RUM RAISIN SAUCE
Here's a tart fruity rum raisin sauce from Elizabeth Halls in Courtenay, British Columbia that can make an ordinary ham steak or slice something to celebrate!

Steps:
- In a large saucepan, combine the raisins, 4 tablespoons water, orange juice and pineapple. Bring to a boil. Combine cornstarch and remaining water until smooth; gradually stir into raisin mixture. Cook and stir for 2 minutes or until thickened. Remove from the heat; stir in extract if desired. , Cut the ham steak into four pieces. In a large skillet coated with cooking spray, cook ham over medium heat for 1-2 minutes on each side or until browned. Serve with raisin sauce.

- In a saucepan, combine brown sugar, cornstarch and mustard. Stir in the water, raisins, vinegar, lemon juice and zest until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in butter until melted. Serve warm over sliced ham.

BOURBON (OR RUM) RAISINS
VelvetineNut asked me to post this--it's hardly a recipe and the quantities listed are estimates. The result is wonderful--plump juicy raisins that add incredible flavor to cakes, cookies, fudge, bread pudding, etc. And, there's a bonus--the resulting syrup is delicious. They keep forever and you can just keep adding raisins and/or liquor as needed. Prep time does not include the time you let the raisins soak.

Steps:
- Find a mason jar or other glass container with a tight-fitting lid.
- Place the raisins in the jar.
- Pour the bourbon (I use Maker's Mark)over the raisins--enough to cover them.
- Give them a shake and close up the jar.
- Let it sit in your cupboard for a few days (although after just a few hours the raisins will begin to plump), inverting the jar occasionally to make sure all the raisins are getting coated.
- Voila!
- For bourbon or dark rum, I suggest dark raisins.
- For white rum, I suggest golden raisins.

FRESH FRUIT SALAD WITH RUM RAISIN SAUCE
This recipe is served at Wunsche Bros. Cafe in Old Town Spring and was printed in Texas Ties, a Junior League cookbook of North Harris County. If you go to Wunsche Bros., they serve beer bread alongside. Yum! I sometimes substitute rum extract for the liquor. Cooking time is chilling time of the Rum Raisin Sauce.

- Combine fruits in a crystal serving bowl and mix gently.
- Serve with Rum Raisin Sauce.
- RUM RAISIN SAUCE: Combine sour cream, brown sugar, rum and Irish whiskey in a bowl, whisking until blended.
- Fold in raisins.
- Chill, covered for at least 2 hours.

- Preparation: Prepare 6 half pint jars in hot water. Using a knife deseed your apricots and chop them. No need to peel! In a separate bowl add raisins and rum. Soak for at least two hours.
- In a stainless steel pot add apricots and a 1/4 cup of water so that the apricots will not scorch. Heat over medium/low for about 30 minutes, stirring occasionally.
- Ladle jam into hot, sterilized half pint canning jars, leaving 1/4" headspace. Remove air bubbles and refill if necessary.
- Sometime in the next hour your jars will be making a "pinging" or "popping" noise. That is the glass cooling and the reaction of the lids being sucked into the jar for proper sealing. Some recipes may take overnight to seal. Check your lids and reprocess any jars that did not seal.
