This is from a free brochure I picked up recently in the supermarket and is delicious-I did not have parmesan on hand so used WW grated cheddar and it was still fantastic.

2 (340 g) cans artichokes, drained
1/2 cup basil leaves, add more if you love basil
1/2 cup sour cream, can be lite
3/4 cup grated parmesan cheese or 3/4 cup other cheese
salt and pepper

Steps:

  • Process everything till smooth - you can leave it a bit chunky if you prefer.
  • Serve with pita bread.

Dipping Sauce for Artichokes image

A boyfriend's mother taught me this great dipping sauce for artichokes and asparagus. It's somewhat like aioli. Replace dried basil for fresh, and garlic salt for the garlic. If you do use dried basil, cut the original amount in half. Use low-fat mayonnaise if you like.

¼ cup mayonnaise
½ clove garlic, finely chopped
1 ½ tablespoons lemon juice
1 ½ teaspoons chopped fresh basil
1 teaspoon Worcestershire sauce

Steps:

  • Mix the mayonnaise and garlic together in a small bowl. Add the lemon juice and basil; whisk until thoroughly combined. Beat the Worcestershire sauce into the mixture. Serve immediately, or chill until serving.

This addictive dip is from the July '09 Cooking Light issue. I served this for dipping with pita chips and also with bread cubes. It makes a WONDERFUL sandwich spread - we put it on a turkey sandwich. The original recipe didn't call for the olive oil; I decided to add it since it only adds about 1 fat gram per 2 tablespoon serving. So you can certainly leave it out if you're watching fat grams.

1 cup lightly packed fresh basil leaf (don't use dried)
3/4 cup grated parmesan cheese or 3/4 cup romano cheese
3/4 cup reduced-fat sour cream

1 garlic clove, minced
1/4 teaspoon pepper
1 tablespoon extra virgin olive oil
extra basil (to garnish)

Steps:

  • Place all ingredients in food processor or blender and process until smooth.
  • Serve with pita chips, bagel crisps, or bread cubes. Or use instead of mayonnaise on a turkey sandwich.

4 large artichokes
1/4 cup olive oil
lemon juice
salt (to taste)

Steps:

  • Prepare the grill for direct and high heat.
  • Cut the artichokes into halves and brush with oil. Sprinkle all over with salt.
  • Place the seasoned artichoke halves on the grill, cut-side-down.
  • Cover and grill for 5-10 minutes until they're cooked through.
  • Transfer to a serving plate, and sprinkle the cut side with lemon juice. Serve with your favorite dip and enjoy!

Grilled Artichokes with Lemon-Basil Dipping Sauce image

Succulent grilled artichokes dipped in a creamy lemon-basil dipping sauce. Perfect appetizer or side dish.

1/3 cup olive oil
2 Fresh Basil Leaves (Julienned)
2 Cloves garlic (Smashed)
2 Artichokes (Halved - fuzz removed)
1 Lemon (Halved)
1 tsp Lemon Pepper
1/2 cup Full Fat Mayonnaise
1 tbsp ketchup
1/2 tsp OPTIONAL: Sriracha rooster sauce

Steps:

  • Bring a large pot of water to a boil, over high heat.
  • In a small mixing bowl, combine the olive oil, basil and garlic. Heat in the microwave for 20 seconds. Remove and stir. Repeat for another 20 seconds. Set aside.
  • Rub half the lemon over the entire artichoke (inside and out). Place cut side down in the boiling water for 25 minutes to steam.
  • In a large bowl, combine the mayonnaise, ketchup, 1 tablespoon lemon juice, 1 tablespoon olive oil mixture and Sriracha Roster Sauce (optional) and stir to combine. Place in the microwave for 15 seconds and stir. Repeat for another 15 seconds. Set aside.
  • After steaming, rub 1 teaspoon of olive oil mixture over the entire artichoke. Season with lemon pepper.
  • Turn the grill on high heat. Place the artichokes, cut side down, on the grill for 10-12 minutes.
  • Remove and enjoy immediately!
