Categories     Appetizer     Main Course     Snack

Time 35m

Number Of Ingredients 7

4 large jalapeno peppers ((or more as needed))
8 ounces cream cheese
1 teaspoon chili powder
1 teaspoon garlic
Salt and pepper to taste
1 pound ground Italian sausage ((I used hot Italian sausage))
12 slices bacon

Steps:

  • Remove the stem from the jalapeno peppers, then core them out.
  • Mix together the cream cheese, chili powder, garlic, salt and pepper in a small bowl. Stuff each jalapeno with the cream cheese mixture.
  • Form 1/4 of the Italian sausage around the entire outside of the stuffed jalapeno pepper. It will resemble an egg.
  • Next, wrap each with 3 slices of bacon. Be sure to get the bacon wrapped all the way around. You can use toothpicks to affix them, if needed.
  • Heat your grill to medium heat (about 400 degrees F.) and lightly oil the grates.
  • Grill the armadillo eggs for 25-30 minutes, or until the bacon is crispy and the armadillo eggs are cooked through.
  • Serve them up!

ARMADILLO EGGS (STUFFED JALAPENOS)

Armadillo Eggs (stuffed jalapenos) image

These are so yummy. The cheese and bacon are a great compliment to the jalapeno flavor and reduce the heat of the peppers. This is my adaptation of an appetizer I had many years ago.

Time 1h15m

Yield 30 pieces

Number Of Ingredients 5

15 fresh jalapenos
1 (8 ounce) package cream cheese
2 tablespoons minced onions
1/4 teaspoon garlic salt
thin sliced bacon

Steps:

  • Slice jalapenos in half and clean out seeds (be sure to get them all or they will be hot).
  • Mix cheese, onion and garlic salt together and spoon into jalapeno halves.
  • Wrap each with 1/2 strip of bacon.
  • Place on cookie rack placed over a cookie sheet to catch the drippings.
  • Bake at 350 for about 45 minutes or until the bacon is crisp.
  • The thin bacon wraps easier.
  • I just tuck the ends under the bottom.
  • Amazingly, these are not hot if you get all the seeds out.
  • There are never enough of them no matter how many I make because they are so popular.

  • Place one spoonful of cream cheese mixture into each jalapeno half. Cut each jalapeno into two equal pieces.
  • Break off a ball of sausage about 1 1/2-inches in diameter. Flatten sausage into a 1/4-inch thick disc and place stuffed-jalapeno piece in the center. Wrap sausage around jalapneo, pinching sausage closed to completely encase jalapeno. Gentle roll sausage in your hands to create a smooth egg shape. Repeat with remaining sausage and jalapeños.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place smoking wood directly on top of coals. Sprinkle barbecue rub all over armadillo eggs, then place eggs on cool side grill and cover, with top air vent positioned over cool side of grill. Cook until sausage is cooked through and browned all over, about 30 minutes, flipping eggs halfway through. Any eggs not thoroughly browned can be quickly seared on hot side of grill, about 1 minute per side. Transfer to a platter, let rest for 5 to 10 minutes, then serve.

  • In a medium bowl, combine the cream cheese, cheddar cheese, and 1 Tablespoon of the sweet BBQ seasoning.
  • Spoon some of the cream cheese mixture into each of the cored and seeded jalapenos. Use the back of the spoon to press the filling all of the way into the jalapeno.
  • Wrap each jalapeno with 1/6th of the pork sausage. Use your hands to ensure the sausage is covering the entire jalapeno and roll back and forth into an egg shape.
