Roll seedless green grapes around with a couple of teaspoons of lime flavor gelatin to make these frosty Healthy Living treats!

1 lb. seedless green grapes
2 Tbsp. (about 1/3 of 3-oz. pkg.) JELL-O Lime Flavor Gelatin

Steps:

  • Rinse grapes; shake gently to remove excess water. Remove and discard stems from grapes.
  • Place grapes in large resealable plastic bag. Add dry gelatin mix; close bag, then shake gently to evenly coat grapes with gelatin mix.
  • Spread grapes onto rimmed baking sheet. Freeze 2 hours or until frozen.

1 (2 liter) bottle carbonated water, chilled

  • In a pitcher, combine lime zest, lime juice and carbonated water. Pour into tall glasses over ice.

I'm a huge fish fan and I'm always looking for new ways to make fish. I couldn't find any recipe that sounded tasty on the net for arctic char so I decided to try my cooking talent and come up with my own recipe. My husband and I couldn't believe how delicious this turned out, all of the flavors balanced perfectly. He wasn't hungry that night and ended up eating majority of the fish, haha! This recipe will not disappoint.

1 (10 ounce) fillet arctic char, rinsed and patted dry
1 pinch sea salt to taste
1 lime, zested and juiced
¼ cup olive oil
¼ cup sherry wine
3 sprigs rosemary, leaves stripped
2 cloves garlic
ground black pepper to taste
1 teaspoon cayenne pepper, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking dish with aluminum foil.
  • Season arctic char with salt, place in prepared baking dish, and sprinkle with lime zest.
  • Combine lime juice, olive oil, sherry, rosemary, and garlic in a food processor; pulse until garlic is finely chopped. Spread mixture over fish and season with black pepper and cayenne pepper.
  • Bake in the preheated oven until fish flakes easily with a fork, 12 to 15 minutes, basting with pan juices about halfway through. When the fish is close to being cooked, switch the oven to broil for remaining two minutes or until browned.

1 (7 ounce) bottle club soda
1 cup crushed ice
1/2 pint lime sherbet
1 (6 ounce) can frozen limeade concentrate

Steps:

  • Place soda, ice, sherbet & limeade in blender.
  • Blend at high speed till mixture is slushy, stopping blender 2-3 times to push mixture down.
  • Pour into frosted tumblers & serve.

This is a wonderful dessert with an unusual ingredient! Adpapted from a recipe by Cooking Light magazine. Prep time is freeze time.

1 (12 ounce) can limeade, thawed
1 (12 ounce) package silken firm tofu, drained
1 1/2 cups water
mint sprig (optional)
grated lime rind (optional)

Steps:

  • Combine the limeade and the tofu in a blender, and blend till smooth. Add water and pulse to combine. Pour the mix into the freezer can of an ice cream freezer, freeze according to instructions. Spoon the mixture into a freezer container, cover and freeze 2 hours or until firm. Or you may put the mixture into a plastic container, freeze for about 2 hours, then process in a food processor until slushy, then freeze again until ready to eat. Take the mix out of the freezer and let it soften just a little before serving.
  • Garnish with the mint and rind, if you like.
  • Yield: 5 servings.
