1 tablespoon rice vinegar
1 tablespoon soy sauce
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
1/2 teaspoon habanero sauce (only for true heat lovers) (optional)

Steps:

  • Combine first 6 ingredients in a small saucepan on low-medium heat.
  • Stir often, until sugar dissolves.
  • Add habanero sauce if using.
  • Serve!

2 pounds fresh apricots
1 cup brown sugar, packed
1/2 cup granulated sugar
1 tablespoon low-sodium soy sauce
1/2 teaspoon red pepper flakes
1/2 tablespoon salt
1/2 cup apple cider vinegar

Steps:

  • Gather the ingredients.
  • Prepare a water bath canner and 4 (1/2-pint) canning jars.
  • Halve, pit and chop the apricots.
  • Combine all ingredients in a large saucepan or Dutch oven.
  • Bring to a boil. Reduce heat.
  • Cook until thick, with a syrup-like consistency. This will take anywhere from 20 minutes to an hour.
  • If desired, purée the sauce using an immersion blender.
  • Ladle into hot, clean jars leaving about 1/4-inch head space.
  • Top with the 2-piece lids and rings, and process in a water bath canner for 15 minutes.

1 pc fresh ginger (about 2 cm)
1 garlic clove
1 red, fresh chili pepper
120 milliliters Broth
3 Apricot jam
5 Tbsps Rice vinegar
2 Tbsps cornstarch
salt

Steps:

  • Rinse and trim the pepper, then cut in half.
  • Peel the garlic and ginger. Rinse the chili and remove the stalk. Add the pepper, ginger, garlic, and chili to a mortar and crush together. Add to a saucepan, and mix in the broth, vinegar, and jam. Bring to a boil. Mix the cornstarch with 3 tablespoons of water. Add to the sauce, return to a boil, and stir until thickened. Season to taste with salt.

1 ½ cups white sugar
1 cup ketchup
1 (8 ounce) can pineapple tidbits, undrained
⅔ cup distilled white vinegar
1 teaspoon red pepper flakes
1 tablespoon soy sauce
½ tablespoon steak sauce
½ tablespoon cayenne pepper hot sauce
3 tablespoons cornstarch

Steps:

  • Stir water, sugar, ketchup, pineapple, vinegar, red pepper flakes, soy sauce, steak sauce, and hot sauce together in a saucepan over medium heat. Remove 1/2 cup of the sauce to a small bowl; whisk cornstarch into the sauce in the bowl. Bring the sauce in the saucepan to a boil, stir the sauce with the cornstarch into the boiling sauce. Cook, stirring occasionally, until thickened, about 15 minutes. Remove from heat and allow to cool slightly before using.

Got this recipe from a roommate and have received countless compliments in dinner groups. When I'm cooking for dinner group (a lot of people), sometimes I use a 16-ounce bottle Italian dressing with an 18-ounce jar of apricot jam.

1 cup white rice
2 cups water
1 tablespoon olive oil
6 skinless, boneless chicken breast halves
1 cup apricot jam
1 cup Italian-style salad dressing (such as Wishbone®)
½ cup dried minced onion
1 (15 ounce) can diced pineapple, drained
1 yellow onion, chopped
1 red bell pepper, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Heat oil in a large skillet over medium-high heat. Brown chicken breasts on both sides, about 2 minutes per side.
  • Combine apricot jam, Italian-style salad dressing, and dried onions together in a bowl. Place browned chicken in a baking dish and pour jam mixture over the chicken; bake for 15 minutes.
