Argentinean Steak with Parsley Sauce: Carne y Chimichurri image

1/4 cup distilled white vinegar
2 jalapenos, roughly chopped
4 cloves garlic
4 bay leaves
1/2 cup freshly chopped Italian parsley
1/2 cup freshly chopped cilantro
1/2 cup freshly chopped oregano
1/3 cup extra-virgin olive oil
Salt and pepper
1 (1 1/2 to 2-pound) flank steak

Steps:

  • Preheat a grill or broiler to high.
  • In a blender, combine vinegar, jalapeno, garlic, and bay leaves puree until smooth. Transfer to a bowl and add the herbs. Whisk in the olive oil and season with salt and pepper. Mix well and set aside.
  • Season the flank steak with olive oil, salt, and pepper and grill/broil the steak for 2 to 3 minutes per side for medium rare. Slice the steak thinly, across the grain on the bias and serve with the chimichurri sauce.

4 garlic cloves (minced)
1-2 red chili peppers (seeded and finely chopped)
3 tablespoons red wine vinegar
1 tablespoon lime juice
½ cup sunflower seed oil
Kosher salt and freshly ground pepper (to taste)

Steps:

  • Combine the parsley, oregano, garlic and chili pepper(s) in a bowl.
  • Add the vinegar, lime juice, sunflower seed oil and a pinch of salt and pepper. Mix until combined.
  • Taste for seasoning and adjust as needed.
  • Serve immediately or, if you can, let it sit for at least 15 minutes before serving for the flavors to meld. If not using right away, refrigerate for up to 3 weeks but bring to room temperature before serving.

4 cloves garlic
1 tsp. kosher salt; more as needed
1 bunch flat-leaf parsley, stemmed and chopped (about 1-1/2 cups, lightly packed)
1 tsp. dried oregano
1 small carrot, finely grated
1/2 tsp. freshly ground black pepper
1/2 tsp. dried red chile flakes
1/2 tsp. grated lemon zest
5 Tbs. white-wine vinegar or distilled white vinegar; more to taste
5 Tbs. cold water; more as needed
1 cup extra-virgin olive oil

Steps:

  • Finely chop the garlic on a cutting board. Sprinkle the salt over it and repeatedly scrape the flat side of the knife over the garlic to mash it to a paste. Scrape the garlic paste into a medium bowl. Add the parsley, oregano, carrot, pepper, chile flakes, and lemon zest and mix. Add the vinegar and water and mix again. Whisk in the oil. Taste and correct the seasonings, adding salt, vinegar, water, or chile flakes: the sauce should be highly seasoned. Chimichurri is delicious over any kind of grilled red meat.

1/2 cup olive oil
2 tablespoons red wine vinegar
1/2 cup finely chopped parsley
3-4 cloves garlic (, finely chopped or minced)
2 small red chilies (, or 1 red chili, deseeded and finely chopped (about 1 tablespoon finely chopped chili))
3/4 teaspoon dried oregano
1 level teaspoon coarse salt
pepper (, to taste (about 1/2 teaspoon))

Steps:

  • Mix all ingredients together in a bowl. Allow to sit for 5-10 minutes to release all of the flavours into the oil before using. Ideally, let it sit for more than 2 hours, if time allows.
  • Chimichurri can be prepared earlier than needed, and refrigerated for 24 hours, if needed.
  • Use to baste meats (chicken or steaks) while grilling or barbecuing. We don't use it as a marinade, but choose to baste our meats with chimichurri instead. However, you can use it as a marinade if you wish. Also, add a couple of tablespoons over your steak to serve.

1 small bunch - Flat-leaf Parsley (Leaf, few stems are ok)
1/2 bunch - Cilantro
2 tbsp - Fresh Oregano (Refer notes)
5 cloves - Garlic
2 - shallots
1/4 cup - Red Wine vinegar
1 tsp - Red chili flacks
1/3 cup - olive oil
Salt to taste

Steps:

  • Combine all herbs, parsley, cilantro, and oregano in a mortar and pestle. Pound them firmly, add shallots and garlic, Continue pounding and vigorously mixing for another minute until it looks chunky.
  • Now add olive oil, vinegar, chili flacks and salt. Mix very well.
  • Let it rest for 10 minutes and refrigerate it for half an hour before spooning over your favorite steak recipe.

40 g parsley (chopped finely)
15 g oregano (chopped finely)
10 g garlic (minced or chopped finely)
40 g olive oil (extra virgin)
40 g sunflower oil
40 g shallots or sweet red onion (finely chopped)
15 g ketchup (Heinz or homemade)
20 g lemon juice (freshly squeezed)
20 g vinegar (red wine )
3 g salt
1 g black pepper (freshly ground )
20 g honey
15 g green chilli (chopped finely)

Steps:

  • Wash all your herbs thoroughly making sure there is no dirt. Shake or spin dry. Next, remove the leaves from the stalks. It's ok to use the tender stems close to the leaves.
  • Chop up the parsley and oregano fairly finely. Here is the correct way to chop cilantro or parsley.Alternatively place it in a blender.
  • Next, finely dice the shallots. Here is how to chop shallots correctly.
  • Chop the garlic and chilli very finely.
  • Place all the chopped ingredients in a bowl.
  • Whisk together the oils, vinegar, lemon juice, ketchup, honey and seasoning.
  • Pour over the chopped ingredients and mix together. Taste and make sure you are happy with the balance. If it needs a bit more acidity, salt or sweetness ajdust accordingly with lemon lemon juice, sugar and salt.
  • Store in a glass jar and seal airtight until ready to use.
