ARIZONA JUAN TONS (WONTONS)

Steps:
- Cook ground beef, onions in a large skillet until meat is brown and onion is tender.
- Drain off fat and transfer to a large mixing bowl.
- To the beef mixture, add the beans, cheese, picante sauce, chili powder and cumin and mix well.
- Refrigerate the mixture for 1 hour or until well chilled.
- Place won-ton skins with 1 point toward you.
- Spoon a slightly rounded teaspoon of the mixture onto the center of the skin.
- Fold bottom point over and tuck under filling.
- Fold side corners over, forming an envelope.
- Fold over top corner and moisten point with a drop of water to seal.
- Fry in deep hot fat (400 degrees) for about 2 minutes or until golden brown.
- Serve immediately with picante sauce for dipping.
- Left overs may be reheated in a 350 degree oven for 10 minutes.

- Mix pork, cornstarch, sherry, soy, wine, garlic, and ginger in a bowl. Working with 1 wrapper at a time, place 1/2 tbsp filling in center, brush edges with egg, and fold in half, forming a triangle. Overlap opposite corners, brushing with egg to seal together. Repeat with remaining wrappers and pork mixture; set aside.
- Bring a large pot of salted water to boil over high heat; working in batches, cook wontons until firm and cooked through, 5-7 minutes. Using a slotted spoon, transfer to paper towels to drain, and place in a bowl; season with salt and toss with red chile oil and vinegar. Serve additional red chile oil and vinegar on the side, if you like.

- Mix the brown sugar and cinnamon together and set aside.
- Preheat the peanut or vegetable oil in a deep fryer or other pan used for deep frying.
- Wrap a piece of apple and a cube of cheddar cheese in a wonton skin and seal according to the directions on the package.
- Deep fry until golden brown.
- Coat with the brown sugar/cinnamon mixture and serve.

- Heat a frying pan and add the sesame seed oil.
- Once hot, add the sliced scallions.
- Crumble the block of tofu over the frying mixture.
- Pour soysauce over it and mix.
- Let that simmer for 5 minutes while you slice the spinach.
- Remove from heat and stir in the spinach.
- Let this cool before continuing to the next step.
- You want the filling to be cool before assembling the wontons.
- Fry in 1/2 inch of vegetable oil.
- 2 minutes on one side, one minute on the other OR until crispy and golden brown.

- Preheat oven to 350º.
- Blot cooked sausage with paper towels to remove grease and combine with cheeses, olives, peppers and salad dressing.
- Slightly grease mini or regular muffin tins with vegetable oil spray. Press wrappers in tins and spray wrappers with oil.
- Bake 5 minutes or until golden.
- Remove from tins and place on cookie sheets. Fill with sausage mixture. Bake for another 5 to 10 minutes until the cheeses are bubbly.

FRICHIK WONTONS!
I was so excited to find this Frichik recipe! Don't substitute anything else for it or it won't taste the same. Look for Worthington FriChik and McKay's Chicken-Style Seasoning in health food stores or some supermarkets. It comes in a can, and is a tender, juicy, healthful alternative to chicken, made from textured wheat gluten. These wontons take a little extra time, but to me they are worth it! - In food processor, chop well-drained FriChik until very fine. Place in a small mixing bowl.
- In food processor or by hand; finely chop the onion and add to FriChik. Add the grated carrot, chopped water chestnuts, and McKay's Chicken-Style Seasoning. Mix well.
- To assemble: Place wonton square on flat surface and put 1 teaspoon of filling in the center. Brush the edges of the wonton lightly with water. Fold the bottom corner up to meet the top corner, making a triangle, and seal edges. This shape is best for browning the wontons evenly if you are sauteing or baking them. For a facier design, pull the outside corners together and twist slightly.
- To cook: Spray wontons and nonstick skillet with nonstick vegetable spray. Add wontons to skillet and cook on medium-high temperature, turning after 2-3 minutes when wontons are lightly browned and crunchy. Or put wontons sprayed with nonstick spray on cookie sheet also sprayed with nonstick vegetable spray and bake in 450 degree F oven until lightly browned, approximately 10 minutes per side.
