes. It makes a WONDERFUL sandwich spread - we put it on a turkey sandwich. The original recipe didn't call for the olive oil; I decided to add it since it only adds about 1 fat gram per 2 tablespoon serving. So you can certainly leave it out if you're watching fat grams.

1 cup lightly packed fresh basil leaf (don't use dried)
3/4 cup grated parmesan cheese or 3/4 cup romano cheese
3/4 cup reduced-fat sour cream

1 garlic clove, minced
1/4 teaspoon pepper
1 tablespoon extra virgin olive oil
extra basil (to garnish)

Steps:

  • Place all ingredients in food processor or blender and process until smooth.
  • Serve with pita chips, bagel crisps, or bread cubes. Or use instead of mayonnaise on a turkey sandwich.

1 can (14 oz) artichoke hearts in water, drained
about 15 leaves of fresh basil
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon red-pepper flakes
sandwich bread (whichever you prefer)
fontina cheese, sliced
dark leaf lettuce
hard salami, thinly sliced

Steps:

  • In a food processor, combine artichokes, basil, mayonnaise, lemon juice, and red-pepper flakes; pulse until smooth. Season with salt and pepper; pulse briefly to combine. Dividing evenly, top 8 thick slices country bread with Artichoke-Basil Spread; layer 4 of the slices with a total of 4 ounces thinly sliced fontina cheese. 1/2 bunch flat-leaf spinach and 4 ounces thinly sliced hard salami. Assemble sandwiches, and serve. Serve on a sandwich or with crackers or crudites. Store in the refrigerator up to 3 days.
