ARMENIAN TAHINI BREAD
This sweet yeast bread is flaky yet chewy, with aromas of sesame and cinnamon.

Steps:
- Stir together yeast, 1 tsp. of the sugar, and 1/2 cup warm water in a small bowl; set aside to let rest until frothy, 8-10 minutes.
- Stir together flour, cinnamon, and salt in a large bowl, then add yeast mixture, 2 tbsp. of the oil, and 1 cup water; stir into a rough dough. Turn dough out onto a lightly floured surface; knead until smooth and elastic, 8-10 minutes.
- Place dough into a large bowl greased with remaining 1 tbsp. oil. Cover with plastic wrap; let sit in a warm spot until doubled in size, about 2 hours.
- Preheat oven to 350F
- Divide dough into 2 balls, cover with a towel, and let rest for 10 minutes.
- Working on a lightly floured surface with 1 ball at a time, roll dough out into a 25" circle (keep remaining dough covered).
- Gently spread half the tahini evenly over the dough and sprinkle with 1 1⁄2 cups of the sugar.
- Roll the circle up end to end to make a rope. Gently roll and stretch the rope to double the length, then cut into 6-8 equal pieces. Tightly coil each rope so that it resembles a cinnamon roll, then flatten each with your hand into a dough round on a lightly floured surface. Roll out each round into a 7" circle, then transfer the circles to parchment paper-lined baking sheets, keeping them spaced apart.
- Let rest while you repeat the process with the remaining dough.
- Mist each round of dough generously with water and bake until golden, about 20 minutes. Let cool on baking sheets.

- In a small bowl, sprinkle yeast over lukewarm water. Let sit for a minute, then stir to combine. Let sit until frothy, about 10 minutes.
- In the bowl of a food processor fitted with a dough blade or a large bowl, combine flour, salt, sugar, yeast with water, and olive oil until dough comes together. On a lightly floured surface, knead until smooth and elastic. Lightly grease a large bowl and add the dough, turning to coat. Cover and allow to rest until doubled, about 2 hours.
- Preheat oven to 400˚F. Line 2 baking sheets with parchment or lightly grease. In a small bowl, combine sugar with cinnamon, if using.
- Divide the dough into 2 equal pieces. Cover one half. On a lightly floured surface, roll the other half into a large, thin circle. Spread half of the tahini evenly over the circle. Sprinkle with 1/3rd of the cinnamon sugar. There are two ways to form the dough. One way is to create a hole in the center of the circle. Gently, but tightly, roll and stretch the dough from the center hole towards the outside edges. Cut the rope circle into 4-6 equal pieces. The circle can also be rolled end to end, gently stretched/rolled to increase the length, then cut into 4-6 equal pieces.

- In the bowl of a stand mixer fitted with a paddle attachment, combine the flour, yeast, one-half cup sugar and salt. Add the vegetable oil and mix at a low speed to combine.
- Fill a liquid measuring cup with 1 cup warm water. With the mixer speed on low, start adding the water slowly -- just enough for the dough to come together (we used just shy of 1 cup water), neither too wet nor too dry. Continue to mix at medium-low 2 to 3 minutes until the dough is evenly combined and smooth. Be careful not to overmix. Cover the dough with plastic film and allow to rise until doubled, 2 to 3 hours.
- Heat the oven to 350 degrees (for either a convection oven or regular oven). Divide the dough in half and place one half on a floured work surface. Flatten it gently with the palm of your hand to a general rectangle shape; continue flattening it with a rolling pin until the rectangle is about 18 by 10 inches. Do not worry if the dough bubbles slightly while it is rolled out. Brush 5 to 6 tablespoons of tahini paste all over the rectangle to get a thin layer and then sprinkle 4 tablespoons sugar over the tahini.
- Roll the rectangle up lengthwise and trim the ends. Cut the roll into 1- to 1 1/4 -inch lengths; you will have 12 to 16 pieces. Place each piece between your hands, cut sides against your palms; press to flatten into a disc (they will look like rosettes).
