4 skinless, boneless chicken breast halves
salt and pepper to taste
2 teaspoons olive oil
1 (14.5 ounce) can diced tomatoes with green peppers and onions
¼ cup sun-dried tomato pesto
1 (14 ounce) can artichoke hearts in water, drained and quartered

Steps:

  • Season both sides of chicken breasts with salt and pepper. Heat oil in a large skillet over medium-high heat. Place chicken in skillet; cook, turning once to brown each side. Remove chicken from pan, and set aside.
  • Pour tomatoes into pan; cook for 1 minute, stirring constantly, and incorporating any brown bits from bottom of pan. Stir in pesto and artichokes, and return chicken to pan. Cover, and reduce heat to medium. Simmer for 5 to 10 minutes, or until chicken is cooked through.

1 package (9-inch) pie crust
1 jar (6 ounce size) marinated artichoke hearts, drained and coarsely chopped
4 ounces bacon or sun-dried tomatoes, chopped into bits
1 small onion, chopped
1 bunch scallions, chopped
2 cloves garlic, minced
1 red pepper, cut into 1-inch long, thin strips
1/4 cup chopped fresh parsley
3 tablespoons chopped fresh basil
1 cup shredded Swiss cheese
1/2 cup Parmesan cheese
3 large eggs
1 tablespoon Dijon mustard
1/4 cup heavy cream
1/2 cup light cream
1/4 teaspoon nutmeg
salt and pepper

Steps:

  • Line 9-inch quiche dish or pie plate with crust. Refrigerate. Saute bacon in large skillet over medium-high heat until browned. Reduce heat to medium and add onion, scallions, garlic and pepper. Cook until vegetables are softened, for about 10 minutes. Add artichoke hearts. Cook another 3 minutes. Remove from heat and add parsley, basil, salt, and pepper. Preheat oven to 375 degrees F. Sprinkle Swiss and Parmesan cheese over crust. Top with artichoke mixture. Whisk together eggs, mustard, heavy and light creams. Season with nutmeg. Pour evenly over artichoke minute in crust. Bake until puffed and set, about 45 minutes. Serve warm or at room temperature.

1 large baking potato, thinly sliced
2 tablespoons butter, melted
2/3 cup sun-dried tomato packed in oil, chopped
1 green onion, chopped
1 tablespoon minced garlic
1/3 cup cubed smoked ham
2 cups grated provolone cheese
4 large eggs
1 1/2 cups whipping cream
2 teaspoons italian seasoning
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350°F.
  • Butter a pie pan.
  • Arrange potato slices on bottom of pan. Brush potatoes with melted butter. Bake for 10 minutes (or longer for a crispier crust).
  • For the filling: Layer sun-dried tomatoes, green onion, garlic, ham and cheese on top of potato crust.
  • Whisk together eggs, cream, Italian seasoning, salt and pepper.
  • Pour egg mixture over ingredients in pie pan.
  • Bake for 40 to 50 minutes, or until a toothpick inserted in center comes out clean.
  • Let stand for a few minutes, then slice and serve.

1 cup grated monterey jack cheese
1 (9 inch) pie crusts, partially baked
1/4 cup sun-dried tomato, soaked in boiling water for 5 minutes, drained, dried and chopped (do not use oil-packed tomatoes)
1 (14 ounce) can quartered artichoke hearts, drained
1 tablespoon chopped fresh basil (or 1/2 teaspoon dried basil)
1/4 cup grated parmesan cheese

Steps:

  • In a mixing bowl, whisk the eggs, half-and-half, garlic, salt, and pepper together.
  • Sprinkle grated Monterey Jack cheese over the bottom of the pie shell.

1 cup canned artichoke hearts in water (not brine), drained
3 Tbsp. tahini ((such as Soom Foods brand))
1 Tbsp. fresh lemon juice
1 garlic clove (optional)
1/2 tsp. kosher salt
3 to 4 Tbsp. extra-virgin olive oil
1/4 cup oil-packed sun-dried tomatoes, drained and finely chopped
freshly ground black pepper

Steps:

  • Combine beans, artichokes, tahini, lemon juice, garlic, and salt in a blender or food processor. With blade running, stream in olive oil, and continue blending until mixture is smooth. Remove lid and stir in sun-dried tomatoes and some cracked black pepper (if desired).
  • Pour mixture into a bowl. If desired, garnish with additional chopped sun-dried tomatoes plus a drizzle of the sun-dried tomato oil, fresh mint, pine nuts, and lemon zest. Serve with grilled bread, pita, or crudités.

This healthy pesto quiche with sundried tomatoes, Parmesan, and spinach is a delightfully healthy quiche recipe perfect for a weekend brunch.

1 whole wheat pastry crust (unbaked)
4 large eggs
2 large egg whites
3/4 cup milk
1/4 cup plain Greek yogurt
1/4 cup pesto
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
2 cups baby spinach (roughly chopped)
1/2 cup Parmesan cheese (freshly grated )
1/3 cup dried julienne sundried tomatoes ((not oil-packed) roughly chopped)

Steps:

  • Prepare the pastry crust according to the recipe directions (note: the recipe will yield 2 crusts. Feel free to either half the recipe or freeze the second half for a later time).
  • Preheat the oven to 425 degrees F. Roll the dough into a 12-inch circle, then fit it into a 9-inch pie plate (not deep dish). Trim the crust so it overhangs the plate edge by about 1 inch all the way around, then tuck the edges under at the plate edge and crimp with your fingers or a fork.
  • Prick the bottom of the crust all over with a fork at 1/2-inch intervals, then line the plate with foil or parchment paper. Fill with dry beans, uncooked rice, or pie weights, ensuring that the beans or weights are all the way up against the edges of the pan. Set on a rimmed baking sheet, then bake for 15 minutes. Remove the lining and weights. If the crust has puffed up in spots, gently press it back down with a fork. Bake, uncovered, for 8-10 additional minutes, until the bottom of the crust is lightly golden. Remove from oven and set aside. Reduce the oven temperature to 375 degrees F.
  • Meanwhile, place the sundried tomatoes in a small bowl and cover them with boiling water. Let sit for 5 minutes to rehydrate, then drain and pat dry.
  • In a large bowl whisk together the eggs, egg whites, milk, Greek yogurt, pesto, salt, and pepper. Then, stir in the spinach, Parmesan, and sundried tomatoes.
  • With the pie plate still on the baking sheet, carefully pour the filling into the prebaked crust.
  • Bake until the quiche is puffed and the center is set but still a little jiggly, 40 to 50 minutes. If the crust starts to brown too quickly as the quiche bakes, wrap the edges of the pan with foil to protect it. Let quiche cool on a wire rack for 15 minutes. Slice and serve warm or at room temperature.
