APRIL FOOLS MEATLOAF CAKE

Steps:
- Preheat oven to 350 degrees. Prepare three round cake pans with parchment paper.
- Mix together the ground chuck, onion, bread crumbs, eggs, worcestershire sauce, milk, salt, and pepper until well blended. Divide equally between the three cake pans and press into a flat layer.
- Bake for 25 to 30 minutes or until the meatloaf reaches an internal temperature of 165 degrees. All to cool slightly. Remove any beef drippings and gently pat dry with paper toweling to help the mashed potatoes to stick.
- Layer the meatloaf with mashed potatoes just like you would ice a cake. Use almond slices to garnish.

- 1. Preheat oven to 350°F. Coat two 8-inch round cake pans with cooking spray. Combine ground beef, bread crumbs, onion, eggs, soup mix, steak sauce, garlic and black pepper in a large bowl; mix until well combined. Divide ground beef mixture in half; press each half gently into a prepared pan.
- 2. Bake meat loaves until centers are no longer pink and instant-read thermometer inserted in the centers registers 170°F, 55-60 minutes. Do not turn off oven.
- 3. Invert 1 meat loaf onto an ovenproof serving plate. Spread 1⁄2 cup mashed potatoes evenly on top. Place second meat loaf on top. Spread remaining potatoes on side and top to resemble a cake.
- 4. Return meat loaf to oven; bake until thoroughly heated, about 10 minutes. Cut flower shapes from bell pepper with mini cookie cutters and place on top of cake, if desired. Cut into wedges to serve.
APRIL FOOL'S MEATLOAF CAKE
A small amount of sausage provides great flavor in this easy-to-assemble meatloaf. If you are in a hurry, a 24-ounce package of refrigerated mashed potatoes will provide plenty of "icing" for this special cake. Yields 8 servings.

- Preheat the oven to 375 degrees F. Lightly grease a 1 1/2 quart round casserole dish and line the bottom with parchment paper. (Any similar size round ovenproof dish may be used.) In a large bowl, combine the breadcrumbs with the milk and eggs. Mix in the green onions, parsley, soy sauce, salt and pepper. Add the ground beef and sausage, and thoroughly combine. (I find this easiest to do with my clean hands.) Place the mixture in the prepared baking dish, patting to make level. Bake the meatloaf until the internal temperature reaches 155 degrees F, or about 50-60 minutes. (Precise cooking time will depend on the depth and width of your baking dish.) Cover loosely with foil, and let stand for 10 minutes. Carefully, pour off any juices from the baking dish, and then run a knife around the sides to loosen. Place a flat serving platter over the casserole dish, and flip to invert the meatloaf onto the platter. (I place two slightly overlapping pieces of foil or parchment paper between the meatloaf and the platter before flipping. These will keep the platter clean while the meatloaf is being iced and can be easily pulled from opposite sides once finished.) Using a spatula, spread the mashed potatoes over the meatloaf as you would icing. If any juices leak onto the platter, dab them with a paper towel. Place the tomatoes, stem ends down, in a ring around top of the "cake" to resemble cherries. Cut the meatloaf into wedges, and serve immediately. If not serving immediately, allow the meatloaf to sit at room temperature for up to two hours. Reheat at 300 degrees for 15-20 minutes or until hot.

- Preheat the oven to 375 °F.
- In a large bowl, mix 2 pounds of ground beef, 3 large eggs, 1 cup of bread crumbs, ⅔ cup of sliced green onions, ½ cup of milk, ½ cup of freshly chopped parsley, 3 cloves of minced garlic, 2 tablespoons of Worcestershire sauce, 1 teaspoon of salt and ¼ teaspoon of pepper until all well combined.
- Transfer the mixture and divide between two 8-inch round cake pans, spreading evenly over the top to level them out. Bake in the preheated oven for about 20-25 minutes until juices run clear when meat is pierced with a fork, or a food thermometer reaches a heat of 170 °F.
- Remove pans from the oven; cover loosely with aluminum foil and set aside for 10 minutes to rest.
- Discard juice from the pans and invert 1 meatloaf onto a serving plate and evenly cover the top with a layer of trimmed roasted red peppers then invert the second meatloaf and place on top of the red peppers.
- Use a spatula to spread about 2½ cups of the warm mashed potatoes, evenly, all over the top of the meat loaf and up the sides. Spoon the remaining mashed potatoes into a piping bag and decorate the top of your "cake" with twirls and swirls. Pipe a few stars around the sides too.
- Place 8 cherry tomatoes, stem-ends down, in a circle around top of meatloaf to resemble cherries on top of a cake.
- Cut wedge-like cake slices and serve immediately.

