- Calienta el aderezo en una sartén profunda grande o en una olla pesada tipo Dutch oven a fuego medio-alto. Añade el pollo; cocínalo, dándole vuelta de vez en cuando, durante 10 minutos o hasta que esté dorado de forma pareja. Retira el pollo de la sartén; tápalo para mantenerlo caliente.
- Agrega la cebolla, los pimientos y el jamón a la sartén; cocínalos y revuelve durante 5 minutos o hasta que los vegetales estén tiernos y crujientes. Incorpora los frijoles, la salsa de tomate y el jalapeño y revuelve. Agrega el pollo.
- Haz hervir el conjunto. Reduce el fuego a bajo; pon la tapa. Mantén un hervor suave durante 25 minutos o hasta que el pollo esté bien cocido (170ºF). Sírvelo sobre el arroz.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat vegetable oil in a Dutch oven over medium heat; cook and stir chicken pieces until browned, 5 to 10 minutes. Remove chicken with a slotted spoon and place on a plate. Cook and stir onion, green bell pepper, minced garlic, and whole garlic cloves in the same Dutch oven until onion is softened, about 5 minutes.
- Return chicken to the onion mixture. Add tomatoes, rice, salt, oregano, black pepper, and bay leaf. Pour in enough chicken stock to cover all the ingredients.

- Place chicken, skin side down, in skillet.
- Brown on med-hi heat about 7 minutes on each side or until golden brown.

- -Un paso previo antes de iniciar la preparación, consiste en lavar muy bien los frijoles y dejarlos en un bol con suficiente agua. Dejamos en remojo y cambiamos de agua cada que sea necesario.
- -Ya teniendo los frijoles en remojo por varias horas, los escurrimos y colocamos en una olla, vertemos suficiente agua y los llevamos a la cocina.
- -Cocinamos los frijoles hasta notar que se tornen blandos.
- -Mientras tanto se cocinan los frijoles, pelamos y picamos finamente los dientes de ajo.
- -Por otro lado, picamos en pequeños cubitos las cebollas y los ajíes rojos y naranjas.
- -Ahora, cortamos el tocino ahumado en forma de cubos y reservamos.
- -Una vez se hayan ablandado los frijoles, los retiramos de la cocina y conservamos el caldo.
- -Llevamos nuevamente el caldo de los frijoles a la cocina y esta vez adicionaremos el arroz, dejamos cocinar hasta que se encuentren en su punto.
- -Es momento de dorar el tocino, por lo que colocamos una sartén en la cocina y agregamos el tocino ahumado troceado.
- -Dejamos dorar muy bien el tocino y lo retiramos de la sartén.
- -Conservamos la sartén en la cocina y con la misma grasa destilada por el tocino, sofreímos las cebollas, los dientes de ajo y los ajíes troceados.
- -Sofreímos por un par de minutos hasta que la cebolla se torne transparente, en este punto, incorporamos una cucharada de salsa de tomate, vinagre y sal al gusto.
- -Cocinamos por 5 minutos e incorporamos el tocino y los frijoles.
- -Adicionamos el arroz cocido, corregimos de sal y pimienta y retiramos del fuego.
