SPINACH ARTICHOKE AND MUSHROOM ALFREDO PIZZA
I fell in love with the alfredo artichoke pizza at Artichoke downtown and wanted to make a less expensive and less rich version at home since I like experimenting with tomato-free pizzas. I like using Recipe #453818 or Recipe #31072 to make little 8" crusts but I made a 12" version of the Sicilian dough with this pizza to have dinner ready for 2 days. I made some alfredo sauce with soymilk, dairy butter, and a packet of Simply Organic alfredo sauce mix and used that along with some fresh mushrooms and canned artichoke pieces that I rinsed. Just use whatever you have on hand or floats your boat, it'll be delicious no matter what! All the following measurements are completely approximate; it's more to give you an idea of what to use on your pizza to get this exquisite flavor that is a different kind of blonde/white pizza.

Steps:
- Spread alfredo sauce all over the pizza crust evenly to your liking.
- Run a bunch of spinach through a food processor to get a nice chopped consistency, about 2-3 cups worth, until you have enough to layer all the spinach over the alfredo sauce completely covering the pizza.
- Sprinkle a small amount of fresh parmesan cheese over the spinach layer.
- Top with artichokes and mushrooms all over.
- Sprinkle mozzarella cheese all over the mushrooms and artichokes.
- Top with fresh or dried oregano all over the entire pizza.
- Bake at 375F for 10-15 minutes or until the cheese has lightly browned.

- Preheat oven to 425°.
- In a medium saucepan over low heat, stir together the cream, butter and cream cheese until fully melted.
- Stir in the parmesan cheese and garlic powder and pepper. Continue to cook and stir for 15 minutes. Allow to cool slightly.
- Spread the sauce over the pizza crust. You might have some left over for dipping depending on how saucy you like your pizza.
- Sprinkle sauce with chopped spinach, mozzarella, artichoke hearts and parmesan cheese. Add any additional toppings you desire, like bacon, mushroom, spices, etc.
- Bake for 15 minutes or until cheese begins to brown. Let sit 5 minutes before slicing.

EASY ALFREDO & ARTICHOKE FETTUCCINE
My husband loves fettucine alfredo and I love artichokes, but I have very little time to make it from scratch. This is great to make if you have leftover chicken to serve it with. Also, you can buy all of the ingredients in advance and make it when you have time.

- Cook fetticine in boiling water 2 tablespoons olive oil.
- Meanwhile, drain artichokes hearts in a large colander and leave to drain (do not rinse).
- Warm up alfredo sauce in a large saucepan - add garlic and lemon pepper and 1 teaspoon olive oil.
- When alfredo sauce is cooked, drain over artichoke hearts - this will warm and cook artichoke hearts perfectly.
- Slightly rinse noodles and drain thoroughly.
- Add noodles and artichokes to the alfredo sauce and mix completely.
- Warm on stove for about 15 minutes.
- Optional: For added flavor and taste, add 1-2 cups chopped and cooked chicken to the mix.
- Serve warm.
PIZZA WITH SHRIMP, BACON AND ARTICHOKE HEARTS
Homemade pizza is meant to be imperfect, Sam Sifton argued in 2009, in bringing this recipe to The Times. "Your pizza may look a little funny," he wrote. "It may be ovoid, crackly in parts. It may have soft spots. But it will still be pizza, and it will still be delicious, and in these parlous times, it is cheap to boot." But, still, it's worth making - and topping as you please. Do as Chris Schlesinger, formerly of the East Coast Grill in Cambridge, Mass., does, and add shrimp and artichoke hearts to a flatbread. This recipe takes that idea one step further, studding the flatbreads with Asiago cheese for richness and depth. It may not be a perfect pie, but who needs perfection when you have deliciousness?

- At least 45 minutes before cooking, preheat the oven and pizza stone to 550 degrees.
- Melt the butter in a small sauté pan over high heat until it foams. Add the shrimp and garlic, season with salt and cook for about a minute, shaking the pan, until the shrimp just start to color. Transfer to a bowl.
- Place the bacon in the pan and set over high heat. Cook, stirring occasionally, until brown and crispy. Using a slotted spoon, transfer the bacon to a small bowl.
- Place the dough on a heavily floured surface and stretch and pull, using your hands or a rolling pin, into about a 14-inch round. Place on a lightly floured pizza peel or rimless baking sheet. Cover with the toppings, being careful not to press on the dough and weigh it down: the bacon first, then the artichoke hearts, the shrimp, the cheese and finally the oregano, leaving roughly a 1/2-inch border. Shake the pizza peel slightly to make sure the dough is not sticking. (Gently lift any sections that are sticking and sprinkle the peel with flour.) Slide the pizza directly onto the baking stone in one quick, forward-and-back motion. Cook until the crust has browned on the bottom and the top is bubbling and browning in spots, about 7 minutes. Drizzle the pie with a little olive oil and some pepper. Serve hot.