APRIL FOOLS' DAY CHEESEBURGER CAKE

- Heat oven to 350°F
- Grease 2 8-inch layer cake pan.
- Prepare the box of white cake mix and bake according to the recipe.
- Cool on wire racks.
- Invert cakes on rack after 15 minutes and let cool completely.
- Prepare the box of brownie mix, and bake as directed in the 8 inch layer cake pan.
- Cool for 15 minutes in pan, then invert and let cool completely.
- "Tomato Slices" Place plain cookies on a wire rack set over wax paper.
- Put about 1/2 cup vanilla frosting in a small saucepan.
- Stir over low heat until melted and smooth.
- Remove from heat and stir in red food coloring (and a bit of yellow if needed) until frosting is tomato colored.
- Brush or spoon on top and sides of cookies.
- Let stand at least 30 minutes until firm to the touch.
- "Cheese" Spoon another 1/2 cup of vanilla frosting into a small bowl.
- Stir in yellow food coloring (and a drop of red if needed) until cheese colored.
- Cover to prevent drying.
- "Lettuce" Sprinkle granulated sugar on a large sheet of wax paper.
- Working with 1 at a time, place spearmint leaves on the sugar and fold wax paper over, so the candy is sandwiched between the sugar and the wax paper.
- Roll with a rolling pin until flattened and edges are jagged.
- The candy will become very sticky, but the sugar should help it release from the wax paper.
- "Buns" Put remaining vanilla frosting in a medium sized bowl.
- Stir in milk chocolate frosting and red and yellow food coloring, little by little, until frosting is the color of a hamburger bun.
- Place one cake layer on a serving plate.
- If well-rounded, best to cut off the hump, then put it upside down for the flat top.
- Cover with frosting.
- Arrange spearmint leaf "lettuce" on top and around edges of the bottom "hamburger bun".
- Place brownie cake on top of the "lettuce" using spatulas.
- Spoon "cheese" about 1 inch from edge of top of burger, letting some run down the sides.
- Top with "tomato" slices.
- If needed, now is the time to insert toothpicks through the brownie layer (leaving at least ¼" above the tomato cookies) to keep the cake layers from sliding off!
- Take the cake layer that rose the most for the top "bun".
- Place cake on wax paper and frost with remaining bun colored frosting.
- Lift onto tomato topped burger.

I got this recipe form Cokingvilage.com they used plain white mashed potatoes; I thought that it needed to be pink. The family had a hard time because there brain was saying cake but the mouth was saying meatloaf and mashed potatoes. This was a lot of fun for April fool's Day

- Preparing the Meat Loaf.
- 1. Preheat oven to 375°F In a large bowl, combine ground beef, eggs, bread crumbs, green onions, milk, parsley, garlic, Worcestershire sauce, salt and pepper just until blended.
- 2. Divide mixture between two 8-inch round cake pans, patting to cover pans evenly and make level.
- 3. Bake meat loaves until juices run clear when meat is pierced with a fork, or meat loaves register 170F on a meat thermometer, 20-25 minutes. Remove pans from the oven; cover loosely with foil and let stand for 10 minutes.
- Decorating the Meat Loaf.
- 1. Pour off juices from pans. Invert 1 meat loaf onto a flat serving plate. Using a small sharp knife, trim red peppers so that they lie flat. Cover top of meat loaf with a single layer of roasted red peppers.
- 2. Invert second meat loaf onto red pepper layer. Using a spatula, spread 2 1/2 cups mashed potatoes over top and sides of meat loaf. Spoon remaining potatoes into a pastry bag fitted with a large star tip. Pipe swirls around top edges of cake. Pipe stars around bottom of cake.
- 3. Place cherry tomatoes, stem-ends down, in a ring around top of meat loaf "cake" to resemble cherries. Cut meat loaf into wedges; serve immediately.
APRIL FOOLS DAY " CHEESEY MEATLOAF" CAKE
April fools Day is a perfect time to start a new tradition. In my house we create a dinner of foods that aren't what they seam. This years was "Cheesey meatloaf cake and spegetti cupcakes. Both recipes are on my page.

- 1. in a large bowl add meat, onion, crackers or chips, onion, ketchup, mustard and salt and pepper to taste.
- 2. divide in half and put one half in the bottom of a round casserole dish pressing flat. top with sliced cheese but not touching the edges. top with last half of meatloaf and press flat bake for 45- 60 minutes or until meatloaf is done at 325 degrees
- 3. take from oven, loosen sides and turn over onto a large plate or serving dish. Be careful it is hot.
- 4. Frost with mash potatoes. and decorate if disired with colored mash potatoes or veggie flowers.
