EASY PARISIAN POTATOES



Easy Parisian Potatoes image

Our easy Parisian potatoes recipe features potato balls scooped out with a melon baller and baked in butter or duck fat until golden and crispy.

3 pounds waxy potatoes , washed and ​peeled
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 tablespoons canola oil
3 tablespoons unsalted butter

Steps:

  • Gather the ingredients.
  • Using a melon baller, scoop out as many rounds from the raw potatoes as you can and place them in a large saucepan filled with cold water.
  • Salt the water, bring it to a boil, and then cook the potatoes for 4 minutes. Drain well and set them aside for a moment.
  • Preheat the oven to 425 F. Melt the oil and butter, or duck fat, in a large ovenproof skillet set over medium-low heat.
  • Add the blanched potato rounds to the pan and gently toss them so they are evenly coated in the fat. Sprinkle salt and pepper over the potatoes and then roast them, stirring occasionally, in the heated oven for 25 to 30 minutes.
  • The Parisian potatoes are done when they turn golden brown. Serve immediately as a side dish with steak, chicken, or seafood.

These Mexican Crispy Roasted Potatoes seasoned with chili powder, garlic, sea salt and Parmesan cheese are baked, not fried and are the perfect side to weekday meals. (gluten free, vegetarian)

1 1/2 pounds petite red potatoes, (washed and quartered)
2 tablespoons olive oil
1 1/2 teaspoons salt
1/2 teaspoon ancho chili powder
1/2 teaspoon dried oregano
1/4 teaspoon coriander
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1 pinch cayenne pepper
1/2 cup freshly grated Parmesan cheese
4 tablespoons finely chopped cilantro

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper or spray with non stick cooking spray.
  • In a large bowl, add the olive oil, salt, chili powder, oregano, coriander, garlic powder, black pepper and cayenne. Toss together until potatoes are fully coated with spices. Transfer to baking sheet.Be careful not to overcrowd the potatoes. They should have plenty of room to breathe. If they don't, divide them onto two baking sheets.
  • Sprinkle potatoes with Parmesan cheese and bake for 20 minutes. Remove from oven, flip over the potatoes and bake for another 20 minutes, until crispy.
  • Sprinkle potatoes with cilantro, more salt if desired and serve.

6 cups chopped sweet onions
1/4 cup olive oil
1/3 cup plus 1/2 cup butter, cubed, divided
1 tablespoon sugar
4 pounds potatoes, peeled and cubed
4 cans (14-1/2 ounces each) chicken broth or 8 cups water plus 8 teaspoons chicken bouillon granules
3 cups sour cream, divided
1 cup heavy whipping cream
4 large eggs, beaten
1 teaspoon dill weed

Steps:

  • In a large skillet, saute onions in oil and 1/3 cup butter until softened. Stir in sugar. Reduce heat to medium-low; cook, stirring occasionally, for 40 minutes or until deep golden brown., Meanwhile, place potatoes in a large saucepan and cover with broth. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain potatoes; transfer to a large bowl. Add 1 cup sour cream, the cream, eggs, dill and remaining butter. Beat until mashed., Spread half of potatoes into a greased 13-in. x 9-in. baking dish; layer with onions and remaining potatoes. Gently spread remaining sour cream over the top. Bake, uncovered, at 350° for 30-35 minutes or until a thermometer reads 160°.

The recipe calls for 'old' potatoes - I find for most part I never have old potatoes - if I do not have large potatoes I eyeball an equivalent. Weighing - 11/2 pounds of potatoes takes about five what I call regular sized potatoes. Serving size is a quesstimate as it depends what you are serving and how big the helping!

1 1/2 lbs large old potatoes
2 large onions (cut in chunks)
1/4 cup vegetable oil
3 tablespoons tomato paste (recipe suggests catsup as a sub)
1/2 cup water
1 teaspoon paprika
1 teaspoon salt (or to taste)
pepper
1/2 cup finely chopped fresh parsley (I add the parsley) (optional)

Steps:

  • Wash and peel potatoes, cut potatoes and onions in chunks.
  • In a large bowl mix together the oil, tomato paste, water, salt, paprika, combine with potatoes.
  • Add onions, pepper to taste, parsley and toss to mix.
  • Bake in a covered dish in a preheated 325 degree oven for about 45 minutes or until potatoes are soft.

  • I cooked it for somewhat longer than this because the males in the family vanished to watch some field hockey later afternoon and were a bit delayed coming home. As long as you do not use mush spuds, I would say this dish is fairly forgiving of being left to fend for itself.
  • We had it with some small lamb roasts (these are cut from the rump and weight about 7 ounces) that I patted dry, then rubbed with a mix of herbs and spices and barbecued until medium rare then sliced thinly. We also had some al dente whole baby green beans.
