Time 40m

Yield 4-6 serving(s)

1 fresh lemon rind (use a vegetable peeler for big pieces for easier removal)
cinnamon

Steps:

  • Bring water to a boil in medium saucepan.
  • Add rice and cover, simmering for 20 minutes.
  • Add milk, sugar and lemon rind, stirring constantly until thickened to oatmeal consistency, about 15-20 minutes.

PORTUGUESE SWEET RICE (ARROZ DOCE)

Portuguese Sweet Rice (Arroz Doce) image

Sweet Rice is as individual as the cooks who make them. I've tasted sweet rice by different cooks, but I've never tried one that came close to the creamyness, and sweet, lemony flavour of my grandma's rice. This is her recipe. It takes about 30-45 minutes to make, but the results are well worth it.

Categories     Dessert

Time 30m

Yield 1 casserole dish

Number Of Ingredients 8

2 cups water
1 -2 lemon
1 teaspoon salt
1 teaspoon margarine
1 cup rice
4 cups milk (I use 2%)
1 1/2 cups sugar
3 egg yolks

Steps:

  • Turn stove to maximum. In a large pot add water. Peel most of the rind from one lemon and add the peels to the pot. Set lemon aside and turn stove down to medium.
  • Add salt and margarine.
  • When water is boiling, add rice. Stir constantly.
  • When most of the liquid boils away, add 1/2 cup of milk. Stir. Repeat this step until all the milk is added.
  • Remove rind from pot.
  • Grate the rest of the lemon zest and add it. Add sugar. Remove pot from element.
  • Slowly stir in egg yolks. (add a little bit of milk to the yolks first).
  • Return pot to the element just until the rice boils. Stir constantly to avoid burning!
  • Pour into casserole dish and allow to cool slightly before covering.
  • Just before serving, sprinkle cinnamon on top.
  • Tip: for a stronger lemon flavour, use two lemons. Peel most of the rind from one for the cooking process, and grate most of the zest from a second lemon to add at the end. For a weaker flavour, use only one lemon and make it stretch for both.

PORTUGUESE RICE PUDDING {ARROZ DOCE}

Portuguese Rice Pudding {Arroz Doce} image

Portuguese Rice Pudding, Arroz Doce, is a traditional Portuguese Christmas dessert recipe made with rice, sugar, milk, eggs, cinnamon, and lemon peel.

Provided by Kat Jeter & Melinda Caldwell

Categories     Dessert

Time 40m

Number Of Ingredients 10

1 cup Short Grain White Rice (uncooked)
2 cups Water
2 cups Whole Milk
1 cup Sugar
2 Egg yolks
1 Lemon rind
1 tablespoon Butter
1 teaspoon Vanilla
Pinch of salt
Cinnamon (optional)

Steps:

  • Cook rice according to the package instructions.
  • In a small pot heat your milk, stopping just before it begins to simmer.
  • In a small bowl whisk the eggs yolks and then temper them by very slowly pouring just a bit of the hot milk into the eggs and whisking quickly so that they do not cook. Add the tempered eggs to the hot milk whisking constantly.
  • Add the sugar, butter, vanilla, and lemon rinds to the milk and whisk together.
  • Pour the milk mixture into the cooked rice and stir together.
  • Bring the mixture to a boil and then reduce to a simmer. Cover and cook for 15-20 minutes until you reach an oatmeal consistency.
  • Once the pudding has reached the desired texture remove the lemon peels and divide the rice pudding into dishes, or pour into one large dish, and let cool.
  • Once the pudding has cooled to room temperature use a stencil and ground cinnamon to create a design on top. This is optional. If you would like to save time you can sprinkle a bit of cinnamon over the top of your rice pudding.
  • Serve immediately or store in refrigerator until needed

This one comes from my aunt Lilia. Thanks Tia! xoxo

If you need a Dutch oven, this one made by Lodge can be found on Amazon. I really like Lodge cast iron skillets, they're heavy and long lasting. Their Dutch ovens are equally terrific and come in a variety of colors.
These serving platters from Amazon are perfect for spreading out your rice pudding like I've done in the picture above. It's a set of three, they're oven safe, You can use them for turkey or appetizers or whatever.

Steps:

  • * Make sure have you rice rinsed and soaking in water for about an hour before you begin making the pudding. In a medium saucepan bring to a boil the rice, water, butter and lemon peels. Then lower the heat and continue to simmer until all the water has been completely absorbed. Making sure to stir occasionally so that the rice does not stick to the pan. Then remove the lemon peels. In a separate medium saucepan, heat the milk until almost at a boil and pour the rice, add the sugar and stir everything together and bring everything to a boil again. Then lower the heat and constantly stir until the rice has absorbed all the liquid. This takes about 30 to 45 minutes or until the rice has thickened to the point that if you take your spoon, you can separate the rice long enough to see the bottom of the pan. At this time you will need to sample the rice and see if it has cooked. If it hasn't you will need to add another 1 cup of very hot milk to it and stir again until it has been completely absorbed again.
  • In a separate bowl you'll need to separate your eggs, since you will only be using the egg yokes. Beat the egg yokes and once the rice is cooked, you will add a couple of heaping spoonful's of rice to the egg yokes, one spoonful at a time. Then you will incorporate the egg mixture back into the rice pan and cook for another 5-10 minutes so that the eggs can cook.• It is very important to follow these steps and not jut put the egg yokes into the rice. If you do the eggs will cook and you will have scrabbled eggs.Last step is to pour rice pudding in serving dishes and decorate with cinnamon.

