- Preheat oven to 400ºF (200ºC), and prepare two cookie sheets with parchment paper.
- In a bowl, mix cream cheese, sugar, and vanilla until fully combined.
- Lightly flour the surface and roll out puff pastry on top to flatten.
- Cut each sheet of puff pastry into 9 equal squares.
- On the top right and bottom left of the pastry, cut an L shape approximately ½ inch (1 cm) from the edge.
- NOTE: This L shape should reach all the way down and across the square, however both L shapes should not meet at the ends. Your pastry should look like a picture frame with two corners still intact.
- Take the upper right corner and fold down towards the inner bottom corner. You will now have a diamond shape.
- Place 1 to 2 teaspoons of the cream cheese filling in the middle, then place berries on top.
- Repeat with the remaining pastry squares and place them onto the parchment covered baking sheet.
- Bake for 15-20 minutes or until pastry is golden brown and puffed.

APRICOTS AND CREAM CHEESE CAKE
This sweet apricot dessert is topped with decadent cream cheese frosting and is large enough to satisfy a crowd.

- Heat oven to 350°F. Grease 3 (8- or 9-inch) round pans with shortening. Line pan bottoms with waxed paper or cooking parchment paper; grease again and lightly flour. In food processor bowl with metal blade, place canned apricots. Process 30 seconds or until smooth, scraping bowl after 15 seconds; set aside.
- In large bowl, beat 1 cup butter and 1 3/4 cups granulated sugar with electric mixer on medium speed until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in 1 teaspoon vanilla. Add flour, baking powder, baking soda and salt; beat on low speed until mixed. Measure 1/4 cup apricot puree; set aside. Add remaining apricot puree and apricot nectar to batter; beat on low speed until mixed. Beat on medium speed 2 minutes. Spread about 2 cups batter in each pan.
- Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans to cooling racks. Cool completely, about 40 minutes.
- In large bowl, beat cream cheese and 1 cup butter with electric mixer on medium speed until creamy. Add powdered sugar, 2 teaspoons vanilla and reserved puree. Beat on low speed until mixed. Beat on medium speed until creamy. Spoon about 1 1/2 cups frosting into decorating bag fitted with medium star tip.
- Place one cake layer on cake plate, top side down. Spread about 3/4 cup frosting over top. With decorating bag, pipe a wavy ring of frosting around outside top edge of cake, extending slightly over edge. Top with second layer, top side down. Repeat frosting and piping. Top with third layer, top side up. Frost top with remaining frosting; pipe edge. (Side of cake is not frosted.)
- For garnish, separate 2 dried apricots into 4 halves. With rolling pin, roll each apricot half between 2 pieces of plastic wrap to 1 1/2-inch diameter. Set aside. Roll remaining 3 apricots between plastic wrap to about 2-inch diameters. To form rose, roll one of the apricot halves into a tight roll (center of rose). Place remaining 3 apricot halves around roll to form petals, pinching at bottom to secure. Place larger apricot circles around smaller ones, pinching together at bottom to complete rose. Sprinkle lightly with 1/4 teaspoon sugar. Place in center of cake. Place lemon leaves next to rose. Store in refrigerator.

- 1. Mix cream cheese, powdered sugar, 2 Tbsp. of the cornstarch, egg yolk, and 1 tsp. of the almond extract.
- 2. In separate bowl, mix fruit, 2 Tbsp. of sugar, remaining 1 Tbsp. of cornstarch, and 1 tsp. of almond extract.
- 3. On a baking sheet or pie plate (better for containing drips and transporting), unfurl pie crust. Spread cream cheese mixture, leaving a 2" boarder. Top with fruit mix. Fold pastry border over the fruit. Brush dough perimeter with egg white and sprinkle with sugar.
- 4. Bake at 400 degrees F, about 30 min., until golden brown and bubbly. Cool slightly. Serve warm with vanilla ice cream.

- Mix wafer crumbs, butter and cinnamon. Press firmly onto bottom of 9-inch springform pan; set aside. Sprinkle gelatine over water in small saucepan; let stand 1 min. - Line a baking tray with baking paper - See Note 6Remove the pastry from the freezer and defrost - See Note 7Preheat oven to 200 degrees C (400 F).
- Drain the canned apricots through a sieve. Then place on some kitchen towel, cut side down, to remove as much moisture as possible and avoid making your pastries soggy.
- Combine cream cheese, vanilla and icing/confectioners' sugar and mix well.
- Cut the puff pastry into eight 10 cm/4" squares.
- To make the shape that I have used, fold the square loosely in half diagonally to form a triangle. - See Note 8.
- To shape the pastry, use a very sharp knife and make two cuts along the outside edge of the triangle, about ½ " wide, but not cutting right through to the tip of the triangle.
- Open the triangle and gently lift the right-hand strip of pastry over to the left, placing it on the square of pastry.Place pastry on baking tray to shape and top. (It is difficult to move once assembled).
- Repeat with the left-hand strip, taking it to the right-hand side. The pastry creates a frame around the filling.
- Divide the cream cheese mixture between the pastry shapes.
- Place an apricot half on top of the cream cheese.
- Brush the edges of the pastry with the beaten egg and sprinkle with a teaspoon of demerara sugar.
- Bake in the preheated oven for 15-20 minutes until the pastry becomes golden-brown.
- Meanwhile, add the jam to a small saucepan and heat over medium heat, adding a teaspoon of water if necessary to thin it a little. If there are large pieces of jam it will be best to push the jam through a sieve. If not, brush each apricot with some of the jam to give them a nice shine.
- Allow the pastries to cool for a few minutes before serving. However, if not serving immediately, store the cold pastries in an airtight container in the fridge for a day or two or freezer if keeping longer. Re-heat for a few minutes before serving.

- Using a hand or stand mixer, beat the cream cheese until smooth. Add the vanilla extract and beat again until smooth.
- Add the powdered sugar and mix again until smooth, then add the heavy cream and beat until light and fluffy.
- To assemble the board, add some of the cream cheese dip to a small serving bowl and add it to the center of a large cutting board or serving tray.
- Assemble the fruit by adding larger fruits first such as the watermelon, pineapple, and grapes.
- Then, move onto smaller fruits and break up the colors so that there is some contrast. (Like don't put blackberries, blueberries, and grapes together.)
- Serve immediately.
