PESTO PIZZA WITH FETA AND ARTICHOKES

Pesto Pizza with Feta and Artichokes image

Provided by Eddie Jackson

Categories     main-dish

Time 2h50m

Yield 6 to 8 servings

Number Of Ingredients 17

2 teaspoons sugar
1 packet (2 1/4 teaspoons) active dry yeast
3 tablespoons extra-virgin olive oil, plus more for drizzling
4 cups all-purpose flour, plus more as needed
1 1/2 teaspoons kosher salt
3 cups loosely packed fresh basil leaves
1/4 cup pine nuts
2 cloves garlic, crushed and peeled
6 cups loosely packed baby arugula
5 tablespoons extra-virgin olive oil, plus more for brushing
1/2 cup grated Parmesan
Kosher salt and freshly ground black pepper
4 ounces bacon or pancetta, chopped
1 1/2 cups shredded low-moisture mozzarella
1 cup crumbled feta
1 cup sliced marinated artichoke hearts
1/4 cup pickled jalapeno slices plus 1 tablespoon brine from the jar

Steps:

  • For the dough: Mix the sugar and yeast in 1 1/2 cups warm water (100 to 110 degrees F).
  • Let sit until foamy, 3 to 5 minutes.
  • Stir in the olive oil. In a mixer fitted with the paddle attachment, combine the yeast mixture with the flour and salt and mix on low until smooth.
  • Switch to the dough hook and knead on medium, adding a little more flour or water if needed, until the dough forms a loose, sticky ball around the hook. Increase the speed to medium-high and knead until the dough is soft, smooth and springy, 2 to 3 minutes.
  • Put the dough in a large bowl, drizzle with olive oil and turn to coat. Cover with plastic wrap and let rise until doubled in size, about 1 1/2 hours.
  • For the topping: Meanwhile, in a food processor, combine the basil, pine nuts, garlic and 3 cups of the arugula. Process to make a chunky paste. Add 1/4 cup olive oil and process until smooth. Add the Parmesan and pulse just until incorporated. Season lightly with salt and pepper.
  • In a medium skillet, cook the bacon until crisp. Drain on paper towels.
  • When the dough has risen, preheat the oven to 500 degrees F with a baking stone on the bottom rack.
  • Punch down the dough. Brush an 18-by-13-inch rimmed half-sheet pan liberally with olive oil. Transfer the dough to the pan and press it all the way into the corners (it helps to cover the dough with a sheet of plastic wrap while pressing so the dough doesn't stick to your fingers).
  • Bake on the preheated stone until the dough has puffed and just begins to color, 8 to 10 minutes.
  • Remove the dough from the oven, loosen from the baking sheet with a metal spatula and brush lightly with olive oil. (The crust can be baked ahead to this point and topped and finished in the oven later, if desired.)
  • Spread the pesto on the dough almost to the edges. Top with the mozzarella, feta, artichokes, cooked bacon and jalapeno slices.
  • Bake on the top rack until the cheese is browned and crusty, about 8 minutes more.
  • In a large bowl, toss the remaining 3 cups arugula with the remaining tablespoon olive oil and the jalapeno brine. Season with salt and pepper and scatter over the pizza. Cut into squares to serve.

MEDITERRANEAN PASTA SALAD

Mediterranean Pasta Salad image

A simple Mediterranean pasta salad loaded with fresh arugula, sun-dried tomatoes, marinated artichoke hearts, pine nuts, kalamata olives, basil pesto and so much more! It's a copy-cat recipe for Cafe Express's Pasta Amore and let me just say it's actually BETTER!

Provided by Marzia

Categories     30 Minute Meals

Time 25m

Number Of Ingredients 14

12 ounces pasta (any small shape will do, I like penne)
1-12 ounce jar marinated artichoke hearts, drained and roughly chopped
½ cup sun-dried tomatoes packed in oil, drained (reserve 2 tablespoons of oil)
½ cup kalamata olives, chopped
3 tablespoons capers, rinsed
¼ cup EACH sliced scallions AND chopped parsley
1 cup packed fresh arugula
⅓ cup parmesan cheese
3 tablespoon pine nuts
3 tablespoons pesto (homemade
⅓ cup olive oil
2 tablespoons of reserved sun-dried tomato oil
1 tablespoon lemon juice
salt and pepper to taste

Steps:

  • SALAD: Cook the pasta according to package directions until al dente. Rinse and drain the pasta and allow for it to cool to room temperature.
  • In a large bowl combine the prepared pasta, chopped artichoke hearts, sun-dried tomatoes, olives, capers, scallions, and parsley. Toss to combine. At this point, you can store the pasta salad in the refrigerator until ready to serve if you want to serve it cold.
  • DRESSING: In a small bowl, mix together the pesto, olive oil, sun-dried tomato oil, lemon juice, salt and pepper. Stir to combine. The dressing can be refrigerated until you're ready to serve the salad.
  • ASSEMBLY: When you're ready to serve, add the arugula, parmesan cheese, and pine nuts into the salad and toss to combine. Dress with the prepared dressing and taste test for seasonings. Adjust to preference.

SPAGHETTI WITH ARTICHOKES & PESTO

Spaghetti with artichokes & pesto image

Pesto, pine nuts, Parmesan and artichokes lift this storecupboard supper a little higher

Provided by Sara Buenfeld

Categories     Main course, Pasta

Time 20m

Number Of Ingredients 7

350g spaghetti
2 eggs
2 tbsp milk
4 tbsp green pesto
50g parmesan (or vegetarian alternative), grated, plus extra to serve (optional)
390g can artichoke , drained, quartered and dried
50g pine nuts

Steps:

  • Cook the spaghetti following pack instructions. Meanwhile, in a small bowl or jug, beat the eggs together with the milk, pesto, Parmesan, artichokes and seasoning.
  • Heat a small pan on a medium heat and add the pine nuts. Toast for a few mins, shaking the pan occasionally, until they are pale golden. Keep your eye on them as they can catch and burn quickly.
  • Once the pasta is cooked, drain in a colander and tip back into the pan. Put the pan onto a low heat and pour over the egg mixture, tossing together to coat all of the pasta in the sauce - take care not to heat it for too long or it will start to scramble.
  • Toss through the toasted pine nuts and serve with extra Parmesan at the table, if you like.

