APRICOT-NUT WHITE FUDGE



Apricot-Nut White Fudge image

We look forward to this luscious apricot fudge recipe every Christmas. It's easy to make, and it melts in your mouth. I wrap up small squares of the candy with ribbon and silk holly.

Yield about 2-1/2 pounds.

Number Of Ingredients 6

1 package (8 ounces) cream cheese, softened
4 cups confectioners' sugar
12 ounces white baking chocolate, melted and cooled
1-1/2 teaspoons vanilla extract
3/4 cup chopped walnuts or pecans
3/4 cup chopped dried apricots

Steps:

  • Line a 9-in. square pan with aluminum foil, letting ends extend over sides by 1 in. Coat with cooking spray; set aside. In a large bowl, beat cream cheese until fluffy. Gradually beat in confectioners' sugar. Gradually add the white chocolate. Beat in the vanilla. Fold in nuts and apricots. , Spread into prepared pan. Cover and refrigerate for 8 hours or overnight. Using foil, lift fudge from pan; cut into 1-in. squares.

Creamy White Vanilla Fudge image

Creamy and smooth white vanilla fudge with a few secret ingredients to make it melt in your mouth.

Number Of Ingredients 13

Nonstick cooking spray
1/2 cup Butter
2 cups Sugar
1/2 cup Full-Fat Sour Cream
2 cups High-Quality White Chocolate Chips or chopped white chocolate bar
1 jar (7 ounces Marshmallow Cream)
1 1/2 teaspoon Pure Vanilla Extract
1/2 teaspoon Salt
Optional add-ins:
*2 cups crushed OREOS for OREO fudge
*3/4 cup Crushed Candy Canes and 1/4 teaspoon peppermint extract for CANDY CANE Fudge
*1 - 1 1/2 cup Chopped Dried Cranberries (Apricots, and Pistachios for Holiday Bark Fudge)
1 1/2 cups Thick Homemade Caramel and 1 cup Pecan Halves for Caramel Pecan Fudge

Steps:

  • Line a 9 x 9-inch pan with aluminum foil, pressing down the sides of the pan, and spray the foil with nonstick cooking spray.
  • Melt the butter in a medium saucepan over low heat.
  • Add the sugar and sour cream and raise the heat to medium.
  • Keep stirring frequently while the sugar dissolves. Brush down the sides of the pan occasionally with a spatula to remove sugar crystals.
  • When the mixture comes to a boil, insert a candy thermometer. Continue to cook, stirring occasionally, until it registers 235 F.
  • Remove from the heat and add the white chocolate chips, marshmallow cream, salt and vanilla, stirring until the white chocolate is entirely melted and the fudge is smooth. If adding any accompaniments, stir into fudge now.
  • Pour into the prepared pan and smooth out.
  • Let the fudge set at room temperature until firm, about 2 hours. Remove from the pan using the foil as handles and cut into small squares to serve.
  • Store in airtight container so the fudge stays nice and fresh.

Stir in marshmallow creme until blended. Stir in apricots and walnuts. Immediately spread into prepared pan. Refrigerate, covered, overnight., Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares.

  • In a saucepan on medium heat, combine sweetened condensed milk and white chocolate chips, stirring frequently until mixture is smooth. Remove from heat and stir in pistachios, cranberries, and apricots.
  • Pour mixture into prepared baking dish. Cover dish with aluminum foil coated with cooking spray to prevent sticking. Chill at least 4 hours or overnight.
  • To serve, remove foil cover and lift out fudge. Carefully flip fudge upside-down to remove bottom layer of parchment paper, then cut into 1-inch pieces for serving.