CREAMY PORTUGUESE RICE PUDDING (ARROZ DOCE)

Creamy Portuguese Rice Pudding (Arroz Doce) image

Creamy Portuguese rice pudding isn't your average rice pudding. Learn how to make this fun and delicious sweet rice dessert.

Provided by Wendy Ponte

Categories     Dessert

Time 1h15m

Yield 4

Number Of Ingredients 7

2 1/4 cups water
1/2 teaspoon salt
Peel of 1 lemon (cut into long strips, avoid as much of the white pith as possible)
1 cup rice (short-grain, arborio is a good choice)
2 cups milk (hot, you can substitute some of this with cream, if you like, for a richer consistency and flavor)
Garnish: ground cinnamon
Garnish: paper-thin slices of lemon

Steps:

  • Place the water, salt, and lemon peel into a medium pan and bring to a boil. Then reduce the heat to low and allow the water to simmer with a lid on for about 15 minutes.
  • Remove the lemon peel from the water with a slotted spoon and discard.
  • Add the rice to the water and bring it back up to a boil. Then reduce it to a simmer and allow the rice to absorb all of the water (about 10 minutes).
  • Now slowly add the hot milk, a bit at a time, to the rice mixture. After each addition (of about 1/2 cup), allow the liquid to absorb before adding the next batch of milk. Stir frequently and keep the heat low, so that the rice does not burn at the bottom of the pan. This should take about 25 to 30 minutes.
  • Pour the rice into a serving dish. Sprinkle the top with the cinnamon and the lemon slice if you like.
  • Chill the rice and then serve.

  • To a warm pan add butter and rice. Stir until butter melts and coats the grains of rice. Add in water and salt. Stir. Allow rice to come to a boil on the stove, then place the lid on the pot and move it to the preheated oven. Cook the rice for the time indicate on the rice package, about 15-20 minutes, or until all the water has been absorbed.
  • After the rice has finished cooking in the oven, place it back on the stove over low heat. Add in milk, sugar, vanilla, and orange and lemon zest. Optionally, add a cinnamon stick. Stirring every couple of minutes to prevent rice from sticking to the bottom, cook for about 15-20 minutes, until it looks like a creamy oatmeal. Taste and add more sugar if desired. Test the tenderness of the rice. If you think it needs to be cooked more, add a splash of milk and cook to desired texture.
  • To a bowl add the egg yolks and a tablespoon of milk or water. Whisk until well combined. Then to the bowl add a tablespoon or two of the hot rice mixture. Mix until combined. This will temper the eggs so they do not scramble when added into the rice pot.

  • In a medium saucepan over medium-high heat, bring the water and a pinch of salt to a boil. Stir in the rice, reduce the heat to low, and gently simmer, uncovered and stirring occasionally, until the water is absorbed, 10 to 15 minutes. The rice won’t yet be tender. That’s okay. If the rice starts starts to stick, add a little more water.
  • While the rice is cooking, in a separate saucepan over medium-low heat, warm the milk, sugar, strips of citrus zest, and cinnamon stick for 10 minutes. (If you’d like, you can tie the zest and cinnamon stick in a square of cheesecloth or tuck them in a teaball for ease of removal later.) Remove the pan from the heat. If you’d like the citrus and spice flavors to be prominent, let them remain in the mixture as it sits, covered and off the heat, for several minutes to infuse the milk. Otherwise immediately strain the milk and discard the solids.
  • Gradually ladle some of the strained warm milk mixture into the pan of rice, stirring well after each addition as you would when making risotto. Continue to cook the rice mixture over low heat, gradually adding a ladleful of milk and stirring until it’s absorbed before adding more milk, until thick and creamy, 20 to 35 minutes.
  • In a small bowl, lightly beat the egg yolks and cream, if using. Pour a ladle full of the hot rice mixture into the yolks and stir until combined. Then slowly stir the yolk-rice mixture into the pudding. Continue to cook the rice pudding, stirring frequently so the rice doesn’t scorch, until it thickens, which will happen in just a couple of minutes. Remove from the heat. The rice pudding will thicken even more as it cools and will especially thicken if you refrigerate it overnight. If a thinner consistency is desired, add a little more milk.
