APRICOT CRUMBLE
Easy, relaxed Apricot Crumble is a perfect dessert for any meal. A great way to use sweet ripe apricots.

Steps:
- Preheat oven to 350 degrees.
- Slice apricots in half and remove the pits. Slice each half into quarters.
- Place apricots slices in a large bowl and toss with sugar, corn starch, and cinnamon.
- Pour coated apricots into a small casserole dish.
- To make the crumble layer whisk together flour, brown sugar, salt, and oats.
- Cut in the butter until the mixture is coarse and crumbly.
- Sprinkle topping over apricots.
- Bake for 35-40 minutes or until the juices are bubbling and the topping is golden brown.
- Serve warm or at room temperature with a scoop of ice cream, if desired.

APRICOT SAUCE RECIPE

- Gather the ingredients.
- Prepare a water bath canner and 4 (1/2-pint) canning jars.
- Halve, pit and chop the apricots.
- Combine all ingredients in a large saucepan or Dutch oven.
- Bring to a boil. Reduce heat.
- Cook until thick, with a syrup-like consistency. This will take anywhere from 20 minutes to an hour.
- If desired, purée the sauce using an immersion blender.
- Ladle into hot, clean jars leaving about 1/4-inch head space.
- Top with the 2-piece lids and rings, and process in a water bath canner for 15 minutes.

- In a food processor fitted with s steel blade, process the onion, garlic, ginger, limes, apricots, and plums until pureed.
- In a medium nonaluminum dutch oven or heavy saucepan, combine the pureed ingredients and all the remaining ingredients except the cilantro and bring to a boil over medium-high heat.
- Lower the heat and simmer until slightly thickened, about 45 minutes. Stir frequently to avoid burning. Remove from the heat and cool.
- Add the cilantro and taste for seasoning. Pour the sauce into a large glass container and refrigerate. Make sure the cilantro is totally submerged before storing, or omit and add at service.
- NOTES: This sauce may be refrigerated in an airtight container for up to 2 months. Makes 4 cups. Recipe may be doubled. Makes a good gift. Uses: particularly good with pork, chicken, quail, and game hens. Dilute it with wine or nectar to use it as a marinade.

PLUM SAUCE RECIPE USING DRIED PLUMS
Learn how to make a plum sauce with this easy recipe. Using dried plums gives this sauce an especially rich flavor.

- Gather the ingredients.
- Combine all of the ingredients in a medium size pot. Start out with the smaller (1/2 cup) amount of water. Bring the ingredients to a boil over high heat. Reduce the heat and simmer, stirring occasionally, for 20 minutes.
- Add additional water only if the sauce starts to stick to the bottom of the pot. Dried plums that were dehydrated at home tend to be drier than their commercial cousins and may require the extra water.
- Turn off the heat and let the ingredients cool for 10 minutes. Transfer them to a blender or food processor and puree the sauce until smooth. (Alternatively, leave the sauce in the pot and, after the cooling off period, puree it with an immersion blender.)
- Store the plum sauce in the refrigerator for up to three weeks, or process it in a boiling water bath so that it can be stored in sealed jars at room temperature for a year or more.
- To can the plum sauce, return it to the pot over medium heat and bring to a boil. Immediately turn off the heat and spoon the sauce into clean quarter or half-pint canning jars. It is not necessary to sterilize the jars for this recipe. Leave 1/2-inch of headspace between the surface of the food and the rims of the jars.
- Press down on the center of the sauce with the back of a spoon to release any air bubbles. Wipe the rims of the jars clean with a moist paper or cloth towel (any sauce stuck there could prevent the lids from sealing.) Process the jars of plum sauce in a boiling water bath for 10 minutes (adjust the canning time if you live at a high altitude .)