ARTICHOKE LEMON PESTO

ARTICHOKE LEMON PESTO image

Provided by bella | ful-filled

Categories     Condiment

Time 10m

Number Of Ingredients 9

12 oz jar of marinated artichoke hearts, drained (don't throw away the marinade, it's great on salads, etc)
3 cloves of garlic, sliced
a handful of parsley leaves (about 1 cup, loosely filled)
juice & zest of 1 large lemon (use 2 lemons if smaller)
1 cup finely grated hard Italian cheese (I use Parmigiano Reggiano)
1/2 cup sliced almonds or pine nuts, toasted (pistachios or pumpkin seeds will work too)
salt and pepper, to taste
1/2 tsp red crushed pepper (optional)
at least 3/4 cup extra virgin olive oil (I used Monini Tuscan IGP)

Steps:

  • To the base of a food processor, add the artichoke hearts, parsley leaves, garlic, the zest & juice of one lemon, nuts, cheese & chili flakes if using.
  • Start the food processor. Drizzle in the olive oil while the machine is running. It will take at least 3/4 cup - 1 cup of olive oil to get a nice smooth pesto
  • Taste and add salt, pepper, and more lemon juice if necessary.
  • Store in a clean jar and refrigerate until needed. You can also freeze the pesto, by storing it in an airtight plastic container.

Here is a delicious and very simple pesto recipe by Gwyneth Paltrow. It's great as a spread for good bread or crackers! I really love this quick and easy pesto. It's a winner!

Provided by LifeIsGood

Categories     Spreads

Time 10m

Yield 4 serving(s)

Number Of Ingredients 8

1 cup artichoke heart, cooked (canned would be fine, and roughly chopped)
1/8 cup raw pine nuts
1/4 cup extra virgin olive oil
1 small garlic clove, peeled and minced
1/3 cup parmesan cheese, finely grated
coarse salt, a pinch (just a little since the parmesan is salty, you can always add more salt when finished)

Steps:

  • Pulse the first 7 ingredients together in a food processor. Stir in the tarragon and season to taste with more salt and pepper, if needed.

BURICOTTA WITH BRAISED ARTICHOKES, PINE NUTS, CURRANTS, AND MINT PESTO

Buricotta with Braised Artichokes, Pine Nuts, Currants, and Mint Pesto image

Categories     Bread     Nut     Side     Vegetarian     Currant     Mint     Pine Nut     Artichoke     Kosher

Yield makes 12 crostini

Number Of Ingredients 16

For the Mint Pesto
1 tablespoon toasted pine nuts (page 63)
1 garlic clove, grated or minced if you are making the pesto using a mortar and pestle
1/2 teaspoon kosher salt, plus more to taste
1/2 cup extra-virgin olive oil, plus more as needed
1/2 cup whole fresh Italian parsley leaves
1 1/2 cups whole fresh mint leaves
1 tablespoon freshly grated Parmigiano-Reggiano
3/4 teaspoon fresh lemon juice, plus more to taste
For Assembling the Crostini
12 Garlic Crostini (page 46)
1 pound buricotta, sliced into 3/4-inch disks, or 1 1/2 cups fresh ricotta
Kosher salt
12 Braised Artichokes (page 70)
1/4 cup Currant and Pine Nut Relish (page 71)
6 teaspoons Toasted Bread Crumbs (optional; page 74)

Steps:

  • Combine the pine nuts, garlic, salt, and half of the olive oil in the bowl of a food processor fitted with a metal blade or the jar of a blender. Add the parsley and pulse until it is finely chopped. Turn off the machine and scrape down the sides of the bowl with a rubber spatula. Add the mint, Parmigiano-Reggiano, and the remaining olive oil and purée, stopping as soon as the ingredients form a homogenous paste, and adding more olive oil if necessary to obtain a loose, spoonable pesto. (You want to stop the machine as soon as you achieve the desired consistency, as the blade will heat the garlic and give it a bitter flavor. Also, overprocessing the pesto will incorporate too much air, making the pesto fluffy and too smooth.) Turn the pesto out into a bowl and stir in the lemon juice. Taste for seasoning and add more salt or lemon juice if desired. Use the pesto or transfer it to an airtight container and refrigerate for up to two days-any longer and it will lose its pretty green color and vibrant flavor. Bring the pesto to room temperature, stir to recombine the ingredients, and taste again for seasoning before serving.
  • To assemble, lay the crostini oiled side up on your work surface. If you are using ricotta, place it in a medium bowl and stir vigorously with a spoon to fluff it up. Lay 1 slice of buricotta, or spread 2 tablespoons of ricotta in an uneven layer on each crostino, leaving the edges of the bread visible. Season the buricotta or ricotta with salt and spoon 1 teaspoon of pesto on top. Cut off the long stems from the braised artichokes, leaving 1/2 inch of stem on each and reserving the stems to snack on. Open up the artichokes like a flower, and set 1 artichoke on top of each crostino, sticking the stems into the buricotta like stakes to secure them. Season the artichokes with salt and spoon 1 teaspoon of relish over each artichoke. Sprinkle each crostino with 1/2 teaspoon of the bread crumbs if you are using them, and serve.
  • Suggested Wine Pairing
  • Malvasia di Cagliari Secco (Sardinia)
