DRIED APRICOT JAM



Dried Apricot Jam image

Yes you can use dried apricots to make jam! This has beautiful color and flavor. I have dried California Blenheim apricots from Apricot King shipped to me in Washington and they are wonderful.

4 ½ cups dried apricots
4 ½ cups boiling water
1 teaspoon vanilla extract
1 (1.75 ounce) package powdered fruit pectin
7 cups white sugar
¼ cup lemon juice

Steps:

  • Soak apricots in boiling water in a bowl until hydrated, about 30 minutes. Blend apricots, remaining water, and vanilla extract in a food processor, working in batches, until blended but still slightly chunky.
  • Combine apricot mixture with pectin in a large pot over medium heat; cook until just boiling. Add sugar and lemon juice; boil until sugar has dissolved, 1 to 2 minutes.
  • Sterilize jars and lids in boiling water for at least 5 minutes. Pack the apricot jam into the hot, sterilized jars, filling the jars to within 1/4-inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil, then carefully lower the jars into the pot using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.
  • Remove jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool, about 1 hour. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

I love to save money, especially with my big family. So making my own jams and jellies is a favorite hobby of mine to share with my kids. This jam is not only fun to make, but it is also very delicious. There's nothing like your own fresh jam on toasted Italian bread.

8 cups fresh apricots - peeled, pitted, and crushed
¼ cup lemon juice
6 cups white sugar
5 (1 pint) canning jars with lids and rings

Steps:

  • Mix apricots and lemon juice in a large pot; add sugar. Slowly bring to a boil, stirring until sugar dissolves. Cook and stir until apricot mixture thickens, about 25 minutes. Remove from heat and skim foam if necessary.
  • Meanwhile, prepare jars, lids, and rings by cleaning and sterilizing in dishwasher or boiling water bath. Leave lids in simmering water until ready to seal jars.
  • Ladle hot jam into hot sterilized jars, leaving about 1/4 inch of space on top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Quick Apricot Jam image

This quick, simple recipe comes from Becky Smith of Frog Hollow Farm in California. The jam doesn't require canning and keeps for weeks in the fridge-if you don't eat it all up before then. For a sweeter spread, use a bit more sugar. This recipe is easily halved.

Yield Yields 3 cups.

Number Of Ingredients 3

2 lb. ripe apricots, rinsed, quartered, pitted, and unpeeled (about 16)
1 cup plus 3 Tbs. sugar
1/2 tsp. fresh lemon juice

Steps:

  • In a wide, shallow pan, stir together the apricots and the sugar. Set the pan over medium-high heat and bring to a simmer, stirring often so the preserves don't stick or burn. Simmer the jam until it's thick but some chunks of fruit remain, 10 to 15 minutes. Stir in the lemon juice and remove the pan from the heat. Let cool, transfer to a plastic container with a tight fitting lid, and refrigerate.

4-1/4 cups crushed peeled apricots, (about 2-1/2 pounds)
1/4 cup lemon juice
6-1/4 cups sugar, divided
1 package (1-3/4 ounces) powdered fruit pectin
1/2 teaspoon unsalted butter, optional
1/3 cup amaretto

Steps:

  • In a Dutch oven, combine apricots and lemon juice. In a small bowl, combine 1/4 cup sugar and pectin; stir into apricot mixture. If desired, add butter. Bring to a full rolling boil over medium-high heat, stirring constantly. Gradually stir in remaining sugar. Return to a full rolling boil, stirring constantly, for 1 minute., Remove from heat; stir in amaretto. Cool jam in Dutch oven for 5 minutes, stirring occasionally. Ladle hot mixture into eight hot sterilized half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

Steps:

  • Wash apricots first and rub off the fluff on the surface.
  • Peel the apricots.
  • Take out the apricot kernels.
  • Add 500 grams of sugar.
  • Mix well and cover with plastic wrap. Marinate and refrigerate for 2 hours.
  • The pickled apricots have oozed a lot of juice.
  • Pour into the pot, boil on high heat, then turn to low heat.
  • Stir while boiling, otherwise it will stick to the pot. During the mixing process, the apricots will naturally turn into a pulp.
  • Cook for about an hour and a half. After the water evaporates, only half of the volume is left, and the apricot jam is thick, turn off the fire.
  • Put apricot jam in a bottle and store it in the refrigerator.

Homemade apricot jam with pectin is a real treat. This recipe uses original pectin and reduced sugar to bring out the flavor of the apricots.

2 lbs. fresh apricots
1 package Original Sure-Jell powdered fruit pectin
2 Tablespoons lemon juice (from 1 lemon)
3 cups sugar
4 half-pint canning jars with rings and lids ((8 ounce jars))

Steps:

  • Wash the apricots in cold water. Pit but do not peel. Then chop the apricots into small pieces.
  • Mash the apricots in a large bowl to help release some of the juice and measure. You should have 2-3/4 cups of mashed apricots. Press the lemon and measure the lemon juice. There should be 2 Tablespoons of lemon juice. Add the lemon juice to the apricots in the bowl.
  • Combine the mashed apricots and powdered fruit pectin in a 3-quart saucepan.
  • Stir and cook over medium heat until the apricots begin to bubble. You do not have to bring the mixture to a hard boil.
  • Stir in the 3 cups sugar.
  • Increase to medium-high heat and stir until it reaches a full rolling boil. Boil hard for 1 minute.
  • Remove from heat and skim foam from top of jam.
  • Pour into hot, sterilized, half-pint canning jars, and seal.
  • Process the apricot jam for 10 minutes in a boiling water bath. Then remove the jars from the pot and place on a dry towel to cool. Finally, gently shake the jars after two hours to prevent all of the pieces of fruit from floating to the top. The directions in the package caution that this jam may take up to two weeks to set. My experience has been that it may take up to two days to set, but rarely longer.

½ cup packed brown sugar (can sub white)

Steps:

  • With a kitchen scissors, cut two apricots in half at a time. Cut the halves into three pieces each so each apricot is cut into six pieces each. (Can be cut smaller if you prefer smaller chunks in your jam.)
  • Place the chopped apricots into a 4 cup measuring cup. Add water to the 4 cup line.
  • Dump all that into a medium sized sauce pan over medium heat. Add the salt and simmer for about 30 minutes until the apricots are tender and the jam coats a spoon. Stir in the brown sugar.
  • Decant into ½ pint jars and refrigerate for several weeks or freeze for six months. Note, this jam does not have enough sugar to be considered safe for pressure or water bath canning.
